CURRY CHICKEN

- Rinse the chickens with water and pat them dry with paper towels. Cut the chickens into serving pieces and place in a large bowl, reserving the backs, necks, and wing tips for stock or another use. Juice the limes and add the juice to the chicken along with the grated lime rind, coating the chicken with the juice.
- In a large skillet, heat 1/4 cup of the oil and 1 tablespoon of the butter, if using, over high heat until very hot. Pat the chicken dry again and carefully add half of the pieces to the skillet. Fry on one side for 3 to 4 minutes, shaking and tilting the skillet a little to distribute the fat. Turn the chicken over and fry for 3 minutes more, or until golden brown. Remove the chicken to a large platter and set aside.
- Pour out the old fat, wipe the skillet, and add the remaining 1/4 cup oil and 1 tablespoon butter, if using. Repeat the frying procedure with the remaining chicken pieces and then set aside.
- Discard all but 2 tablespoons of oil, reduce the heat to medium, and add the onions and garlic to the skillet. Cook, stirring, for 1 minute (be careful not to burn the garlic). Add the curry powder and fry for 1 minute, scraping the bottom.
- Add the tomatoes, whole Scotch bonnet pepper and slices, salt, and black pepper. Stir thoroughly while scraping the bottom of the pan. Add the water and mix until well blended. Return the chicken to the pan. Bring to a boil and reduce the heat to a simmer. Cover and cook for 45 minutes, or until the chicken is tender.
FRUITED CURRY CHICKEN SALAD
A healthy and tasty chicken salad with a fruity twist - great on a croissant or in a honey pita. The salad is best if eaten the day after preparation. This allows the ingredients time to mingle, giving a fuller flavor.

- Arrange the chicken pieces in a single layer in a 9x13-inch baking dish. Season the chicken liberally with salt, pepper, and the paprika; set aside.

- Slice chicken breast into strips.
- Add the curry powder, oil, pepper, and salt to the prepared chicken. Rub in the dry ingredients and make sure the chicken is evenly coated.
- Heat oil in a skillet over medium heat.
- Add the chicken and cook until partially done. Remove from skillet and place in a clean bowl.
- Add onions, ginger, and garlic to skillet. Cook until the onions are translucent.
- Add the diced tomato, curry powder, cayenne pepper, and chicken stock.
- Return the partially cooked chicken. Stir and cook until chicken is done.
- Stir in the chicken stock cornstarch slurry. Cook until the curry has thickened.
- Turn off the heat and stir in the Greek yogurt.

- Pour chicken curry over french fries, garnish with cilantro, as desired.

CHICKEN WITH CREAMY CURRY SAUCE

- Gather the ingredients.
- Chop the parsley. Slice the green onions thinly. Finely mince the garlic.
- Pat the chicken breasts dry and lightly sprinkle them all over with salt and pepper. Dredge each of them in flour to coat both sides.
- In a large skillet or sauté pan, heat the oil and butter over medium heat. Add the chicken breasts and cook for about 4 to 5 minutes on each side, until lightly browned. Add the chicken broth, wine, parsley, green onions, garlic, and curry powder. Bring to a boil; reduce the heat to medium-low and simmer, uncovered, for 5 minutes.
- Cover the pan and simmer for 5 to 10 minutes longer.
- Stir in the cream and add salt to taste. Heat through.

- Melt butter in a large, heavy skillet.
- Finely chop onion, and simmer in the butter until soft but not brown. Lower heat to medium.
- Cut all the fruit into small pieces. Add all fruit except the cut up bananas at this point.
- Stir gently until warmed through.
- Add the flour and stir until it's been incorporated, about one minute.
- Add curry and chicken broth.
- Add the bananas.
- Let simmer on low heat for five minutes.

- Cut the chicken into bite-size pieces, season with salt and freshly ground white pepper and dust with cornstarch.
- Heat a wok over a high heat, and add half of the peanut oil. Add the chicken and stir-fry for about 6 minutes, until golden brown. Remove and set aside.
- Rinse out and dry the wok, and heat the remaining oil. Add the garlic, ginger and chili and stir-fry for 40 seconds or so. Stir in the onion and stir-fry for a further 40 seconds.

- to prepare rempah, combine all the rempah ingredients. pond together in a pestle and mortar untiil coarse paste forms.( you can whiz them in a blender if time is of the essence).
- heat some oil in a wok and fry the herb paste until fragrant.
- add the chicken and stir wellso that it is coated with the herb paste. stir-fry until chicken is half cooked. add in jackfruit and mix well.

- Fry the flour and the butter on a frying pan or in a sauce pan.
- Brown only a bit.
- Pour in the chicken consommé and beat to smooth.
- Pour the sauce to a bowl and fry the chicken strips on the pan.
- Pour in the sauce and cook over a low heat about 5 minutes.
- Serve with rice.
- You can add almost any spice you like to this, and the amounts of curry, white pepper and cumin can vary a lot.
- These amounts are only approximate, I never measure them.
- This is best with long-grain rice first fried a little with onions and butter and then boiled in chicken consomme (with a cinnamon stick and curry).
