This chicken and noodle soup will feed two young children. For adults, or if your kids are older, use a pack of noodles each, extra stock and a whole egg

1 pack instant ramen noodles
600ml chicken stock
½ cooked chicken breast , sliced
4 tbsp sweetcorn , peas or chopped beans
1 egg
sesame oil , to serve (optional)

Steps:

  • Put the noodles in a pan (don't add the flavour sachet). Pour over the stock, bring to the boil, then simmer until cooked (follow pack instructions for cooking time).
  • Lift the noodles out of the pan and transfer to two bowls. Bring the stock in the pan back to a simmer, then add the chicken and cook until heated through. Scoop the chicken out with a slotted spoon, then transfer to the bowls. Warm the sweetcorn or cook the peas or beans in the stock, bringing back to the boil if you need to, then transfer to the bowl.
  • Meanwhile, cook the egg in a pan of boiling water for 6 mins. Remove carefully and cool under the cold tap, then peel and halve. Add an egg half to each bowl, then bring the stock back to a simmer and pour it over the noodles. Add a few drops of sesame oil, if you like.

The holiday hoopla is over and I'm setting my sights on eating whole. Ramen has been all the rage and I've been dying to try this at home. I never skimp on flavor even when I'm eating light. This dish is a total flavor bomb, filled with a rich broth, tender meat, and noodles, topped with a 7-minute egg - my new favorite thing in the world. My family went nuts for this; it's complex, easy, and satisfying. You don't have to make the egg, but I think it's so worth it.

1 medium onion, thinly sliced
3 cloves garlic, minced
1 tablespoon freshly grated ginger
½ cup rice vinegar, or to taste
½ cup reduced-sodium soy sauce
2 tablespoons oyster sauce
2 tablespoons mirin
1 tablespoon fish sauce
1 tablespoon sriracha sauce
4 cups low-sodium chicken broth
1 cup water
1 cooked chicken breasts, shredded
¾ pound baby bok choy, quartered lengthwise
3 (3 ounce) packages dried ramen noodles
1 tablespoon vegetable oil
4 eggs
1 jalapeno pepper, sliced, or to taste
2 green onions, chopped, or to taste
¼ cup chopped cilantro, or to taste

Steps:

  • Heat a Dutch oven over medium-high heat. Add onion and saute until starting to soften, about 5 minutes. Add garlic and ginger; cook about 30 seconds more. Add rice vinegar, soy sauce, oyster sauce, mirin, fish sauce, and sriracha sauce; stir to combine. Add chicken broth and water and bring to a boil. Reduce heat and simmer about 5 minutes. Add chicken and bok choy; simmer gently until bok choy is just tender, about 2 minutes.
  • Fill a large pot with lightly salted water and bring to a rolling boil. Add ramen noodles and return to a boil. Cook, uncovered, stirring occasionally, until noodles are tender yet firm to the bite, 5 to 7 minutes. Drain and drizzle with vegetable oil to prevent sticking.
  • While ramen is cooking, fill a pot with enough water to cover the eggs and bring to a boil. Gently lower eggs into the boiling water and cook until yolks are barely set, about 7 minutes.
  • Fill a large bowl with ice water. Transfer soft boiled eggs to the ice bath to stop the cooking process; let sit about 3 minutes. Drain eggs, carefully peel away shells, and slice in half.
  • Divide ramen between 4 bowls. Add broth. Top each with jalapeno, green onions, cilantro, and soft boiled egg. Serve immediately.

1 cup frozen sweet corn
¼ cup japanese mayonnaise
1 tablespoon garlic, minced

2 tablespoons unsalted butter
1 ½ cups shredded mozzarella cheese
¼ cup scallions, greens only, thinly sliced on the bias

Steps:

  • Bring a medium pot of water to a boil over high heat. Add the ramen noodles and cook according to the package instructions. Drain the noodles, reserving ⅓ cup of the cooking water.
  • Arrange an oven rack in the top position. Turn the oven to broil.
  • Meanwhile, in a medium heatproof bowl, stir together the frozen corn, mayonnaise, sugar, garlic, and pepper. Microwave for 2 minutes, or until the corn has thawed.
  • Transfer the noodles to a medium heatproof bowl. Add the reserved cooking water, spice packet, and kimchi and use chopsticks to stir until well combined.
  • Melt the butter in an 8-inch cast iron skillet over medium-low heat, tilting to coat the bottom of the pan. Add the noodles in an even layer. Top with the corn mixture, then the mozzarella cheese. Remove the pan from the heat.
  • Transfer the skillet to the oven and broil until the cheese starts to brown, rotating the pan if it is browning on one side more than the other, about 5 minutes.

