1 tablespoon unsalted butter
2 tablespoons extra-virgin olive oil
1 medium yellow onion, diced medium
1 large carrot, grated on the large holes of a box grater
1 teaspoon fresh thyme, leaves
1/8 teaspoon cayenne pepper
Coarse salt and ground pepper
1 pound chicken livers, rinsed and trimmed
Toasts or crackers, for serving

Steps:

  • In a large skillet, heat 1 1/2 teaspoons butter and 1 tablespoon oil over medium. Add onion and cook, stirring occasionally, until golden, 10 minutes. Add carrot, thyme, and cayenne and season with salt and pepper. Cook, stirring occasionally, until carrot is tender, 5 minutes. (If mixture is dry or begins to overbrown, add up to 2 tablespoons water.) Transfer mixture to a food processor.
  • Return skillet to medium-high and add remaining 1 1/2 teaspoons butter and remaining 1 tablespoon oil. Pat livers dry with paper towels. Season livers with salt and pepper and add to skillet. Cook until golden brown on all sides and cooked through, 6 minutes. Transfer livers to processor and pulse, scraping down sides as needed, until mixture is mostly smooth. Season to taste with salt and pepper and let cool. Transfer pate to a small bowl and serve at room temperature with toasts or crackers.

1 tablespoon butter
1 clove garlic, peeled and chopped
1 tablespoon chopped onion
¼ pound chicken livers, trimmed and chopped
2 tablespoons dry sherry
⅓ (8 ounce) package cream cheese, softened
hot sauce to taste
salt and pepper to taste

Steps:

  • Melt butter in a medium saucepan over medium heat. Stir in garlic, onion and chicken livers. Reduce heat to low, and simmer approximately 10 minutes, until chicken livers are tender and no longer pink.
  • Place chicken liver mixture in a blender with dry sherry, cream cheese, hot sauce, salt and pepper. Blend until smooth. Transfer to a medium bowl, cover and chill in the refrigerator approximately 2 hours before serving.

1/2 loaf brioche, crust removed, sliced into 1/4-inch-thick triangles
4 tablespoons melted butter
6 tablespoons extra virgin olive oil
1/2 Vidalia onion, chopped (1 cup)
1 1/4 teaspoons coarse salt
1/4 teaspoon ground black pepper
2 bay leaves
1 pound chicken livers
1/3 cup sweet Marsala wine

Steps:

  • Preheat oven to 350 degrees. Brush brioche triangles with melted butter and bake for 10 to 12 minutes, until golden.
  • Heat 2 tablespoons oil in a large skillet over medium-high heat. Saute onion in oil with salt, pepper, and bay leaves until onion becomes soft and golden, 8 to 10 minutes.
  • Add chicken livers to skillet and cook, stirring occasionally, until livers are browned and firm to the touch, 5 minutes.
  • Deglaze skillet with Marsala wine, scraping up brown bits, and reduce liquid by half.
  • Remove bay leaves and transfer liver-onion mixture to food processor; puree until smooth. With motor running, slowly add remaining olive oil. Adjust seasoning to taste, transfer to ramekins, cover, and chill at least four hours before serving. Serve with brioche crostini triangles.

This is a French mousse sort of chicken liver pate. The blender and the milk give it its lightness. Use a white Port, if you can.

Number Of Ingredients 8

1 lb chicken liver
1 cup milk, boiling
1 tablespoon shallot, finely chopped
1/3 cup port wine
2 eggs
1/4 teaspoon allspice, ground
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Put the chicken liver, shallots, salt and pepper in a food processor or blender, and whizz this until it is very finely chopped.
  • Add the 2 eggs. Blend this in to further smooth everything.
  • Once the mixture is nicely blended, add the very hot to boiling milk, and mix this on a low speed. The mousse will become a light color.
  • Add now the allspice and the Port, and blend this in nicely.
  • Divide this mixture into 6 ramekins. Put the ramekins in a pan to which you add 1/2" or so of water, and put this into a preheated 400F oven for about one half hour.
  • You know it's done when it is firm, like a cooked cake.
  • You can serve this cold as a pate, but also warm on grilled, thin white toast upon which you have spread an onion marmalade.
  • The yield is difficult to talk about, because some people will eat the content of the ramekin, whereas others are happy with just a few slices!

