This chocolate and caramel fondant is a naughty combination of rich chocolate and sweet caramel makes a delicious dessert.

200g bar dark chocolate
100g butter
2 large eggs
2 large egg yolks
100g caster sugar
50g plain flour
6-7 rounded tbsp caramel sauce
Cocoa, for dusting

Steps:

  • Set the oven to 200°C/392°F/Gas Mark 6.
  • Melt the chocolate and butter together, either in a microwave oven or gently in a pan on the hob.
  • Whisk the eggs, additional egg yolks and sugar together until the mixture is light and fluffy. Fold in the melted chocolate mixture. Sift the flour over the top and stir it in. Fill each tin to two-thirds full with the resulting mixture. Place a spoonful of the caramel sauce in the centre of each pudding, then top with the remaining mixture.
  • Place the tins on a baking tray and put in the oven. Cook for 15-20 minutes until the puddings are just set.
  • Remove from the oven and leave to settle in their tins for 2-3 minutes, then turn out on to serving plates. Dust with cocoa and serve immediately.

50g melted butter, for brushing
cocoa powder, for dusting
200g good-quality dark chocolate, chopped into small pieces
200g butter, in small pieces
200g golden caster sugar
4 eggs and 4 yolks
200g plain flour
Caramel sauce (see 'Goes well with') and vanilla ice cream or orange sorbet, to serve

Steps:

  • First get your moulds ready. Using upward strokes, heavily brush melted butter (use 50g in total) all over the inside of the pudding mould. Place the mould in the fridge or freezer. Brush more melted butter over the chilled butter, then add a good spoonful of cocoa powder into the mould. Tip the mould so the powder completely coats the butter. Tap any excess cocoa back into the jar, then repeat with the next mould.
  • Place a bowl over a pan of barely simmering water, then slowly melt 200g good-quality dark chocolate and 200g butter, both chopped into small pieces, together. Remove the bowl from the heat and stir until smooth. Leave to cool for about 10 mins.
  • In a separate bowl whisk 4 eggs and 4 egg yolks together with 200g golden caster sugar until thick and pale and the whisk leaves a trail; use an electric whisk if you want. Sift 200g plain flour into the eggs, then beat together.
  • Pour the melted chocolate into the egg mixture in thirds, beating well between each addition, until all the chocolate is added and the mixture is completely combined to a loose cake batter.
  • Tip the fondant batter into a jug, then evenly divide between the moulds. The fondants can now be frozen for up to a month and cooked from frozen. Chill for at least 20 mins or up to the night before. To bake from frozen, simply carry on as stated, adding 5 mins more to the cooking time.
  • Heat oven to 200C/fan 180C/gas 6. Place the fondants on a baking tray, then cook for 10-12 mins until the tops have formed a crust and they are starting to come away from the sides of their moulds. Remove from the oven, then leave to sit for 1 min before turning out.
  • Loosen the fondants by moving the tops very gently so they come away from the sides, easing them out of the moulds. Tip each fondant slightly onto your hand so you know it has come away, then tip back into the mould ready to plate up.
  • Starting from the middle of each plate, squeeze a spiral of caramel sauce - do all the plates you need before you go on to the next stage.
  • Sit a fondant in the middle of each plate. Using a large spoon dipped in hot water, scoop a 'quenelle' of ice cream.
  • Carefully place the ice cream on top of the fondant, then serve immediately. Repeat with the rest of the fondants.

  • For the salted caramel, place the dark muscovado sugar and cream in a saucepan. Using thoroughly wet hands and spoon, add the glucose to the sugar and cream mixture and bring the mixture to the boil.
  • Meanwhile, heat the caster sugar in another pan over a low heat, stirring continuously until golden-brown and caramelised. Remove from the heat instantly.
  • Carefully, pour the hot cream and glucose mixture over the caramelised sugar (the mixture may splutter) and return the mixture to a simmer. Continue to simmer until the caramel mixture has thickened and darkened and the temperature reaches 102C.
  • Remove the pan from the heat and carefully stir in the lemon juice and salt. Season with freshly ground black pepper and stir gently once more. Set aside to cool slightly.
  • Pour the caramel into small silicone moulds or ice cube trays. When the caramel has completely cooled, freeze it for at least 2 hours, or until set. (NB: You will not need all of the caramel for this recipe.
  • For the chocolate fondant, grease the insides of 4 ring moulds, 5cm/2in diameter and 6cm/2½in deep, with softened butter.
  • In a bowl, mix together the cocoa powder and caster sugar until well combined. Dust the inside of the ring moulds with the mixture, shaking off any excess.
  • Melt the chocolate and butter in a heatproof bowl set over a pan of simmering water (do not allow the base of the bowl to touch the water).
  • Sift the icing sugar into the whisked eggs, whisking until well combined. Next, sift in the arrowroot and whisk until the mixture is pale, thick, has doubled in volume and the beaters leave a trail on the surface of the mixture when lifted.
