- For the chicken: Preheat the oven to 400 degrees F.
- Place the chicken, breast-side up, in the center of a roasting pan (see Cook's Note). Sprinkle liberally with salt and roast, undisturbed, 25 minutes. Remove and let the par-cooked chicken rest (the breast skin should be nicely browned).
- For the crust: Place the breadcrumbs on a baking sheet and toast in the oven for 5 minutes. Remove and set aside. Finely chop the arugula and place in a medium bowl along with the toasted breadcrumbs. Place the peppercorns on a flat surface such as a cutting board and, using the underside of a skillet, crack them. (The peppercorns should be very coarsely crushed.) Add the peppercorns and butter to the bowl with the breadcrumbs and arugula and mix well.
- Gently pat the crust on top of the chicken breast. Place the chicken back in the oven and roast until the juices run clear or a thermometer inserted in the thickest part of the thigh (avoiding bone) registers 160 to 165 degrees F, an additional 25 to 35 minutes (see Cook's Note). Let rest at least 10 minutes, then carve and serve.

- Preheat oven to 350 degrees F (175 degrees C).
- Melt butter in a skillet over medium-low heat, and cook the onion, celery, and carrots until the celery and carrots are tender, about 15 minutes, stirring occasionally. Stir in peas, parsley, thyme and flour, and cook, stirring constantly, until the flour coats the vegetables and begins to fry, about 5 minutes. Whisk in chicken broth and half-and-half, and cook until the sauce is thick and bubbling. Season to taste with salt and black pepper, and mix in the chicken meat.
- Transfer the chicken, vegetables, and sauce into a 2-quart baking dish. Arrange biscuits on top of the filling. In a small bowl, beat egg yolk with water; brush egg yolk on the biscuits.
- Bake in the preheated oven until the biscuits are golden brown and the pie filling is bubbling, 20 to 25 minutes. Let rest 10 minutes before serving.

- Place the chicken into a pot with the water, add salt, and simmer over medium heat until meat is falling off of the bones, about 40 minutes. Remove from heat, and cool. Remove chicken from broth, reserving broth. Remove the meat from the chicken, cutting large pieces into chunks. Discard skin and bones.
- Meanwhile, place the potatoes into a large pot, and fill with enough water to cover. Bring to a boil over, and cook 8 minutes. Add the celery, and cook 2 minutes more. Drain, and place into a large bowl.
- Bring a second pot of water to a boil over medium-high heat. Add the carrots, and cook 5 minutes. Add the onion and cook 3 minutes more. Remove from heat and drain.
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 baking dish.
- Melt 4 tablespoons of butter in a skillet over medium heat. Stir in the carrots and onion, and cook until tender, about 15 minutes. Mix with the potatoes and celery. Stir in the chicken.
- To make the sauce, melt 7 tablespoons of butter in a pot over medium heat. Whisk 6 tablespoons of flour into the butter, and cook until light brown and paste-like, about 3 minutes. Slowly whisk in the cream and 2 cups of the reserved chicken broth. Continue whisking until the mixture thickens, about 5 minutes. Stir in the parsley and green onions. Season to taste with salt and pepper. Pour the cream sauce over the vegetables and chicken mixture, tossing to coat evenly. Spoon the mixture into the prepared baking dish.
- To make the Cheddar crust, cut 4 tablespoons butter into 2 cups of flour until the mixture is pea-sized. Stir in the Cheddar cheese and sprinkle the ice water over the mixture, gathering the dough into a soft ball. Knead gently until smooth and elastic. Roll dough out on a lightly floured surface until large enough to cover the entire baking dish. Place over the chicken mixture in the baking dish, tucking in edges to fit. Brush with the beaten egg yolk. Pierce top in a few places with a fork or knife to vent steam.
- Bake in preheated oven until top is golden; 30 to 35 minutes.

- To make the pastry: Combine the flour, salt and lard in a mixing bowl. Using two knives or a pastry blender, cut the flour and lard together, reducing the lard to pieces about the size of large peas. Add the ice water, mix together and gather the mass into a ball. The mixture should be quite moist and pliable, but not sticky. If sticky, knead in a little more flour. Cover the pastry in plastic wrap and refrigerate for at least an hour, or until firm.
- Divide the pastry in half and roll each piece out on a floured board to about 1/8-inch thickness and about 12 inches in diameter. Fit one into a 9-inch shallow Pyrex pie dish, trimming the excess. Reserve the other pastry circle for the top. Refrigerate until ready to use.
- Preheat the oven to 375 degrees.
- Season the chicken legs with salt and pepper and place them, skin side up, in a small roasting pan. Bake for 35 minutes on the top rack of the oven. Remove from the oven and cool. Remove any fat from the pan and de glaze the cooking juices with 1/4 cup of water. Set aside.
- Remove all the meat from the legs and discard the skin and bones. Dice the meat and set aside (you should have about 2 heaping cups). Melt the butter in a skillet. Add the carrots, leeks, mushrooms, 1/2 cup water, thyme and a pinch of salt. Bring to a boil, reduce to a simmer, cover and let the vegetables sweat for 5 minutes. Stir in the flour and cook for 3 minutes. Then stir in 3/4 cup of milk and the deglazed cooking juices. Raise the heat and allow the mixture to thicken, stirring constantly. Reduce the heat and simmer another 3 minutes.
- Remove the pan from the heat and stir in the chicken and the peas, adjusting the seasonings. Pour the mixture into the pastry shell. Cover with the remaining circle of dough, trim off the excess and press the edges gently with the tines of a fork to seal. Combine the egg with the remaining milk and brush over the entire surface of the pie. Cut a small hole in the center of the dough and bake for 50 minutes or until brown on top. Remove from the oven and cool for 10 minutes before serving.

