CHICKEN PROVOLONE
Chicken Provolone, though one of my simplest dishes, is one of my husband's favorites. It is easy to prepare and looks fancy served on a dark plate with a garnish of fresh parsley or basil. Add some buttered noodles for an easy side dish. -Dawn Bryant, Thedford, Nebraska

- Sprinkle chicken with pepper. In a large skillet coated with cooking spray, cook chicken over medium heat until a thermometer reads 165°, 4-5 minutes on each side., Transfer to an ungreased baking sheet; top with the basil, prosciutto and cheese. Broil 6-8 in. from the heat until cheese is melted, 1-2 minutes.

MARK'S AWESOME CHICKEN SANDWICH

Steps:
- Season chicken strips or tenders with salt, pepper, onion powder, garlic powder and cayenne pepper to taste. Grill on a grill or in a grill pan. Heat olive oil in a skillet and saute mushrooms. Season mushrooms with the same spices as the chicken. Finish mushrooms by deglazing the pan with the Marsala wine and allow to reduce until the wine has evaporated.
- Meanwhile, take a loaf of Italian bread and invert it. Cut a "V" wedge out of the bottom of the loaf and set aside. Into the hollowed out portion of the loaf, sprinkle Parmesan cheese, layer thinly sliced provolone, chicken, Swiss cheese, mushrooms and sliced jarred roasted red peppers. Repeat the layering until it is even with the top of the bread. Put wedge back in loaf and roll tightly in aluminum foil -- shiny side in.
- Bake at 325 for 20 minutes. Remove and let the loaf rest a few minutes. Serve by slicing portions on a diagonal.

Steps:
- Preheat oven to 425 degrees Fahrenheit.
- Pound chicken breasts with flat side of meat mallet until flattened to an even thickness.
- Place seasoned bread crumbs on flat dish.
- Press both sides of the chicken into the crumbs.
- Place coated chicken pieces in a greased 9x13 inch baking dish.
- Sprinkle with Italian seasoning (if using) and top with provolone cheese.
- Dot with butter.
- Bake for 20 minutes or until cheese is golden and crispy around the edges, the way I prefer it.

- In a large bowl combine pesto and mayonnaise.
- Stir in chicken and cheese, toss to coat.
- Scoop salad onto the bread bottom, topping with the top of the bread, pressing together.

Warm and satistfying sandwich that's a little special. cranberry is spicy for some kick. i'm sure this would work equally as well with turkey, chicken just happend to be on sale. enjoy!

- heat oven to 400 degrees.
- in small sauce pan heat cranberry sauce, chilli flakes and salt.
- bring to slight boil and turn to low.
- let simmer for 15 minutes and turn down.
- in frying pan heat oil and add chicken seasoned with salt, pepper and basil.
- heat on medium for 5-7 minutes, careful not to burn meat.
- turn chicken and heat on other side for 4-6 minutes.
- take some of the spiced cranberry sauce heating in the saucepan and spread it on chicken. heat on high for about 5 minutes both sides and remove from heat and let cool to slice.
- slice keiser rolls in half and spread one side with 1 tbs mayonnaise and the other with about 2 tbs cranberry mixture.
- put a few leaves of basil on side with cranberry sauce.
- slice chicken breasts, against grain, in 1/2 inch slices.
- add 1/4 of chicken to side with basil.
- sprinkle salt and pepper on chicken.
- top chicken with one slice of provolone and one of swiss.
- put side with cheese together with other side and put in oven for approximatly 8 minutes.
- remove from oven and let sit 1 minute and slice in half.