Remove the chicken and scallions from the poaching liquid and reserve 1½ cups of the liquid. Shred the chicken and discard the scallions and remaining liquid.
  • Heat the olive oil in a medium pot over medium heat. Add the ginger and garlic, and cook for 1 minute, until fragrant. Add the carrots, edamame, and red bell pepper, and sauté for 3-4 minutes, until the vegetables are starting to become tender.

1 (3 ounce) package ramen noodles with seasoning packet
2 tablespoons sesame oil, divided
8 ounces skinless, boneless chicken breast, diced
2 tablespoons oyster sauce
2 tablespoons soy sauce, divided
1 ½ cups frozen mixed vegetables
2 teaspoons freshly grated ginger
2 teaspoons minced garlic, divided
½ teaspoon chili powder

Steps:

  • Place ramen noodles in a bowl. Set seasoning packet aside. Pour boiling water over noodles until they are submerged; set aside while you start the stir-fry.
  • Heat 1 tablespoon sesame oil in a frying pan over medium-high heat, swirling to coat the entire pan. Add chicken and stir to coat with oil. Add oyster sauce and 1 tablespoon soy sauce. Stir-fry chicken until no longer pink and juices run clear, 7 to 10 minutes.

1 cup bell pepper, chopped (red or green, your choice)
1/2 teaspoon ginger
4 whole green onions, thinly sliced
1 (20 ounce) can pineapple chunks in juice, undrained
1 lb boneless chicken breast
oil
2 (3 ounce) packages chicken-flavored ramen noodles
1/2 cup sweet and sour sauce

Steps:

  • Drain the pineapple juice into a measuring cup and add enough water to measure 2 cups; set aside.
  • Cut the chicken into 1-inch pieces and season with ginger. Heat a bit of oil and stir fry the chicken for 3-4 minutes.
  • Add the pineapple juice and bring to a boil. Break the noodles into pieces and add to the skillet with the seasoning packets.
  • Bring back to a boil, reduce the heat, and simmer for 3 minutes until the noodles are tender and most of the liquid is absorbed.

200 g brown miso
100 ml regular soy sauce
100 ml water
10 g sugar
4 soft-boiled eggs, peeled
200 g bamboo shoots, drained
5 g sesame oil
100 g regular soy sauce
10 g sugar
2 g red chili pepper flakes
1 1/4 liters hot chicken stock, strained
400 g cooked chicken (chicken breast or thigh cooked in the hot stock, then pulled off the bone in strips and dressed with)
110 g good-quality fresh ramen noodles (at a pinch, you could use another type of noodle)
200 g bean sprouts, blanched
100 g frozen corn kernels, thawed drained
10 g wakame seaweed (rehydrated in cold water for one hour, then drained and set aside)
60 g unsalted butter, cut into four equal slices
20 g chives, thinly sliced

Steps:

  • Mix together the white and brown miso in a bowl and set aside.
  • In another bowl, mix the soy, water and sugar for the eggs, then marinate the peeled eggs overnight if possible, but for at least three to four hours.
  • Stir fry the bamboo in the sesame oil until dry, add the other ingredients, stir-fry again until dry and set aside.
  • Now you're ready to finish the dish. Have all the ingredients laid out ready to use quickly. Have one pot on the go with the hot stock and another with boiling water, for cooking the noodles.
  • Divide the miso tare between the four bowls and divide the stock equally on top. Whisk until the tare has blended into the stock, to ensure an even taste.
  • Cook the noodles to the texture you like, drain and divide between the four bowls. Top with bean sprouts, bamboo, pulled chicken, corn, wakame, egg, butter and chives, and serve piping hot.