- Melt butter in a large, deep skillet over medium-high heat. Add onion, carrot, celery, salt, and rosemary and cook, stirring often, until onion is translucent, about 5 minutes. Stir in flour and cook for 1 minute.

- Over high heat melt the filling butter, and add flour to make a roux.
- Add milk and chicken stock, whisk together.
- Reduce heat, add garlic powder, black pepper and pulled chicken meat, and simmer.
- Meanwhile, chop carrots and potatoes to bite sized pieces, and boil in medium saucepan until tender.
- Warm frozen peas and green beans in microwave or over stovetop as directed on package.
- Drain veggies and add to the cream mixture. Remove from heat.
- Sift together dry crust ingredients.
- Cut in cold butter, add water and gently pat together. Do NOT over mix!
- Divide dough in half and roll out on a floured surface.
- Line the bottom of a 10-12-inch glass bowl with half of the rolled dough. Press gently against inside.
- Add filling and top with the other half of the rolled dough.
- Seal edges by squeezing together top and bottom dough.
- Using a knife, cut several small incisions on surface of dough to allow steam to escape.
- Bake at 400°F on center rack for 45 minutes, or until golden brown.

THE PASTRY QUEEN'S ALL SOLD OUT CHICKEN POT PIE
This is a FABULOUS recipe by The Pastry Queen, Rebecca Rather, from her cookbook "The Pastry Queen: Royally Good Recipes from the Texas Hill Country's Rather Sweet Cafe." She says she can never make enough of these wonderful pot pies to satisfy her loyal customers. After trying this recipe, I can certainly see why. PURE comfort food here! When fall comes, this is what you'll be craving. I usually take two days to put these together--stewing the chicken and sauteeing the vegetables on the first day; making the cream sauce and the crust the second day. Do not be intimidated by the crust! It's just a top crust and hangs over the side of the dish in a rustic, country fashion. Very, very easy to roll out and work with. Also, don't buy any special oven proof bowls for this recipe--I always make it in two 9" pie plates and it fills them nicely. I add about 10 minutes to the bake time, but watch carefully so they don't burn. This recipe is super flexible; feel free to add in your favorite vegetables. I always add carrots to mine--I love the sweetness they add--a perfect contrast to the savory flavor of the pie.

- To make the filling:.
- Melt the butter in a large sauté pan set over medium heat. Add the onion and potato; sauté for 5 minutes. Add the garlic, bell pepper, and mushrooms and sauté about 15 minutes, until the potatoes are tender. Stir in the crushed red pepper and add salt and pepper to taste.
- While the vegetables are sauteing, skin the chicken, pull the meat off the bones and shred the meat or cut into bite-size pieces. Whisk in the chicken stock and cook the sauce over medium heat until it thickens to the consistency of a cream soup. Add the cream, hot pepper sauce, and salt and white pepper to taste. Pour the cream sauce over the chicken filling and stir to combine. Fill individual 1'/4-cup capacity oven-safe bowls three - quarters of the way to the top with the creamed chicken filling.
- To make the crust:.
- Preheat the oven to 375 degrees F. Cut the butter into 16 pieces. In the bowl of a food processor fitted with a metal blade, pulse the butter and flour until crumbly. Add the cream cheese, salt, and white pepper. Continue pulsing just until the dough forms a ball.
- Set the dough on a flat surface dusted with flour. Use a floured rolling pin to roll the dough out to 1/4-inch thickness. Measure the diameter of the pot pie bowls-mine are about 4 inches across-and cut out dough rounds that are 1 1/2 inches larger in diameter. Whisk the egg in a small bowl. Lay the dough rounds on top of the pot pies, making sure the dough hangs evenly over each bowl. Brush the dough lightly with the beaten egg. Bake the pies for 20 to 25 minutes, until golden brown. Serve immediately.

- Preheat the oven to 120 degrees F (50 degrees C). Line a baking sheet with parchment paper.
- Put cauliflower into the bowl of a food processor and pulse until it resembles rice. Transfer to a microwave-safe bowl and microwave for 5 minutes. Set aside and cool cauliflower completely, about 10 minutes.

- Pie crust : Put the flour in a large bowl. Using the tips of your fingers, rub the butter into the flour, until the dough is crumbly and well mixed. Add in the water and beaten egg. The pie crust dough should be smooth but not too soft. If it’s still crumbly, add more water.
- For pie filling: In a pan, brown the carrots and potatoes, followed by mushrooms and chicken. It is important that all these are cut to about the same size for even cooking. Add the salt and pepper (if needed), the black pepper sauce and water. Half cover the pan with a lid and cook for a few minutes. Remove from pan and transfer the filling to a plate to cool. Preheat the oven to 240 deg Celsius. Grease a muffins tray.
- With a rolling pin, roll out the pie crust dough to line the bottom of the muffin tray. Fill in the pie filling and cover the top with another pie crust dough. Seal the edges properly so that the filling will not leak out in the process of baking.
- Glaze the top of the pie with beaten egg and use a fork to poke some holes so that the filling inside can be cooked through.
