ROASTED CHICKEN ROULADE WITH AMERICAN TRIPLE CREAM AND GEORGIA HAM



Roasted Chicken Roulade with American Triple Cream and Georgia Ham image

1/4 cup clover honey
1/4 cup Dijon mustard
1/4 cup whole-grain mustard
2 heaping tablespoons drained prepared horseradish
Kosher salt and freshly ground black pepper
1/4 cup canola oil, plus more for drizzling
1 clove garlic, chopped into a paste
Pinch of red chile flakes
4 ounces baby arugula
Four 6-ounce boneless, skinless chicken breasts
8 paper-thin slices country ham or prosciutto
8 ounces triple-cream cheese, such as Red Hawk
2 tablespoons unsalted butter
Micro arugula, for garnish

Steps:

  • For the mustard sauce: Whisk together the honey, Dijon mustard, whole-grain mustard and horseradish in a small bowl and season with salt and pepper. Cover and let sit to allow the flavors to meld while you make the chicken.
  • For the chicken roulade: Preheat the oven to 400 degrees F.
  • Heat 2 tablespoons of the canola oil over low heat in a large saute pan. Add the garlic and red chile flakes and cook for 30 seconds. Increase the heat, stir in the baby arugula, season with salt and pepper and cook until just wilted, about 2 minutes. Set aside.
  • Drizzle the chicken breasts with a little oil and thinly pound between 2 sheets of parchment paper or plastic wrap. Put the breasts on a flat surface skin-side down, and sprinkle the top sides with salt and pepper. Place 2 slices of the ham on each breast; spread 2 ounces of the cheese over the ham and then top with one-quarter of the arugula in the center. Roll the breasts tightly and tie with butcher's twine. Sprinkle the roulade with salt and pepper.
  • Heat a large ovenproof saute pan over high heat. Add the remaining 2 tablespoons oil and cook until it begins to shimmer. Put the rolls in the pan seam-side up and add the butter. Cook until golden brown on all sides, about 3 minutes. Transfer the pan to the oven and continue cooking until the breasts are just cooked through and the cheese has melted, 4 to 5 minutes.
  • Remove the rolls to a plate and let rest 5 minutes before slicing. Serve with the mustard sauce and topped with a bit of micro arugula.

1/2 cup flat-leaf parsley leaves, loosely packed
2 teaspoons dried thyme
Zest of 1 lemon
1/4 teaspoon salt, plus more to taste
1/4 teaspoon freshly ground pepper, plus more to taste
3 large cloves garlic, minced
1/2 pound broccoli rabe
1/4 cup plus 3 tablespoons low-fat ricotta cheese
2 whole skinless and boneless chicken breasts
1/4 cup dry white wine
Olive-oil cooking spray

Steps:

  • Heat oven to 400 degrees with rack in center. Place parsley, thyme, lemon zest, salt, and pepper in a food processor. Process until finely chopped. Coat a small saute pan with cooking spray. Heat the pan to medium; saute garlic and broccoli rabe, until garlic is translucent and broccoli rabe has wilted. Season with salt and pepper. Add to food processor, and pulse to combine. Add the ricotta; process until combined. Set aside.
  • Place one of the chicken breasts between two layers of plastic wrap. Using a meat mallet, pound evenly until the breast is a scant 1/4 inch thick. Repeat with the remaining breasts. Spread 3 to 4 tablespoons of filling in an even layer on each breast. Roll up the breasts, and secure rolls with a wooden skewer or toothpick.
  • Coat a large skillet with a heatproof handle with cooking spray, and place over medium-high heat. Place chicken breasts in the skillet and cook, turning occasionally, until golden on all sides, about 3 minutes total. Place skillet in oven, and cook until an instant-read thermometer registers 165 degrees, about 13 minutes. Remove chicken from skillet, and set aside. Place skillet on top of stove over medium-high heat; add wine, and reduce liquid by half, about 1 minute, scraping skillet with a wooden spoon to dislodge any cooked-on bits. Strain liquid into a small pitcher. Cut rolled chicken crosswise into 1/4-inch-thick pieces. Serve warm with reserved sauce.

