1 teaspoon finely chopped seeded chipotle with 1/2 teaspoon adobo
4 (3/4-inch thick) center cut pork loin chops (about 8 ounces each)
1/2 teaspoons salt

Steps:

  • In a small bowl combine the maple syrup, orange juice concentrate and chipotle.
  • Preheat grill pan. Sprinkle both sides of the chops with salt. Brush 1 side of chops generously with glaze. Place on grill pan glaze side down. Brush other side with glaze. Cook 3 to 4 minutes per side over medium-high heat.

1 cup chili powder
1 cup kosher salt
1/2 cup cumin
1/2 cup paprika
1/4 cup garlic powder
1/4 cup onion powder

1/4 cup seafood seasoning, such as Old Bay
1/8 cup cayenne pepper
One 8 to 12-pound bone-in pork butt
10 cloves garlic, minced
2 onions, minced
4 tablespoons chili powder
4 cups molasses
2 cups beef stock
8 ounces mustard
8 ounces cider vinegar
4 ounces Worcestershire sauce
6 tablespoons steak sauce, such as A1
1 tablespoon salt
2 teaspoons black pepper
1 teaspoon hot sauce, such as Cholula
Juice of 2 lemons
2 seeded chipotle peppers in adobo sauce
1 habanero, whole
3 cups white wine vinegar
2 cups sugar
1 cup orange juice
2 tablespoons honey
1 tablespoon white pepper
Celery seed
Kosher salt
3 carrots, grated
1 head purple cabbage, shredded
15 Kaiser rolls, toasted

Steps:

  • For the dry rub: Mix together the sugar, chili powder, salt, cumin, paprika, garlic powder, onion powder, black pepper, seafood seasoning and cayenne until thoroughly combined.
  • Give the pork a healthy rubbing of the dry rub. Refrigerate and let sit for 24 hours.
  • Prepare a smoker with hickory chunks to 225 degrees F. Smoke the pork until it reaches an internal temperature of 190 degrees F, about 1 hour 15 minutes per pound.
  • For the bbq sauce: Saute the garlic and onions until soft in a large saucepan. Stir in the chili powder and saute until toasted and fragrant, about 1 minute. Add the molasses, beef stock, mustard, vinegar, Worcestershire, steak sauce, salt, black pepper, hot sauce, lemon juice, chipotles and habanero and simmer for 30 to 45 minutes. Remove the habanero, transfer to a food processor or blender and puree.
  • For the citrus dressing: Whisk together the vinegar, sugar, juice, honey and white pepper, and add celery seed and salt to taste.
  • When the pork is ready, pull it by hand into small chunks and mix in a bowl with the bbq sauce.
  • Put the carrots and cabbage into a large bowl. Slowly add the dressing and hand toss until the slaw is coated but not saturated. Reserve remaining dressing for future use.
  • Scoop about 1 cup of the pork mixture onto each roll and top with about 1/4 cup of the purple slaw.

1 pork tenderloin (1-1/2 lb.), butterflied
2 each small green and red bell peppers, quartered
1 large onion, quartered
3 cups hot cooked brown rice
1/2 cup light sour cream

Steps:

  • Heat grill to medium heat.
  • Mix dressing, marmalade and chipotle peppers. Reserve 1/4 cup dressing mixture.
  • Grill meat, bell peppers and onions 10 min. or until meat is done (145ºF), turning occasionally and brushing with remaining dressing mixture for the last 2 min. Remove meat and vegetables from grill; let meat stand 5 min. Meanwhile, cut bell peppers into strips and onions into thinner wedges; place in medium bowl. Add reserved dressing mixture; toss to coat.
  • Cut meat into 6 pieces; place over rice. Top with vegetable mixture and sour cream.

1 (5 pound) pork butt roast
1 cup water
½ cup orange juice
salt and ground black pepper to taste
1 ½ tablespoons minced garlic
1 tablespoon stone-ground mustard, or more to taste
1 large sweet onion (such as Vidalia®), chopped

Steps:

  • Place pork butt in a slow cooker with the fattier side facing upwards. Pour water and orange juice into the slow cooker. Season pork and liquid with salt and pepper.
  • Mix garlic and mustard together in a small bowl; spread over the top of the pork butt. Sprinkle onion over the pork.
  • Cook on Low, turning the butt a few times, until the meat falls apart easily when pulled with a fork, 6 to 8 hours.
  • Remove pork from slow cooker; allow to sit until cool enough to handle. Trim away and discard any visible chunks of fat. Shred remaining pork into strands. Return shredded pork to the slow cooker; stir. Remove portions of pork from slow cooker with a slotted spoon to serve.

1 (5-pound) boneless pork shoulder roast
Kosher salt
Freshly ground black pepper
2 cups chicken broth
3/4 cup fresh orange juice
3 tablespoons apple cider vinegar
2 tablespoons finely grated orange zest
2 tablespoons adobo sauce (from a can of chipotle chiles in adobo)
1 1/2 teaspoons ground cumin
4 cloves garlic
4 chipotle chiles in adobo, seeded
1 large red onion, roughly chopped (2 cups)
4 dried or fresh bay leaves
4 sprigs thyme
2 dozen small brioche rolls, split and toasted
2 cups grated pepper jack cheese, optional

Steps:

  • 1. Heat the oven to 325 degrees. In a large skillet over medium-high heat, heat the oil. Season the pork with 1 1/2 teaspoons salt and one-fourth teaspoon pepper, place it in the skillet and sear, turning occasionally, until deep golden brown all over, about 15 minutes total. 2. Meanwhile, put the broth, juice, vinegar, zest, adobo sauce, cumin, garlic, chiles, onions, one-half teaspoon salt and one-fourth teaspoon pepper into a blender; purée until smooth. 3. Transfer the pork to a large, deep casserole dish and set aside. Pour the excess fat out of the skillet. Carefully pour about 1 cup of the chipotle-orange purée into the skillet and cook briefly, scraping up any browned bits. Pour the contents of the skillet over the pork along with remaining chipotle-orange purée. Scatter the bay leaves and thyme in the casserole; cover tightly with foil. Top with a tight- fitting lid; bake for 2 1/2 hours. 4. Carefully uncover the pork and flip over the roast. Baste it with the juices, then re-cover with the foil and lid and return to the oven. Continue cooking until very tender, about 2 hours more. Set aside, covered, for about 30 minutes, then uncover and pour the contents of the casserole into a colander set over a large bowl; discard bay leaves and thyme. 5. When cool enough to handle, tear the pork into shreds, discarding any fat, and transfer to a large bowl. Skim off and discard fat from the juices, then add the juices to the shredded meat and toss well. Pile the pork onto brioche rolls and top with grated cheese, if desired.   • Mix barbecue sauce and marmalade.
  • Place meat into crock pot and cook on low 8 to 10 hours.

  • Remove meat and shred.
  • (I placed crock pot in fridge and let the fat congeal then removed it).
  • Reheat sauce, add meat and mix until coated.
  • Serve on buns with mayo if desired.
