No-bake, extremely delicious cookies you can put in the freezer and pull out when you have company. Great for the holidays!

½ cup milk
2 cups white sugar
½ cup butter
½ cup cocoa powder
3 cups quick oats
½ cup shredded coconut
½ cup peanut butter
1 teaspoon vanilla extract

Steps:

  • Mix milk, sugar, butter, and cocoa powder in a large saucepan and bring to a rolling boil. Boil, stirring frequently, for about 1 minute. Remove from heat and add oats, coconut, peanut butter, and vanilla. Mix thoroughly.
  • Drop tablespoon-sized balls of cookie dough onto waxed paper and let cool in refrigerator for at least 1 hour.

These are wonderful, quick cookies. It is one of the first things I learned to "cook." You can add more or less oats (3 cups work best for me). I have found that the weather makes a difference on the consistency, its best to make them on a nice sunny day. Also, It is very important not to boil them for longer than one minute.

1/2 cup butter
1 1/2 cups white sugar
1/2 cup packed brown sugar
1/2 cup milk
4 tablespoons cocoa
1 pinch kosher salt
1/2 cup creamy peanut butter (or chunky but is seems to make a more crumbly, dry cookie)
2 teaspoons vanilla
3 cups dry quick-cooking oats

Steps:

  • Add the first six ingredients into a 4-quart sauce pan.
  • Bring to a rolling boil and hold for 1 minute.
  • Remove from heat.
  • Add peanut butter into the hot mixture and stir until melted.
  • Add in vanilla. (almond extract is good also, but I only use 1/2 teaspoon almond extract with 1 1/2 teaspoon vanilla extract).
  • Mix in the dry oats until they are completely coated.
  • Drop cookies by tablespoonfuls onto wax paper.
  • Let cool until set.
  • *Please remember that even if you do follow the recipe exactly, it doesn't always turn out just right. I've had these not set up for me or be hard and dry. But most of the time, the recipe is just right. I adjusted the sugar in the recipe by substituting 1/2 cup of white sugar for 1/2 cup brown sugar, this makes them more moist. I have also found that it makes a difference if you use quick cooking oats or old fashioned. In my experience it takes more old fashioned oats than quick cooking and I like the texture of the quick cooking better. When you make it a few hundred times like I have you learn a couple of things:) Also, Chunky peanut butter tends to make them more dry and crumbly.

3 tablespoons unsweetened cocoa powder
1/4 cup (4 tablespoons) unsalted butter
1/2 cup unsweetened almond milk
1/2 cup chunky almond butter
3/4 teaspoon kosher salt
2 cups rolled oats
3/4 cup roasted sliced almonds
1/4 cup mini chocolate chips

Steps:

  • Line a baking sheet with parchment paper and set aside.
  • Combine the brown sugar, cocoa powder, butter and almond milk in a large saucepan. Bring to a simmer over medium heat, stirring often with a rubber spatula, then simmer for 1 minute. Remove from the heat and stir in the almond butter and salt until smooth. Fold in the oats and almonds and stir until the mixture has thickened, about 2 minutes. Scoop tablespoon-sized mounds onto the lined baking sheet. Press a few chocolate chips on the top of each cookie, flattening slightly. Place the baking sheet in the freezer for 1 hour to set. Store in the refrigerator for up to 3 days or store in the freezer for up to a month for easy snacking.

1 tablespoon grated orange zest
3 tablespoons molasses
1 teaspoon vanilla extract
1 cup all-purpose flour

Steps:

  • In a large bowl, cream together the shortening, white sugar and brown sugar until smooth. Beat in the eggs one at a time, then stir in the orange zest, molasses and vanilla. Combine the flour, baking soda and salt; stir into the molasses mixture until well blended. Mix in oats.
  • Divide the dough into halves, and shape into long logs about 2 inches in diameter. Wrap in waxed paper, and refrigerate for at least 8 hours or overnight.
  • Preheat the oven to 350 degrees F (175 degrees C). Slice chilled dough into rounds about 1/4 inch thick. Place 2 inches apart onto ungreased cookie sheets.
  • Bake for 11 to 13 minutes in the preheated oven, until the bottoms are lightly browned. Cool on the baking pan for a minute before removing to wire racks to cool completely.

1 teaspoon baking soda
1 1/2 teaspoons salt
1 cup shortening
1 cup sugar
1 cup brown sugar, firmly packed

3 cups quick-cooking rolled oats

Steps:

  • Sift together flour, soda, and salt.
  • Cream shortening; add sugars gradually; beat until light; add eggs and vanilla.
  • Blend together dry ingredients and shortening mixture.
  • Add oats.
  • Sharpe dought into rolls 2 inches in diameter. Wrap tightly in waxed paper and chill thoroughly.
  • May be frozen at this point.

When I was growing up our house was splitting at the seams with kids, so it was natural for mom to find things to keep little fingers busy. ...like spooning the cookies on the cookie sheet. If any of them made it to the refrigerator, she'd put them up high so that dad would get some too. These are the easiest cookies to make, but the hardest cookies to make well. I have seen dozens of cook books where the picture was of a failed batch of them.

2 cup(s) sugar
3 tablespoon(s) cocoa powder
1/2 cup(s) milk
3 cup(s) oatmeal, uncooked
1/2 cup(s) peanut butter, crunchy
1 teaspoon(s) vanilla extract

Steps:

  • In sauce pan melt margarine. Add sugar, cocoa, and milk. Stir over medium high heat until it drops a soft ball. Do not over cook this or cookies will crystalize. Undercooking will make the cookies runny.
  • Remove from heat and add rest of ingredients. Spoon onto cookie sheet covered with wax paper, rice paper, or silpat. Refrigerate.
  • Note: Do not use quick oatmeal. It makes the cookies mushy. Refrigerate while still warm to avoid crystallization of chocolate. This cookie is not for the faint of heart. The chocolate is easy to under or over cook.
  • Dropping a soft ball: have a glass of cold water handy while you stir the chocolate mixture. As it gets close to being done, begin drizzling small amounts of chocolate into the glass. As soon as the chocolate begins to ball up as it sinks in the water you have reached soft ball or soft crack. Take the pot off the heat immediately.

Shape dough into two 8-in. x 2-in. rolls; wrap in waxed paper and freeze. , To use frozen dough: Unwrap and let stand at room temperature for about 10 minutes. Cut into 1/4-in. slices.
