Steps:
- Preheat the oven to 350 degrees F.
- Using a mixer, cream the butter and sugar until fluffy, scraping the sides once. Add the eggs, one at a time, mixing after each addition. Mix in the vanilla.
- Sift together the flour, cocoa, baking soda and salt, and then add in batches to the mixer, mixing until just combined after each addition. Gently blend in the white chocolate and chocolate chips.
- Using a cookie scoop, add 1 tablespoon portions to a baking sheet. Bake until the cookies are done but still soft and chewy, about 8 minutes.
- Let cool on a baking rack. Yummy!
CHOCOLATE WHITE CHOCOLATE CHUNK COOKIES

- In a medium bowl, whisk together flour, cocoa, baking soda, and salt. Set aside.
- In a large bowl with a handheld mixer or the bowl of a stand mixer fitted with the paddle attachment, cream the butter and sugar on medium-high speed until light and fluffy (approximately 2-3 minutes). Turn the mixer speed down to medium, add the egg and vanilla, and beat again until combined.
- With the mixer on low, slowly add flour mixture and beat until just combined. Add the white chocolate chunks and continue mixing until evenly dispersed. Cover dough and refrigerate for at least 1 hour and up to 3 days.
- When you are ready to bake the cookies, line a large baking sheet with parchment paper or a silicone baking mat. Set aside. Preheat oven to 350ºF.
- Using a cookie scoop (I use this #50 cookie scoop for all of my standard size cookies), roll the dough into balls and place on prepared baking sheet. Bake for 8-10 minutes, or until edges are set and center is no longer shiny. Remove from oven and allow to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely. Cookies stay fresh covered at room temperature up to 1 week. Baked cookies can be frozen, up to 2 months. Rolled cookie dough can be frozen, up to 3 months. Place on baking sheet and add 1-2 minutes to baking time.

These are a bit more elegant than commercial cookies, because I use the best chocolate I can find. Instead of little chips, the chocolate is cut into chunks, so there's more of it in each cookie. If you want cookies to be thin and crunchy, halfway through the baking pick up the cookie sheet and bang it down once on the oven rack, then return it to the oven. Always begin with cold butter when making cookies. Cutting the butter into 1/2 inch pieces will allow you to beat it in until it is soft and fluffy without it becoming too warm. Bake cookies on the lower rack of your oven.

- Cut the chocolate into 1/4 to 1/2 inch pieces, using a serrated knife.
- Sift together the flour, salt and soda.
- In the bowl of a mixer fitted with the paddle attachment, or using a hand mixer, cream the butter until fluffy and pale yellow, about 2 minutes.
- Scrape down the sides of the bowl and the beater.
- Add the sugars and continue to beat until smooth, 1 to 2 minutes.

- Add the chocolate chunks and stir to mix them inches.
- Place two pieces of parchment paper or wax paper on your work surface.

- Roll them up in the parchment, wrap the parchment in foil and refrigerate them for at least 2 hours or for as long as a week.
- To bake, preheat the oven to 350*F with the rack on the lower setting.
- Line baking sheets with parchment.
- Cut the logs, using a serrated knife into slices 1/4 to 1/3 of an inch thick.
- Place on cookie sheets 1 inch apart.
- Bake for 10 to 12 minutes, reversing the pans front to back halfway through the baking time.
- Cool on racks and store airtight.
