FLORENTINES (ITALY)
These Tuscan cookies are a Christmas classic. They're nutty, lacy and crisp, as well as deceptively simple to make. Drizzling them with chocolate turns them into the perfect holiday indulgence.

Steps:
- Position a rack in the center of the oven and preheat to 350 degrees F. Line a baking sheet with a silicone baking mat or parchment paper.
- Pulse the almonds in a food processor until finely chopped, but not pasty. Stir together the nuts, flour, zest and salt in a large bowl.
- Put the sugar, cream, corn syrup and butter in a small saucepan. Cook over medium heat, stirring occasionally, until mixture comes to a rolling boil and sugar is completely dissolved. Continue to boil for 1 minute. Remove from heat and stir in the vanilla, then pour mixture into almond mixture and stir just to combine. Set aside until cool enough to handle, 30 minutes.
- Scoop rounded teaspoons (for 3-inch cookies) or rounded tablespoons (for 6-inch cookies) of batter and roll into balls. Place on prepared baking sheet, leaving about 3 to 4 inches between each cookie since they spread.
- Bake 1 pan at a time, until the cookies are thin and an even golden brown color throughout, rotating pans halfway through baking time, about 10 to 11 minutes. Cool on baking sheet for 5 minutes, then transfer to racks to cool. Repeat with remaining batter. Serve.
- Optional chocolate topping: Put the chocolate in a medium heatproof bowl. Bring a saucepan filled with 1 inch or so of water to a very low simmer; set the bowl over, but not touching, the water. Stir the chocolate occasionally until melted and smooth. (Alternatively, put the chocolate in a medium microwave-safe bowl. Melt at 50 percent power in the microwave until soft, about 1 minute. Stir, and continue heat until completely melted, about 1 to 2 minutes more.)
- For sandwiches: Drop about 1/2 teaspoon chocolate onto on the flat side of half of the cookies and press together with remaining halves. Return to rack and let chocolate set.
- For chocolate decor: Drizzle melted chocolate over Florentines as desired. Set aside at room temperature until chocolate is set.
FLORENTINES - CHOCOLATE ALMOND LACE COOKIES
Most people are in awe of these light, lacy cookies that you can get at the bakery, but assume are too difficult and delicate to make at home. Nonsense. These are the easiest thing to make and you can opt to take the partially cooled cookies and wrap them around the handle of a wooden spoon to create a tube. The tubes can be enjoyed as is, dipped partially in melted chocolate or filled with a whipped cream mixture to make a funky little cannoli confection.

Steps:
- Preheat oven to 325°F and line cookie sheets with aluminum foil.
- Cream the butter and sugar.
- Stir in the corn syrup and vanilla.
- Stir in the flour, salt, baking powder and cinnamon; add to the creamed mixture alternately with the milk.
- Blend until smooth and stir in the almonds. Drop by heaping MEASURING teaspoonfuls onto the foil-lined cookie sheets - 3 inches apart.
- Bake for 10 minutes until the edges are browned.
- Let cool completely on the foil.
- Then peel away the foil.
- Melt the oil and chocolate (of your choice).
- You can brush the bottom of each cookie with the chocolate or you can sandwich two cookies together.
- Place in a tightly covered container, but do not refrigerate.
- Place waxed paper between layers of Florentines.

CHOCOLATE ALMOND FLORENTINES
Buttery, crisp and totally indulgent orange-almond lace cookies filled with semi-sweet chocolate.

- Adjust oven rack to center of the oven. Preheat oven to 350°. Arrange parchment paper on a large baking sheet and set aside.
- In a medium bowl combine the almonds, flour and orange zest. Toss to combine. Set aside.
- In a medium saucepan, heat together the sugar, salt, butter, whipping cream and honey. Bring to a rolling boil until the sugar has dissolved. Remove from heat and add the almond mixture. Stir to combine.
- Use a one teaspoon measure to drop exactly 2 teaspoons of batter into mounds at least 3" apart on the cookie sheet. Wet your finger tips with water and flatten out each mound (water prevents your fingers from sticking to the dough). Bake for 8-10 minutes or until golden brown.
- Transfer the parchment paper with the cookies onto a wire rack and cool until room temperature. Transfer cookies to a baking sheet lined with paper towels to soak up excess butter.
- Continue making the cookies in this manner using a fresh sheet of parchment paper each time for cookies to bake on.
- When cookies are cooked and cooled, use an offset spatula to smooth the melted chocolate onto one the baking sheet side of the cookies. Top with another florentine round and set aside to harden, several hours.

