CHUNKY CHICKEN SAUCE FOR PASTA FOR 2



Chunky Chicken Sauce for Pasta for 2 image

This is a quick easy recipe start to finish 20 minutes using left over cooked chicken. I searched 15 pages of Zaar recipes but could not find what I wanted so I made this one up. If you like a thinner sauce add 1/2 cup water.

Number Of Ingredients 7

2 1/2 cups cooked chicken, cut into 3/4-inch chunks (use white dark chicken meat)
1 (14 ounce) can chunky italian tomatoes with herbs
3 garlic cloves, chopped
1 small onions, chopped or 3 tablespoons dried onion flakes
1 teaspoon chili flakes (use more or less depending how hot you like it) or 3 tablespoons of your favorite hot sauce (the amount is up to your taste buds)
3 tablespoons parmesan cheese, grated
4 cups cooked pasta, your choice, cooked according to the instructions on the package

Steps:

  • Put all the ingredients in a pot , except the cheese & pasta, bring to a simmer.
  • Pour over hot cooked pasta.
  • Top with Parmesan and serve (I like to place the ready plate under the broiler for 1 minute to brown the parmesan but this is optional).
  • Enjoy.

1 tablespoon olive oil
1 lb skinless chicken breast (1/2 inch chunks or smaller)
1 cup diced onion
1 cup diced bell pepper
2 teaspoons minced garlic or 2 fresh garlic cloves
1/2 teaspoon rosemary
1/4 teaspoon basil
1/4 teaspoon oregano
1/4 teaspoon thyme
1/8 teaspoon marjoram (Note -- 2 teaspoon of Italian Seasoning can be used to replace the rosemary, basil, oregano, thyme, )
1/2 teaspoon salt
2 (15 ounce) cans diced tomatoes
8 ounces sliced mushrooms
1 (29 ounce) can tomato sauce

Steps:

  • Add 1 tablespoon of olive oil to a 2 quart saucepan. Place on medium high burner until hot, then add chicken. Cook on medium high until brown.
  • Reduce heat to medium low, Add onion, pepper, garlic, rosemary, basil, oregano, thyme, marjoram, and salt. Cook until onions and peppers are tender, stirring as needed.
  • Stir in diced tomatoes and mushrooms. Cover and let simmer for 20 minutes, stirring occasionally.
  • Stir in tomato sauce. Allow to simmer 10 minutes.
  • Serve over your favorite pasta.

6 boneless skinless chicken thighs (about 1-1/2 pounds)
2 medium zucchini, cut into 1-inch slices
1 medium green pepper, cut into 1-inch pieces
1 large sweet onion, coarsely chopped
1/2 teaspoon dried oregano
1 jar (24 ounces) garden-style spaghetti sauce
Hot cooked spaghetti
Optional: Sliced ripe olives and shredded Parmesan cheese

Steps:

  • Place chicken and vegetables in a 3-qt. slow cooker; sprinkle with oregano. Pour sauce over top. Cook, covered, on low 4-5 hours or until chicken is tender., Remove chicken; break up slightly with 2 forks. Return to slow cooker. Serve with spaghetti. If desired, top with olives and cheese. Freeze Option: Place the first 6 ingredients in a freezer container and freeze. To use, place container in refrigerator 48 hours or until contents are completely thawed. Cook and serve as directed.

1 pound boneless skinless chicken thighs, cut into 1-inch pieces
1 cup sliced celery
1/2 cup chopped onion
2 tablespoons canola oil
6 cups chicken broth
1-1/2 cups sliced carrots
1 teaspoon dried thyme
1/2 teaspoon salt, optional
1/4 teaspoon pepper
1/2 cup uncooked macaroni
1-1/2 cups frozen peas

Steps:

  • In a large saucepan, cook the chicken, celery and onion in oil until chicken is no longer pink. , Add the broth, carrots, thyme, salt if desired and pepper; bring to a boil. Reduce heat; cover and simmer for 45 minutes or until vegetables are tender. , Stir in macaroni and peas. Cover and simmer for 15 minutes or until the macaroni is tender.

8 chicken breast tenders (any type of chicken breast will do)
2 1/2 cups water
2 chicken bouillon cubes
8 scallions (green onions)
1 (10 1/2 ounce) can cream of chicken soup
1 (10 1/2 ounce) can cream of celery soup
1 (10 1/2 ounce) can milk (use soup can)

Steps:

  • Dissolve bouillon cubes in boiling water.
  • Then put bouillon & chicken in slow cooker.
  • Add chopped scallions.
  • Heat soups & milk in separate pot & pour over chicken.
  • Cook in covered slow cooker (on high) for 2 hours or until chicken is tender.
  • Serve over rice or pasta.
  • Enjoy!