3 large eggs
1 pound chicken livers
2 medium and 1 small onion
4 garlic cloves
3 tablespoons extra-virgin olive oil
2 tablespoons medium-dry Sherry or brandy
1 teaspoon sugar
Accompaniment: toasted French bread slices or crackers

Steps:

  • Hard-boil eggs and cool. Peel eggs and chill, covered, until ready to use. Trim chicken livers and pat dry between paper towels. Chop medium onions and garlic.
  • In a large heavy skillet cook chopped onions and garlic in oil over moderate heat, stirring, until golden, about 10 minutes. Increase heat to moderately high and add chicken livers. Cook mixture, stirring occasionally, until livers are cooked through but still barely pink inside, 5 to 8 minutes. Transfer mixture to a bowl and cool.
  • Finely chop enough of small onion to measure 1/3 cup and in a food processor pulse together with 2 hard-boiled eggs until well blended. Add liver mixture, Sherry or brandy, sugar, and salt and pepper to taste and blend until smooth. Transfer pâté to a small serving bowl and cool. Chill pâté, covered, at least 4 hours and up to 2 days.
  • Just before serving, separate yolk and white from remaining hard-boiled egg and force them separately through a coarse sieve onto pâté.
  • Serve pâté with toasts or crackers.

1 lb fresh chicken liver, cleaned
1 cup milk
1/2 cup cold unsalted butter, cut into pieces
1 cup chopped yellow onion
2 teaspoons minced garlic
2 tablespoons green peppercorns, drained
2 bay leaves
1 teaspoon fresh thyme leave, chopped
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/4 cup cognac or 1/4 cup brandy
chopped fresh parsley leaves, for garnish
french bread croutons or toast, accompaniment
french cornichon, accompaniment (optional)

Steps:

  • In a bowl, soak the livers in the milk for 2 hours and drain well.
  • In a large saute pan or skillet, melt 4 tablespoons of the butter over medium-high heat.
  • Add the onions and cook, stirring, until soft, about 3 minutes.
  • Add the garlic and cook until fragrant, about 30 seconds.
  • Add the chicken livers, 1 tablespoon of the peppercorns, the bay leaves, thyme, salt, and pepper and cook, stirring, until the livers are browned on the outside and still slightly pink on the inside, about 5 minutes.
  • Add the Cognac and cook until most of the liquid is evaporated and the livers are cooked through but still tender.
  • Remove from the heat and let cool slightly.
  • Discard the bay leaves.
  • In a food processor, puree the liver mixture.
  • Add the remaining butter in pieces and pulse to blend.
  • Fold in the remaining 1 tablespoon peppercorns and adjust the seasoning, to taste.
  • Pack the pate into 6 individual ramekins or small molds, about 4 ounces each.
  • Cover with plastic and refrigerate until firm, at least 6 hours.
  • To serve, place the ramekins on individual plates.
  • Garnish the tops with parsley and surround with croutons.
  • Serve with cornichons on the side.

4 tablespoons corn oil
Salt, if desired
Freshly ground pepper
2 tablespoons butter
2 tablespoons finely chopped shallots
1/4 cup Madeira wine

Steps:

  • Pick over the livers. Cut away and discard any connective tissue. Cut the livers in half.
  • Heat the oil in a skillet and add the livers, salt and pepper to taste. Cook about one minute and drain well. Pour off all fat from the skillet and wipe it out well with paper toweling. Add the livers to a very small saucepan.
  • Heat one tablespoon of the butter in the skillet and add the shallots. Cook, stirring, until wilted. Add the Madeira and cook until the wine is reduced to half. Pour this over the livers. Heat the livers in the sauce and swirl in the remaining one tablespoon of butter.
