Poaching salmon in salt, pepper, and lemon juice gives it a distinctive flavor.

5 whole black peppercorns
Coarse salt and pepper
4 skinless salmon fillets (1 1/2 pounds total; 1 inch thick)
1 teaspoon grated lemon zest plus 2 tablespoons juice
1/4 cup extra-virgin olive oil
2 teaspoons grainy mustard
1 bunch watercress, trimmed
2 large peaches, thinly sliced
1 cup fresh basil leaves

Steps:

  • Poach salmon: In a large straight-sided skillet, combine 6 cups water, lemon slices, peppercorns, and 1 1/2 teaspoons salt; bring to a simmer over medium-high, then reduce heat to a low simmer. Add salmon (water should just cover fish), cover, and cook until opaque throughout, 5 to 8 minutes. With a wide, slotted spatula, transfer salmon to a plate.
  • To serve: Whisk together lemon zest and juice, oil, and mustard; season with salt and pepper. Divide watercress, peaches, and basil among 4 plates, top with salmon, and drizzle with dressing. Season with salt and pepper.

1 cup dry white wine
1 1/2 cups water
2 lemon slices
1 small onion, peeled and quartered
5 sprigs parsley
1 bay leaf
6 peppercorns
1 (3 pound) salmon fillet, skin on, scaled and pin bones removed
Salt and freshly ground pepper
6 tablespoons olive oil
2 tablespoons lemon juice
2 tablespoons orange juice
2 tablespoons lime juice
1 tablespoon finely chopped dill
Salt and freshly ground black pepper
6 cups watercress
Fresh dill

Steps:

  • To make the salmon: Combine all ingredients except the salmon in a medium skillet or saucepan. Bring to a boil then reduce to a simmer. Season the salmon with salt and pepper on both sides, add to simmering liquid, and cover. Cook for 5 to 8 minutes or until just done.
  • To make the vinaigrette: Whisk together the olive oil and citrus juices, add the dill, and season with salt and pepper, to taste.
  • Toss the watercress with 3 tablespoons of the vinaigrette and season with salt and pepper, to taste. Arrange the watercress on a large platter and place the salmon in the center. Drizzle with additional vinaigrette and garnish with dill.

Four 4- to 6-ounce fillets salmon
Sea salt and white pepper
2 lemons, 1 halved and 1 cut into wedges
1 bottle dry white wine, such as pinot grigio
Fresh parsley, for garnish

Steps:

  • Drizzle the olive oil over the salmon fillets and season with some sea salt and white pepper. Set aside.
  • Fill a high-sided large skillet one-third of the way up with water. Add the wine and lemon halves. Bring to a low simmer, add the salmon and let cook until firm to the touch, 5 to 7 minutes for medium. For well-done salmon, cook for 10 minutes.
  • Serve garnished with the lemon wedges and parsley.

2-3 large fresh basil leaves (or to taste)
Freshly ground black pepper
Freshly squeezed lemon juice
2 slices Allinson Wholemeal Batch bread
A large handful of watercress leaves, woody stalks removed
6-8 cucumber ribbons (use a vegetable peeler to peel down the length of a whole cucumber to create the cucumber ribbons.)
85g poached salmon, flaked
2-3 teaspoons of ready prepared mayonnaise (or use your own favourite recipe)

Steps:

  • Finely chop the basil leaves and stir into the mayonnaise. Season to taste with freshly ground black pepper and freshly squeezed lemon juice. Chill until ready to use.
  • Spread a little basil mayonnaise over each slice of bread. Arrange the watercress, cucumber ribbons and flaked salmon over the top of one piece of bread and sandwich with the remaining piece. Press together gently and cut in half to serve.

1 cup dry white wine

1/2 cup shelled fresh (or frozen, thawed) peas
1/2 cup heavy cream

Steps:

  • Place salmon, skin side down, in a large high-sided skillet. Add wine, 2 tablespoons salt, and cold water to cover salmon by 1/2". Cover pan; bring liquid to a simmer over medium heat. Reduce heat to medium-low, uncover, and gently poach salmon until just cooked through and barely opaque in the center, about 6 minutes, depending on thickness. Transfer salmon and 2 tablespoons poaching liquid to a plate; tent loosely with foil.
  • Meanwhile, melt butter in a medium skillet over medium heat. Add mushrooms and cook, stirring occasionally, until they begin to soften, about 3 minutes. Add 1/2 cup salmon poaching liquid and peas and simmer until peas begin to soften, 2-3 minutes. Add cream and bring sauce to a simmer. Cook until slightly thickened, about 5 minutes. Season with salt and pepper.
  • Using a spatula, transfer salmon, skin side up, to paper towels. Gently peel off and discard skin. Invert onto serving plates and spoon sauce over. Garnish with chives.
