I have made this both ways and actually prefer it Vegetarian style without the beef. This is delicious and is a big hit with the kids. This is so creamy they won't even realize theres no beef in it if you leave it out. The prep time is making this without the beef.

1 lb lean ground beef (optional)
1 (16 ounce) can refried beans
2 1/2 teaspoons chili powder
1 1/2 teaspoons dried oregano
1 (8 ounce) package manicotti
2 1/2 cups water
1 (16 ounce) jar picante sauce
2 cups sour cream
1 cup shredded Mexican blend cheese or 1 cup cheddar cheese
1/4 cup sliced green onion
sliced ripe black olives (optional)

Steps:

  • In a bowl combine beef (if desired), beans, chili powder, and oregano.
  • Spoon into uncooked manicotti shells; arrange into a greased 13x9x2 inch baking dish.
  • Combine water and picante sauce; pour over shells.
  • Cover and refrigerate overnight.
  • Remove from the refrigerator 30 minutes before baking.
  • Cover and bake at 350° for 1 hour.
  • Uncover; spoon sour cream over top.
  • Sprinkle with cheese, onions, and olives (if desired).
  • Bake 5 to 10 minutes longer or until cheese is melted.

1 lb lean ground beef
1 (16 ounce) can refried beans
3 teaspoons chili powder
3 teaspoons oregano
1 (8 ounce) package manicotti
2 1/2 cups water
16 ounces picante sauce
16 ounces sour cream
1 cup shredded monterey jack cheese
1/4 cup sliced green onion
1/4 cup sliced ripe olives

Steps:

  • In bowl, mix uncooked beef, beans, chili powder, and oregano.
  • Spoon into uncooked manicotti shells.
  • Place in greased 13x9 baking pan.
  • Mix water and sauce, pour over manicotti.
  • Cover and refrigerate 8 hours.
  • Remove from refrigerator 30 minutes before baking.
  • Cover and bake at 350* for 1 hour.
  • Uncover. Sprinkle with cheese, onions, and olives.
  • Bake for 8 minutes more.
  • Then add sour cream.

I made this up one night, when I had lots of cheese in the fridge and wanted something spicy and hearty. It's full of flavour and vegetarian but, as I said, it is very spicy thanks to the chipotles so don't make it if you've got mild tastebuds! The sauce is fairly liquid to start with but will thicken as the shells soak it up during cooking. Use the manicotti tubes that don't need to be pre-cooked for this recipe.

1/2 large onion, chopped
4 -5 button mushrooms, chopped
2 tablespoons olive oil
8 -10 manicotti
250 g fresh ricotta cheese
1 teaspoon dried basil
1 (7 ounce) can chipotle chiles in adobo
2 1/2 cups pasta sauce (your preferred brand)
1 1/2 cups water
1 cup grated parmesan cheese
125 g fresh mozzarella cheese, sliced thinly
salt and pepper, to taste

Steps:

  • Heat the oil in a frying pan and sauté the onions and mushrooms until they are soft and browned.
  • Put the cooked mushrooms and onions in a mixing bowl along with the ricotta and basil.
  • Open the can of chipotle peppers and take out 2 peppers.
  • Chop them finely and add to the cheese mixture.
  • Mix and season to taste with salt and pepper.
  • Now take another two chipotles and the remaining sauce in the tin and add them to the pasta sauce. You may have some chipotles left over and you can add them, to your taste. If you are worried about the spice, this is where you can cut back a bit.
  • Use a hand blender to purée the chipotles in with the rest of the sauce.
  • Add the water and pour 1/3 of the mixture on the bottom of a baking dish (about 9 x 13 or slightly smaller).
  • Start stuffing the uncooked manicotti with the ricotta cheese mixture, placing each shell in the baking dish as you go.
  • When all the shells are stuffed pour the rest of the sauce over.
  • It should be fairly watery and enough to cover the shells.
  • Cover with tinfoil and bake in a 200 C fan oven for 30 minutes.
  • If you don't have a fan oven, you will need to increase the heat by about 20°C.
  • After 30 minutes, take the tinfoil off and cook for a further 15 minutes.
  • Sprinkle the parmesan on top and lay the mozzarella over the pasta as well.
  • Grill for 3-4 minutes, or until the cheese is bubbling.
  • Let rest for 10-15 minutes and then serve.

