Olive oil, for frying
1/2 pound ground beef
1/2 pound ground pork
Toasted sesame oil, for frying
2 garlic cloves, peeled and finely chopped
2 inch piece of fresh root ginger, peeled and finely chopped
1 to 2 red chillies, deseeded and chopped
1 tablespoon light brown sugar
1 tablespoon fish sauce
Zest of 1 lime, juice of 1/3 lime
3 green onions, trimmed and chopped
Sea salt and freshly ground black pepper, to taste
2 little gem lettuces, separated into leaves, to serve
DRESSING
1 tablespoon soy sauce
Juice of 1/2 lime
1 teaspoon sesame oil
1/2 red chilli, thinly sliced
Small bunch of cilantro leaves, chopped
1 to 2 teaspoons fish sauce, to taste
1 teaspoon light brown sugar
1 tablespoon olive oil

Steps:

  • Heat a large frying pan and add a little oil. Mix the ground beef and pork together. Season with salt and pepper and mix well to ensure the seasoning is evenly distributed. Fry the meat in the hot pan for five to seven minutes until crisp and brown and broken down to a fine consistency. Drain the crisped meat in a sieve - this will help it stay crispy. Set aside. Wipe out the pan and add a tablespoon of toasted sesame oil. Add the garlic, ginger and chilli. Fry with a pinch of salt and the sugar for two minutes. Add the drained meat and stir to mix. Add the fish sauce and heat through. Stir in the lime zest and juice, then add the green onions, stirring for thirty seconds. Turn off the heat. Mix all the dressing ingredients together and adjust to taste. To serve, spoon some of the meat mixture into the lettuce leaves, drizzle with a little dressing and serve.

Steps:

  • hot pan with 1 tbspn beg oil. Season beef and pork mince with salt and pepper, add to pan, enough to feed everyone. Cook until crispy, then drain (keeps mince crispy!!)
  • Add texture, so, new pan with 1 tspn sesame seed oil, add finely chopped red chillies, chopped ginger, and chopped garlic to pan. Add 1 tspn of brown sugar to pan (caramelizes flavours!). Add mince to this.
  • Add fish sauce to pan with everything in to add saltiness. Add zest of a lime and also juice of 1/4 lime.
  • Finally, add chopped spring onions to the pan with around 30 seconds to go, then, gas off, and pour over fresh lettuce read to eat.

1 lb lean ground beef
2 minced garlic cloves
1 tablespoon sherry wine
3 tablespoons soy sauce
1 tablespoon dark sesame oil
1 teaspoon thai chili paste (sambal oelek)
1/2 teaspoon Chinese five spice powder
1 bunch green onion, white parts chopped green parts cut on bias in 1/4-inch lengths (divided)
1 (8 ounce) can water chestnuts, drained and coarsely chopped
1 jalapeno chile, seeded, deveined and minced
1 teaspoon cornstarch, mixed with
1 tablespoon cold water
2 heads bibb lettuce or 2 heads butter lettuce

Steps:

  • Spray large, heavy skillet with nonstick cooking spray. In skillet set over medium-high heat, brown ground beef; drain if necessary.
  • Add garlic, sherry, soy sauce, sesame oil, chili paste, five-spice powder, white part of green onions, water chestnuts and minced chile. Turn down heat and simmer about 10 minutes.
  • Add cornstarch-water mixture to beef mixture and stir until it thickens slightly. Add green part of green onions and cook just until heated through (onion tops will lose their bright green color if cooked too long).
  • Separate lettuce leaves, wash and pat dry. Arrange lettuce cups on platter and serve alongside beef mixture.
