POPPY SEED CHICKEN
This comforting chicken dinner is a sure-fire family pleaser.

- Mix together cooked chicken, cream of chicken soup, poppy seeds, and sour cream. Lightly grease 11x7-inch baking dish. Spoon mixture into dish.
- Pour melted butter over cracker crumbs and stir together. Sprinkle over casserole.
- Bake at 350°F for 35 minutes or until hot and bubbly.
POPPY SEED CHICKEN & NOODLE CASSEROLE
I looked all around and couldn't find this recipe that came with noodles. I can't imagine it without noodles!

Steps:
- Cook a little over half the bag of egg noodles until done.
- In a bowl,combine the chicken, cream of chicken soup, and sour cream. Mix well.
- In a 9x13 take a small chunk of cold butter and rub the bottom of the pan. This insures that the noodles will not stick or become crispy. (I find that this is the only way that works for me. Using spray Pam has always made my noodles on the side crispy.)
- Spread noodles over greased pan.
- Spread the chicken mixture on top making sure to cover all the noodles well.
- Melt the stick of butter and crumble the whole package of Ritz crackers in it and mix until crackers are saturated. Spread on top of chicken mixture.
- Sprinkle Poppy Seeds on top.
- Cook uncovered at 350 for 30 minute or until hot.

Steps:
- Boil chicken or cook in microwave until juices run clear.
- Prepare rice according to package directions but add bouillon to water.
- Place rice in bottom of 9 x 13 inch baking dish.
- Arrange chicken pieces over rice.
- Blend soups, milk, sour cream and pepper in medium bowl.
- Sprinkle chicken with pouiltry seasoning and pour soup mixture over chicken and rice.
- Melt butter, add bread crumbs and poppy seeds.
- Sprinkle over all.
- Bake at 375 degrees for 40 minutes.

POPPY SEED CHICKEN CASSEROLE
My sister made this for her Superbowl party years ago and everyone loved it and asked for the recipe. There are several recipes for this casserole, but the amounts are different from her recipe. This could be lightened up by using light or fat-free soup, sour cream. I serve this over wide egg noodles along with blueberry muffins and corn or a salad.

Steps:
- Preheat oven to 350°F.
- Place chicken in a pan and cover with water and bring to a boil, then reduce heat and simmer until tender and no longer pink(about 10 minutes). Once cool enough cut into bite size pieces(I use my electric knife).
- Mix two cans of soup with sour cream in a 13X9 inch rectangular pan. Sprinkle the chicken over the soup mixture.
- Place Ritz crackers in a plastic bag and gently crush them. Add poppy seeds and shake to combine and then pour melted butter over the crackers and shake again. Sprinkle cracker mixture over the chicken.
- Bake for 30-40 minutes until it begins to bubble around edges and the crackers are golden brown.
