Chicken Tampico Recipe Don Pablos
DON PABLOS CHICKEN TORTILLA SOUP (COPYCAT)
Found this recipe on the Reston Web, an online community forum. Don Pablos tortilla soup is something our entire family loves. This recipe looks very promising. I haven't tried it yet, but wanted to post it here asap to keep it from getting lost.

Steps:
- Boil chicken, carrots, celery, onion, garlic, salt, and peppers in water for about 1-2 hours.
- Remove chicken and let cool. Add Rotel, cilantro, corn, and cumin to the pot. Stir well. Remove chicken from the bone and add to the pot. Add cream just to get color and thickness.
- Cut tortillas in strips and fry in peanut oil. Put tortillas in bottom of bowl, sprinkle with cheese and pour soup on top.
- Enjoy!

I love Don Pablos and so does my family. I just hate spending $4.00 for a bowl of their Chili Con Queso that may family gobbles up in 2 minutes. Here is a recipe that tastes exactly like theirs and cost about 1/3 as much to make!

Steps:
- In small skillet over medium heat, melt butter. Sauté the onion in the butter for 10 minutes, uncovered. Add the chili powder, tomatoes, jalapeños and simmer, stirring frequently, until slightly thickened. Add the cheese, stirring constantly. Cook, stirring constantly, until the cheese melts. Add the sour cream and cook for 1 minute more. Serve with soft or crispy tortillas.
- Yield: 2 to 3 Servings.