1 tablespoon vegetable oil
15 ounces ricotta cheese
16 ounces cottage cheese

2 eggs
2 1/2 cups spaghetti sauce

Steps:

  • Boil manicotti according to pkg directions, adding oil to water so they don't stick.
  • Meanwhile, mix all cheeses, salt, pepper, parsley and eggs.
  • Drain manicotti; run cold water over it.
  • Preheat oven to 350.
  • Stuff each manicotti with cheese mixture.
  • Place them in a 3 qt casserole after treating with nonstick spray, pour sauce around and over the manicotti.
  • Cover and bake for 45 minutes. Uncover and bake for another 15 minutes.

1/2 cup finely chopped onion
3 cloves garlic, minced
1 cup shredded part-skim mozzarella cheese, divided (4 oz)
1/2 cup grated fresh parmesan cheese, divided (2 oz)
1 teaspoon dried Italian seasoning
1/2 teaspoon pepper
1 (15 ounce) carton fat-free ricotta cheese
1 (6 ounce) package garden vegetable-flavored light cream cheese, softened
4 ounces block fat free cream cheese, softened (about 1/2 cup)
5 ounces frozen chopped spinach, thawed,drained and ssqueezed dry
1 (27 1/2 ounce) jar tomato-and herb reduced fat low-sodium pasta sauce
oregano sprig (optional)

Steps:

  • Preheat oven to 350.
  • Cook pasta according to package directions, omitting salt and fat; set aside.
  • Coat a small nonstick skillet with cooking spray and place over medium-high heat until hot.
  • Add onion and garlic: saute 3 minutes.
  • Remove from heat;set aside Combine 1/2 cup mozzarella cheese,1/4 cup Parmesan cheese, Italian seasoning, pepper, ricotta cheese,and softened cream cheeses in a bowl; beat at medium speed of a mixer until smooth.
  • Stir in onion mixture and spinach.
  • Spoon cheese mixture into cooked manicotti.
  • (about 1/3 cup per shell) Divide 1 cup pasta sauce evenly between 6 individual casserole dishes coated with cooking spray (if you don't have individual casserole dishes,use a 13 x 9 inch baking dish).
  • Arrange 2 stuffed manicotti in each dish.
  • Pour remaining sauce over each serving.
  • Place dishes on a baking sheet.
  • Cover each dish with foil and bake at 350 for 25 minutes.
  • Sprinkle with remaining mozzarella and Parmesan cheeses; bake uncovered an additional 5 minutes.
  • Garnish with oregano, if desired.

I was looking for a different way to use up some ricotta cheese in my fridge. I found this recipe on Meals.com and modified it slightly. I like Mexican food and quite enjoyed this dish. It was also quite easy to make. You can make it as spicy as you would like to suite your taste.

1 lb lean ground beef
1 small onion, chopped
3/4 cup water
1 (1 1/4 ounce) package taco seasoning mix
1 3/4 cups mozzarella cheese, shredded & divided
3/4 cup ricotta cheese
1 (650 ml) jar salsa, divided
1 (4 1/2 ounce) can diced green chilies
8 soft taco-size flour tortillas (10 inch)
1 green onion, chopped (optional)

Steps:

  • Preheat oven to 350°F.
  • Cook beef and onion in a large skillet, stirring occasionally, until no longer pink. Add water and seasoning mix; cook, stirring occasionally, until meixture is thickened.
  • Combine 3/4 cup mozzarella, ricotta cheese, and chiles in small bowl.
  • Spread 1 cup salsa onto bottom of 9 x 13 inch baking dish.
  • Fill each tortilla evenly with beef mixture, and cheese mixture; roll up. Place in baking dish.
  • Top with remaining salsa and remaining mozzarella cheese; cover.
  • Bake for 30 to 35 minutes or until heated through. Sprinkle with green onions before serving.
  • To Freeze ahead:Prepare as above; do not bake. Cover; freeze for up to 2 months. Thaw overnight in refrigerator. Preheat oven to 350°F Bake for 45 to 50 minutes or until heated through. Sprinkle with green onions before serving.