4 skinless, boneless chicken breast halves
1 (14 ounce) can spinach, drained
1 egg
3 tablespoons grated Parmesan cheese
2 teaspoons milk
1 cup Italian seasoned bread crumbs

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Grease a baking sheet.
  • Place chicken breasts between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound the chicken with the smooth side of a meat mallet to a uniform thickness of 1 inch.
  • Heat spinach in a saucepan over medium-high heat.
  • Whisk eggs, Parmesan cheese, and milk together in a bowl.
  • Stir egg mixture into the spinach; cook and stir until thickened, about 2 minutes. Remove from heat.
  • Spread about 2 heaping tablespoonfuls of the spinach mixture onto each pounded chicken breast.
  • Roll each breast into a cylinder shape, secure ends with toothpicks, and arrange on the prepared baking sheet.
  • Sprinkle bread crumbs atop rolled chicken.
  • Bake in the preheated oven until chicken is no longer pink in the center and juices run clear, about 45 minutes. Allow chicken to rest for several minutes before removing toothpicks and serving.

4 (8-ounce) boneless chicken breast halves, skin on
4 ounces thinly sliced soppressata
1 (6-ounce) jar sweet roasted peppers

Steps:

  • Preheat oven to 350 degrees. Remove tenders from chicken breasts and set aside. (Tenders are the small muscles running the length of the breast, about 1/2-inch in diameter, under each chicken breast half.) Place breasts skin-side-down on flat surface; flatten slightly with cleaver or mallet. Sprinkle with salt and freshly ground pepper. Cover chicken with overlapping slices of soppressata. Place roasted red pepper in center of chicken. Place chicken tender on top of pepper. Roll chicken breasts tight, jelly-roll style, to completely envelop the filling. Place roulades in shallow baking pan. Bake 25 minutes, then place under broiler for 30 seconds to crisp skin. Remove from oven, let rest 5 minutes. Cut each into 6 slices. 8 slices bacon
4 boneless, skinless chicken breasts, butterflied and pounded out
Salt and pepper
1/4 cup German mustard
1/2 cup chopped pickles or cornichons
3 tablespoons chopped fresh parsley, plus additional for the sauce
4 hard-boiled eggs, chopped
2 tablespoons olive oil
2 to 3 tablespoons butter
2 cloves garlic, grated or minced
1 large shallot, minced
1 tablespoon tomato paste
Splash white wine
1 cup chicken stock

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the bacon in a single layer on a slotted pan set over a baking sheet and cook three-quarters of the way through. Remove and set aside. When cool enough to handle, roughly chop the bacon.
  • Sprinkle the pounded out chicken breasts on both sides with salt and pepper, and spread on one side with the mustard. Place some chopped bacon, pickles, parsley and egg on top of each breast, roll tightly, and then tie in a couple places with butcher's twine to secure.
  • Place a large ovenproof skillet over medium-high heat and add the olive oil. Add the rouladen to the pan and brown on all sides. Transfer the skillet to the oven and roast until the rouladen reach an internal temperature of 165 degrees F, about 20 minutes. Transfer to a plate or platter and cover loosely with foil.
  • Place the skillet back on the stove over medium heat and add the butter, garlic, shallot and tomato paste; cook for a minute or two. Add the wine, stock and some more parsley and bring to a boil. Season to taste. Pour the sauce over the chicken to serve.

They say "Stuffed with sundried tomatoes, baby spinach, and freshly grated Parmesan cheese, this colorful combo brightens up basic chicken cutlets. Other greens such as arugula, chard, and baby kale can take the place of spinach in this dish."

