Creamy chicken over noodles is a flavorful, fast dinner that is made from scratch. Similar to chicken ala king, this version will please the whole family!

3 tablespoons butter
3 tablespoons flour
1 1/2 cups chicken broth
1/2 cup milk
1 teaspoon dried thyme
1/2 teaspoon dried sage
1/2 teaspoon salt
1/4 teaspoon pepper
2 ounces cream cheese (at room temperature)
2 cups cooked chicken (shredded)
2 green onions (sliced thin and divided)
1 pound egg noodles

Steps:

  • Boil egg noodles according to package instructions while you are prepping the creamy chicken.
  • Melt butter in a large skillet over medium heat.
  • Add the flour whisk together into a paste. Cook, stirring constantly, about 3 minutes, until the mixture darkens slightly.
  • Pour in chicken stock and milk, whisking constantly.
  • Add herbs, salt and pepper. Simmer until thickened, about 4 minutes.
  • Add cream cheese and whisk until smooth.
  • Add chicken and green onions, leaving some of the green onions for garnishing.
  • Serve warm over egg noodles. Garnish with green onion slices, if desired.

1 cup uncooked egg noodles (2 oz)
1 3/4 cups Progresso™ chicken broth (from 32-oz carton)

Chopped fresh parsley, if desired

Steps:

  • In 12-inch nonstick skillet, heat oil over medium-high heat. Cook chicken and onion in oil 6 to 8 minutes, stirring frequently, until browned and onion is just tender.
  • Stir in remaining ingredients except parsley. Heat to boiling; reduce heat. Cover and simmer 10 minutes. Uncover and simmer 5 to 8 minutes longer, stirring occasionally, until noodles are tender. Sprinkle with parsley.

1-2 tablespoons olive oil
1 pound boneless (skinless chicken)
1-2 tablespoons all-purpose flour (optional (this is used to thicken the curry))
1/2 cup chicken broth
1 cup coconut cream or coconut milk
2 tablespoons curry seasoning (1 tablespoon each of two types of curry or 2 tablespoons of one type)
1/4 package No Yolks Broad Noodles

Steps:

  • Cut approximately 1 pound of boneless, skinless chicken into cubes.
  • Place cubed chicken, place it into a pan with 1-2 tablespoons of your preferred oil.
  • Cook the chicken on medium heat, stirring on and off to turn the meat and make sure all sides are cooked through.
  • To thicken curry (optional): Add flour to cooked chicken and stir until all incorporated. If you are cooking with coconut cream and still want a thickener, you could use 1 tablespoon of flour to help thicken your curry. When using coconut milk, I would increase the flour to 2 tablespoons because the coconut milk is much thinner than coconut cream.
  • First, add in just 1/2 cup of chicken broth. If you've already added flour in to thicken the curry sauce, you'll want to stir this in slowly. If you're adding it in without a thickener, then just pour and stir.
  • Next, add in the coconut cream or coconut milk.
  • Add in the curry seasonings.
  • Once all the ingredients have been added, all that is left to do is stir and watch the flavors meld together.
  • Cook over medium-low heat for 20-25 minutes.
  • In a separate pan, boil water and cook No Yolks Broad Noodles per package instructions.
  • Serve curry over noodles and top with garnishes of choice.

1 can (14 ounces) bean sprouts, drained

Steps:

  • In a small bowl, combine the brown sugar, peanut butter, soy sauce and garlic; set aside. In a large resealable plastic bag, combine bread crumbs and contents of two noodle seasoning packets (discard the remaining packet or save for another use). Add chicken, one piece at a time, and shake to coat. , In a large skillet, cook chicken in oil over medium heat for 5-6 minutes on each side or until a thermometer reads 170°. Meanwhile, cook noodles according to package directions. , Remove chicken and keep warm. Add peanut butter mixture to skillet; cook and stir until heated through. Drain noodles. Add noodles and bean sprouts to skillet; toss to coat. Serve with chicken.
