This Chocolate Mousse Tofu Pie is a creamy, decadent pie that packs in loads of chocolate flavor without the dairy or excess fat!

6 graham crackers
½ cup medjool dates (pit removed)
2 Tbsp softened unsalted butter (vegan or traditional)
1 14-oz package silken tofu (400 g, drained)
2 Tbsp brown sugar
1 Tbsp unsweetened cocoa powder
1 tsp vanilla extract
1 ½ cups dark chocolate (chips or chunks)

Steps:

  • Crust: Blitz graham crackers, halved dates, and butter in a food processor until evenly mixed and crumbly. Lightly grease an 8 or 9 inch pie pan*, then press crust mixture into the bottom and up the sides.
  • Filling: Wipe clean the food processor then blitz tofu, cocoa powder, sweetener, and vanilla until smooth.
  • Melt Chocolate: Melt chocolate using a double boiler. If you do not have one, place chocolate in a small saucepan. In a large saucepan, bring water to a boil. Hold small saucepan over boiling water for about 30 seconds, stirring constantly, until chocolate has melted.
  • Chocolate Explosion: With food processor running, slowly pour melted chocolate into tofu mixture.
  • Refrigerate: Pour filling into crust and even out the top with a spoon. Cover and place in fridge for 2 to 3 hours, until firm. Serve with whipped cream and fresh berries.

10 ounces semi-sweet chocolate chips (See Note 1)
2 (10 1/2 ounce) packages silken tofu or 2 (10 1/2 ounce) packages silken firm tofu (See Note 2)
3 tablespoons maple syrup (or other liquid sweetener of your choice; can use less, to taste)

Steps:

  • Note 1: vegans: use barley-malt-sweetened nondairy chocolate chips or use a really good vegan chocolate bar (like Rapunzel Organic Bittersweet) instead of some or all of the chips.
  • Note 2: I use the Mori Nu brand of tofu for this (since it's from their box), but you can use any brand, just make sure it is the"silken" type and not regular.
  • Melt choc chips in a double boiler over low heat or in microwave (if you know what you're doing).
  • Put tofu, sweetener, and melted chocolate into a blender and process until very smooth.
  • Pour into a serving bowl or bowls and refrigerate, covered, for at least a couple of hours.
  • Cover this well, because it will pick up EVERY odor in your refrigerator otherwise.

13 ounces semisweet chocolate chips
1/3 cup coffee liqueur
1 teaspoon vanilla extract
1 pound silken tofu, drained
1 tablespoon honey
1 (9-inch) prepared chocolate wafer crust, recipe follows
6 1/2 ounces chocolate wafer cookies
1 tablespoon sugar
3 ounces unsalted butter, melted and slightly cooled

Steps:

  • Place enough water in the bottom of a 4-quart saucepan to come 1 inch up the sides. Bring to a simmer over medium heat.
  • Melt the chocolate chips with the liqueur and vanilla in a medium metal bowl set over the simmering water, stirring often with a rubber or silicone spatula. Combine the tofu, chocolate mixture and honey in a blender or food processor and spin until smooth, about 1 minute. Pour the filling into the crust and refrigerate for 2 hours, or until the filling sets firm.
  • Preheat the oven to 350 degrees F.
  • Spin the cookies and sugar in a food processor until fine crumbs. Then drizzle in the butter, pulsing to combine. Press this mixture firmly and evenly into the bottom, up the sides and just over the lip of a 9-inch metal pie pan.
  • Bake on the middle rack of the oven until crust is set and appears dry, 18 to 20 minutes. Remove from the oven and cool completely, about 1 hour.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Blend tofu with an electric mixer or in a food processor until smooth. Blend in cocoa, sugar, vanilla and vinegar. Pour into prepared crust.

This is just awesome, and a great way to get some soy in your diet (kids love this too!). And it does not taste like tofu at all. I've listed a standard graham cracker crust, however I've also made it with a crust I made from crushed cholate wafers, butter and slivered almonds, if anyone wants instructions for that as well, just let me know!. By the way - cooking time is actually the time it takes to chill.

16 ounces silken tofu (please see note at bottom of instructions)
12 ounces semisweet chocolate
1 teaspoon vanilla or 1 teaspoon almond extract
1 graham cracker crust (or what ever type crumb crust you prefer)
whipped cream, if desired (to garnish) (optional)

Steps:

  • Melt chocolate in microwave, or in double boiler. I use the microwave, it's just easier.
  • Place tofu in blender, and blend til smooth.
  • Add chocolate, and extract. Pulse blender til mixed.
  • Pour into pie crust and chill about an hour.
  • *Note: I couldn't remember the exact weight of the tofu package. You'll find silken tofu in the veggie section, next to where they have won ton wrappers - whatever size the silken package is, that's what I buy - and I've only ever seen one size. They have a lite version, but I've never tried that, but would probably work. Also, if you want a more intense chocolate flavor, just add a lil more chocolate.

Pastry for single-crust pie (9 inches)
2 packages (12.3 ounces each) silken firm tofu
1/4 cup honey
2 teaspoons vanilla extract
1/2 teaspoon almond extract
2-1/2 cups semisweet chocolate chips, melted
Whipped cream and sliced fresh strawberries, optional

Steps:

  • Roll out pastry to fit a 9-in. pie plate. Transfer pastry to pie plate. Trim pastry to 1/2 in. beyond edge of plate; flute edges. Line unpricked pastry with a double thickness of heavy-duty foil. Fill with dried beans, uncooked rice or pie weights., Bake at 450° for 8 minutes. Remove foil and weights; bake 5-7 minutes longer or until golden brown. Cool on a wire rack., In a blender or food processor, combine the tofu, honey and extracts. Cover and process until smooth.