16 ounces boneless skinless chicken breasts, trimmed and pounded thin into cutlets
2 tablespoons sun-dried tomatoes (dry packed)
2 cups Baby Spinach
1/4 cup parmesan cheese
1/4 cup onion, chopped
2 teaspoons olive oil, divided
1 teaspoon garlic
1/3 teaspoon red pepper flakes
1 tablespoon water
1/2 cup dry white wine

Steps:

  • Place the spinach in a large nonstick skillet with the washing water clinging to the leaves or a tablespoon or two of water if dried. Cover and cook for 2 minutes, tossing occasionally, or until wilted. Drain and press firmly with the back of a spoon or squeeze to remove excess moisture. There should be 1/2 cup spinach. Wipe out the skillet.
  • Meanwhile, in a medium nonstick skillet, combine the onion, 1 teaspoon oil, garlic, red-pepper flakes, and 1 tablespoon water. Turn the heat to medium. Cook for about 2 minutes, or until the onion sizzles. Reduce the heat to low. Cover and cook, stirring once, for about 3 minutes, or until softened. In a small bowl, combine the onion mixture, cheese, and spinach. Stir to mix. Set aside.
  • Sprinkle the tomatoes evenly on the smooth side of the cutlets.
  • Divide the spinach mixture among the cutlets. Spread to the edges of 3 sides, leaving about 1" at the narrow tip free of spinach mixture. Loosely roll up the chicken, ending with the narrow tip, and secure with wooden picks.
  • Add the remaining 1 teaspoon oil to the large skillet and set over medium heat. Place the chicken in the pan. Cook, turning, for about 10 minutes, or until golden brown on all sides. Add the broth or wine, cover, and cook over low heat for about 7 minutes. Uncover and transfer chicken to a serving platter. Cover with foil to keep warm.
  • Boil the skillet juices for about 5 minutes, or until reduced to a glaze. Diagonally slice the chicken into 1"-thick pieces. Drizzle with pan juices and serve.

4 boneless skinless chicken breasts
1/2 cup baby spinach leaves, stemmed and washed
4 anchovies
4 cloves garlic
1 small fresh cayenne pepper, chopped fine (or 1/4 teaspoon cayenne)
1/2 cup cashews (or 1/4 cup of cashew butter)
2 tablespoons extra virgin olive oil
1 tablespoon fresh lemon juice
1/2 cup dried apricot, chopped fine
1/4 cup raisins
1/2 cup white wine
1/2 cup fine breadcrumbs
2 eggs
1 cup chicken stock

Steps:

  • Pound the chicken breasts very thin--like the thinnest scallopini
  • Simmer the chopped apricots and the raisins in the white wine till apricots are soft and raisins are plump; remove from heat and allow to cool slightly
  • Mash the garlic cloves into a paste and set aside
  • If using raw cashews, grind in coffee grinder until the nuts form a paste; if using cashew butter, proceed to next step
  • Spread a thin layer of cashew butter/paste over the pounded chicken
  • Lay a layer of spinach leaves over the chicken
  • Scatter the apricots and raisins over the chicken
  • Roll the chicken up tightly, tucking in the ends
  • Beat one egg
  • Dip each chicken roll into the beaten egg
  • Roll each chicken roll in the breadcrumbs till lightly coated
  • Heat the olive oil in a skillet over medium heat
  • Saute the chicken rolls, turning with tongs, until cooked on all sides
  • Remove chicken rolls to an oven-proof plate; tent with foil; keep warm
  • If necessary, add additional olive oil to pan
  • Add anchovies and saute till anchovies dissolve into oil
  • Add garlic paste and pepper
  • Add chicken stock and bring to a boil and reduce slightly
  • Lower heat
  • Mix remaining egg with cornstarch
  • Whisk in lemon juice and continue to whisk until mixture is smooth
  • Temper in some of the chicken stock mixture
  • Gently add egg/lemon mixture to chicken stock mixture
  • Return to low heat
  • Whisk till smooth and thickened to the consistency of thin custard
  • Slice chicken rolls on the diagonal
  • Pool sauce on dinner plates
  • Lay chicken slices on top of sauce and serve