- Preheat the oven to 350 degrees F. Line a baking sheet with a silicone baking mat or parchment paper. Combine the almond flour, all-purpose flour and salt in a large bowl; set aside. Combine the sugar, heavy cream, corn syrup and butter in a small saucepan and cook over medium heat, stirring occasionally, until the mixture comes to a boil and the sugar is dissolved; continue to boil 1 more minute. Remove from the heat and stir in the vanilla. Pour the sugar mixture into the flour mixture and stir until just combined. Set aside until cool enough to handle, about 30 minutes.
- Roll rounded tablespoonfuls of dough into balls. Arrange at least 3 inches apart on the prepared baking sheet. Bake, rotating the baking sheet halfway through, until the cookies spread out and turn golden brown, 10 to 11 minutes. Let cool 5 minutes on the baking sheet, then transfer to a rack to cool completely. Repeat with the remaining dough.
- Make the glaze: Microwave the semisweet chocolate and white chocolate in separate microwave-safe bowls in 30-second intervals, stirring, until smooth. Transfer the white chocolate to a small resealable bag. Flip the cookies over so the smooth side is up. Spread each cookie with a thin layer of semisweet chocolate. Snip a corner of the white chocolate bag and pipe lines on the semisweet chocolate; drag a toothpick across the lines. Let set, about 2 hours.

- Heat oven to 180C/160C/gas 4. Line two baking sheets with baking parchment.Melt the butter, sugar and golden syrup in a small saucepan over a low heat, stirring frequently. Remove from the heat and whisk in the flour then add the cherries, flaked almonds, pistachios and orange zest.
- Scoop 10 flat tbsp of the mixture onto the baking sheets, leaving room for them to spread. You will need to do these in batches. Bake for 10 mins until golden. Leave to cool for 2 mins until firm enough to lift onto a wire rack. Cool completely. Repeat with the remaining mixture.
- Melt the chocolate in a bowl over a simmering saucepan of water or in the microwave in 30 second bursts. Turn the florentines over on the wire rack. Spoon chocolate onto the base of each florentine and gently spread to the edges. When the chocolate is firm enough to hold its shape, use a fork to draw wavy lines across the chocolate. Leave to set and then store in an airtight container.

- Preheat the oven to 350 degrees F (175 degrees C). Lightly grease baking sheets with shortening and dust with flour.
- Stir cream and sugar together in a bowl. Stir in orange peel, flour, and almonds until combined. Drop batter in teaspoonfuls onto the prepared baking sheets, keeping each cookie well apart from each other.
- Bake in the preheated oven until golden brown, 10 to 15 minutes.
- Remove from the oven and let cool completely on a wire rack, about 30 minutes.
- Spread bottoms of cooled cookies with melted chocolate using a spatula, or spear cookies on a fork and dip bottoms into chocolate. Let dry, bottoms-up, on waxed paper.

- Preheat oven to 300° F. with rack in centre of oven. Prepare a baking sheet with a silpat or a piece of parchment paper. (If you don't have either, be sure to grease your baking sheet.
- In a medium bowl, combine almonds, egg white, icing sugar and vanilla. Stir gently (so you don't crush almonduntil combined.
- Spoon 1-inch balls of mixture onto prepared baking sheet, about 4 inches apart. Using you fingers or a fork, flatten the balls into 2 1/2 to 3-inch discs. (You can dip fingers/fork in to cold water if they are sticking). Try to avoid having gaps between the almonds and be sure that the cookies are fairly flattened, as pieces sticking up may cook more quickly/over-brown. Cookies don't spread much while baking, so it's ok if they're somewhat close after you flatten them. Try to keep at least an inch between though.
- Bake in preheated oven for 20-25 minutes, or until golden brown. (Start checking at 20 minutes, so they don't over-brown. If you made your cookies smaller, they may be done in as little as 10-15 minutes, so be sure to check). Allow to sit on the baking sheet for 5 minutes, then remove to a cooling rack.
