GRILLED PEACHES

Choose fruit with a fragrant aroma and flesh that yields a bit when pressed gently. If a peach has cuts or tan spots, or if it's rock-hard or mushy, don't buy it. Color has more to do with variety than ripeness.

SIMPLEST GRILLED PEACHES

Simplest Grilled Peaches image

Grilled peaches may be summer's greatest joy. Cook them over a medium to low gas grill or a dying charcoal fire, and serve them with ice cream, whipped cream or nothing at all.

Provided by Sam Sifton

Categories     barbecues, dessert

Time 10m

Yield 4 to 6 servings

Number Of Ingredients 2

4 to 6 peaches
Olive oil

Steps:

  • Heat a gas grill to medium. If you are cooking on a charcoal grill, wait until the fire has died down to medium to low heat.
  • Cut the peaches along their seams, all the way around, and twist their halves off their pits. Brush the cut sides of the peaches with olive oil and grill, cut side down, until the fruit has developed grill marks and started to soften, about 4 to 5 minutes.
  • Brush the tops with oil, turn over and move to the side of the grill to continue cooking over indirect heat, another 4 to 5 minutes. You can add flavor by brushing them with maple syrup and bourbon, or molasses and butter. But if they are perfect peaches, they shouldn't need anything at all.

GRILLED PEACHES

Grilled Peaches image

Provided by Natalie Clark

Categories     Summer

Time 10m

Number Of Ingredients 2

2-3 peaches, sliced in two and pitted
2 tablespoons olive (not extra virgin) or vegetable oil, for coating

Steps:

  • Right before cooking, slice the peaches along the seam and pit them. Coat them in oil for cooking, being sure to give them a thick, even coating. I prefer to toss them in a gallon size Ziplock bag along with the oil and gently rub the oil into the peach. This reduces mess, which is critical when you might be in the backyard, far from access to a sink. Don't use extra virgin olive oil, as the smoke point is lower and may cause the peaches to taste burnt and smoky. Grill the peaches skin side up for 5-6 minutes. When they begin to sizzle and shine, turn them over onto their skin and cook for another 6-7 minutes, or until they soften and lose a little bit of their shape. Serve immediately, with or without a garnish of whipped cream or ice cream. If you don't have room to eat all the peaches you've grilled, they can be reheated in the microwave for about 30 seconds, and they still taste great the second time around.

Top Asked Questions

How do you cook Peaches on an outdoor grill?
Preheat your outdoor grill to medium heat (about 350 degrees F). Clean grates. Cut peaches in half and remove the pits. Brush the cut side with a little olive oil and place cut side down on the hot grill. Cook until grill marks appear; about 4-5 minutes, then flip peaches over add a spoonful of the cinnamon honey butter on top of the peaches.
How do you know when a peach is done grilling?
Resist the temptation to reposition the peaches once on the grill — good grill marks on peaches are the result of patience (and clean grill grates). The finished peaches should be more tender, but not falling apart, with distinct grill marks. Most of the time the peach skin will be loose and falling away.
What are the best peaches for grilling?
They only require fresh peaches and olive oil, make the most of residual heat from a cooling grill, and can play side dish to grilled meats or become a knock-out summer dessert. Here’s how to make the best peaches on the grill in just four steps. When it comes to grilling, you’ll want to look for freestone peaches that are still firm when squeezed.
What is the best way to cook Peaches with vinegar?
Quarter the peaches, removing the flesh from the pits. Toss the peaches with 2 tablespoons oil and some salt and pepper in a large bowl to coat. Grill the peach pieces, turning once, until charred on both sides, about 2 minutes per side. Meanwhile, whisk together the vinegar, chile paste and the remaining 2 tablespoons oil in the same bowl.
