Steps:

  • Combine the minced garlic, dried oregano, salt, pepper, red wine vinegar, pitted prunes, apricots, green olives white wine, maple syrup and capers in a large glass dish. Add the chicken and bay leaves. Cover and marinate for at least one hour but ideally overnight.
  • When ready to bake, preheat the oven to 375°F.
  • Heat a cast iron over medium-high heat, remove chicken from marinade and reserve. Sear the chicken for 5 minutes on each side.
  • Place the marinade ingredients into a large roasting dish, remove the bay leaves and discard. Transfer the chicken to a roasting dish and nest down into the marinade.
  • Bake uncovered for 15-17 minutes or until the internal temperature reaches 165ºF.
  • Spoon the sauce over each piece of chicken and sprinkle with chopped parsley. Serve the chicken and fixings over white rice.

The famous Chicken Marbella from the Silver Palate Cookbook. This recipe has been bringing down the house for years and I have made serious adaptations to it, fine-tuning it to suit our taste and make it a little more practical. I like to serve this with cous-cous and a big green salad.

2 lbs chicken thigh pieces, skinless and boneless, cut each piece into 4
1/2 head garlic, peeled and finely pureed (this works out to about 6-8 cloves)
1 1/2 tablespoons dried oregano, crumbled
coarse salt
fresh ground black pepper
1/3 cup red wine vinegar
1/3 cup olive oil
12 pitted prunes (I cut them in half)
6 dried apricots, cut in half (optional)
1/2 cup pitted spanish green olives
1/3 cup capers, with a bit of juice
3 bay leaves
1/2 cup brown sugar (I prefer to use less - 1/4 cup is fine)
3/4 cup white wine
1/2 teaspoon chili powder (not in original recipe) (optional)
1/3 cup Italian parsley (cilantro) or 1/3 cup fresh coriander, finely chopped (cilantro)

Steps:

  • In a large bowl combine chicken quarters, garlic, oregano, pepper and coarse salt to taste, vinegar, olive oil, prunes, apricots (if using), olives, capers and juice, bay leaves, brown sugar and white wine.
  • Cover and let marinate, refrigerated, overnight.
  • Preheat oven to 350°F.
  • Arrange chicken in a single layer in a large, shallow baking pan and spoon marinade over it evenly.
  • Bake for 50 minutes to 1 hour, basting frequently with pan juices. Chicken is done when thigh pieces, pricked with a fork at their thickest, yield clear yellow (rather than pink) juice.
  • With a slotted spoon transfer chicken, prunes, olives and capers to a serving platter. Moisten with a few spoonfuls of pan juices and sprinkle generously with parsley or cilantro. Pass remaining pan juices in a sauceboat.
  • Note: To serve Chicken Marbella cold, cool to room temperature in cooking juices before transferring to a serving platter. If chicken has been covered and refrigerated, allow it to return to room temperature before serving. Spoon some of the reserved juices over chicken.

This classic dinner party dish is made from start to finish in the multi-cooker. Briny capers and olives marry with dried apricots and a touch of brown sugar for the perfect blend of sweet and savory.

8 bone-in, skin-on chicken thighs
Kosher salt and freshly ground black pepper
1 tablespoon olive oil
3 cloves garlic, thinly sliced
1/2 cup dried apricots, halved
1/2 cup pitted kalamata olives
1/4 cup dry white wine
2 tablespoons drained capers
1 tablespoon light brown sugar
1 1/2 teaspoons dried oregano

Steps:

  • Set a 6-quart Instant Pot® to high saute (see Cook's Note) and allow it to heat up for 5 minutes. Meanwhile, liberally sprinkle the chicken thighs on both sides with salt and pepper. Add the oil to the pot, then add half of the chicken thighs skin-side down. Cook until the skin is deeply browned, 6 to 8 minutes. Flip the chicken and cook until the second side is deeply browned, 4 to 6 minutes. Transfer to a plate. Repeat with the remaining chicken.
  • Add the garlic to the pot and cook, stirring constantly, until lightly browned in spots, about 1 minute. Add the apricots, olives, white wine, capers, brown sugar, oregano and 1/3 cup water. Stir to combine, using a wooden spoon or spatula to scrape up any browned bits at the bottom of the pot. Turn off the pot and put the rack on top of the olive and apricot mixture with the handles going up the sides. Nestle the chicken on the rack skin-side up.
  • Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on high for 10 minutes.
  • After the pressure-cook cycle is complete, follow the manufacturer's guide for quick release and wait until the quick-release cycle is complete. Being careful of any remaining steam, unlock and remove the lid. Transfer the chicken to a platter and use a slotted spoon to scoop the olive and apricot mixture on top and around the chicken. Cover loosely with aluminum foil to keep warm.
  • Remove the rack and set the pot to normal saute. Simmer the sauce until slightly thickened and reduced by half, 6 to 8 minutes. Spoon the sauce on top of the chicken and serve immediately.

1 ½ lb bone-in, skin-on chicken thighs
1 ½ lb bone-in, skin-on chicken drumsticks
2 teaspoons kosher salt
1 head garlic, peeled and pureed or grated
3 tablespoons dried oregano, divided
3 red plums, pitted and quartered
¾ cup dried apricot
⅓ cup red wine vinegar
⅓ cup olive oil
1 cup green olives, such as Castelvetrano
½ cup capers in brine
3 dried bay leaves
⅔ cup light brown sugar
⅓ cup dry rosé wine
6 cups couscous, cooked, for serving
⅓ cup fresh basil, thinly sliced

Steps:

  • Season the chicken thighs and drumsticks all over with the salt. Using your hands, rub the pureed garlic and 1 tablespoon of oregano all over the chicken to coat evenly.
  • In a 9x13-inch glass baking dish, mix together the plums, apricots, red wine vinegar, olive oil, green olives, capers, remaining 2 tablespoons of oregano, and bay leaves.
  • Add the chicken to the baking dish and turn to coat, then turn so the skin side is facing up. Cover the pan with plastic wrap and marinate the chicken in the refrigerator overnight, about 12 hours.
  • Preheat the oven to 375˚F (190˚C).
  • While the oven preheats, remove the chicken from the refrigerator and let come to room temperature, about 30 minutes.
  • Using a paper towel, pat the chicken skin to remove any excess moisture.
  • Sprinkle the chicken skin with the brown sugar. Pour the rosé around the chicken, but avoid pouring directly onto the skin.
  • Bake the chicken for 35-40 minutes, until a thermometer inserted into a chicken thigh, near the bone, reads 160˚F (70°C) and the skin is golden brown.
  • Remove from the oven and let rest for 10 minutes. During this time, the residual heat from cooking will bring the internal temperature of the chicken to 165˚F (75°C).
  • Serve the chicken and sauce over couscous and garnish with the basil.
  • Enjoy!

  • In a large glass baking dish, gently toss the chicken thighs with the olives, prunes, olive oil, vinegar, apricots, oregano, garlic, capers and brine, bay leaves, 2 teaspoons of kosher salt and 1/4 teaspoon of pepper. Press plastic wrap directly onto the surface of the chicken and refrigerate overnight.
  • Preheat the oven to 375°. Let the marinated chicken stand at room temperature for 45 minutes. In a small flameproof roasting pan, arrange the chicken thighs in a single layer, skin side up. Tuck the garlic cloves, prunes, apricots, olives and bay leaves under the thighs and scrape any remaining marinade on top. Pour the wine into the pan, then sprinkle with the brown sugar. Bake for about 40 minutes, basting every 15 minutes, until the chicken is cooked through and the skin is browned.
  • Using a slotted spoon, transfer the chicken, prunes, apricots, olives and capers to a serving dish; discard the bay leaves and garlic. Skim the fat from the pan juices (you should have about 1 1/2 cups of pan juices). Place the roasting pan on the stove and cook the pan juices over moderate heat until reduced by half, about 8 minutes. Remove from the heat and stir in the butter in 2 additions, whisking until combined each time. Stir in the parsley and season with salt and pepper. Pour the sauce over the chicken and sprinkle with sea salt. Serve with crusty bread.
