1/4 cup sherry wine vinegar
2 tablespoons fresh lime juice
1 tablespoon minced shallot
1 tablespoon chopped fresh cilantro
1 teaspoon chopped fresh thyme
1 tablespoon chopped fresh parsley
2 canned chipotle peppers, drained and minced
1 garlic clove, minced
1 teaspoon maple syrup
1 cup olive oil plus 2 tbsp. olive oil

Steps:

  • In a medium bowl, combine all of the ingredients except the olive oil, then gradually whisk in the olive oil until the dressing lightly thickens. Taste and adjust the seasoning as necessary.
  • Refrigerate leftovers.
