1 lb. shrimp, peeled and deveined
3 Tbsp. chopped fresh cilantro
1 Tbsp. olive oil
1 Tbsp. brown sugar
1 tsp. cumin
1/2 tsp. chipotle powder
1 lime, juice and zest

Steps:

  • Mix the chipotle powder, cumin, brown sugar, lime zest, lime juice and cilantro in a bowl. Add the shrimp to the marinade and toss until coated, then let the shrimp marinate for 20 minutes.
  • Thread the shrimp onto metal skewers, or wood skewers that have been soaked in water for at least 10 minutes.
  • Heat grill to medium-high, then grill the shrimp until cooked (pink and opaque), about 1-2 minutes per side.

2 tablespoons olive oil
4 cloves garlic, minced
1 tablespoon honey
1 1/2 tablespoons lime juice
1/2 teaspoon Chipotle Chili Pepper, Powder or more to taste
1/4 teaspoon salt
1 tablespoon chopped parsley or cilantro
Fresh lime wedges

Steps:

  • Rinse the shrimp with cold water, drain and pat dry with paper towels. Set aside.
  • Heat up a skillet (cast-iron preferred) on medium heat and add the olive oil. When the oil is heated, add the garlic and saute a few times with a spatula. Add the shrimp into the skillet, stirring and cooking. Add the honey, lime juice, Chipotle Chili Pepper and salt, stir to combine well with the shrimp. Keep stirring and turning the shrimp so both sides are nicely cooked.
  • Add the parley or cilantro, stir to combine well. Turn off the heat and serve immediately with some fresh lime wedges. Squeeze the lime juice on top of the shrimp before eating.

1 tablespoon extra virgin olive oil

3 medium limes
1/4 cup unsalted butter, melted

1/2 pound fresh asparagus, trimmed
1/2 pound Broccolini or broccoli, cut into small florets
1 pound uncooked shrimp (16-20 per pound), peeled and deveined
2 tablespoons minced fresh cilantro

  • Preheat oven to 400°. Place potatoes in a greased 15x10x1-in. baking pan; drizzle with olive oil. Sprinkle with 1/4 teaspoon sea salt; stir to combine. Bake for 30 minutes. Meanwhile, squeeze 1/3 cup juice from limes, reserving fruit. Combine the lime juice, melted butter, chipotle and remaining sea salt., Remove pan from the oven; stir potatoes. 1 teaspoon adobo sauce ((the liquid from the can of peppers))
2 cloves garlic (, pressed)
2 teaspoons honey
3/4 teaspoons ground cumin
1/2 teaspoon kosher salt

4 cups cooked brown rice
1 15.5 ounce can black beans (, drained and warmed)

Steps:

  • Place the shrimp in a bowl or gallon freezer bag, and add 2 tablespoons of the oil, lime juice, chipotle peppers, adobe sauce, garlic, honey, salt, cumin, and pepper. Massage the ingredients into the shrimp and let the shrimp rest on the counter for 15 minutes.
  • Heat a large skillet over medium-high heat. Add the remaining oil to the pan and swirl to coat. Spread the shrimp across the pan and discard any remaining marinade. Add the shrimp to the pan and cook for 1-2 minutes on each side or until they've turned lightly pink on the outside and the insides are turning white.

1 tablespoon minced chipotle chile in adobo
2 teaspoons adobo sauce
4 teaspoons brown sugar
1 1/2 lbs extra-large shrimp, peeled and deveined

fresh ground black pepper
1/8 teaspoon sugar
2 tablespoons vegetable oil

Steps:

  • Whisk the lime juice, cilantro, chipotle chile, adobo sauce, and brown sugar together in a small bowl; set aside.
  • Pat shrimp dry with paper towels; season with ¼ teaspoon salt, ¼ teaspoon pepper, and sugar.
  • Heat 1 tablespoon of oil in a 12-inch nonstick skillet over high heat until smoking.
  • Add half the shrimp to pan in a single layer; cook until spotty brown and just pink around the edges, about 1 minute.
  • Off heat, use tongs to quickly flip over each shrimp and let stand until all but very center is opaque, about 30 seconds.
  • Transfer shrimp to plate and cover with foil.
