1 cup granulated sugar
2 eggs
1 teaspoon vanilla
1/3 cup unsweetened cocoa powder
½ cup all-purpose flour
¼ teaspoon baking powder
¼ teaspoon salt
½ cup chocolate chips
½ cup chopped walnuts or pecans
½ cup peanut butter chips

Steps:

  • Preheat oven to 350 F.
  • Cream together butter, sugar and, vanilla until well mixed.
  • Sift in the cocoa powder and flour, baking powder and salt. Then fold in chocolate chips, peanut butter chips and nuts.
  • Spray a 8x8 baking pan with non-stick cooking spray, line it with parchment paper and then lightly spray the paper.
  • Add brownie batter to the pan and spread evenly.
  • Bake for 25-30 minutes until set.
  • Allow to cool, cut into squares, and then serve.

2 teaspoons instant espresso powder, optional
2/3 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 package (11-1/2 ounces) semisweet chocolate chunks

Steps:

  • Preheat oven to 350°. In a large saucepan, melt chocolate chips and butter over low heat, stirring until smooth. Remove from the heat; cool until mixture is warm., In a small bowl, whisk the eggs, sugar, vanilla and, if desired, espresso powder until blended. Whisk into chocolate mixture. In another bowl, mix the flour, baking powder and salt; add to chocolate mixture, mixing well. Fold in chocolate chunks; let stand until mixture thickens slightly, about 10 minutes., Drop by 1/4 cupfuls 3 in. apart onto parchment-lined baking sheets. Bake until set, 12-14 minutes. 1 (19 7/8 ounce) box fudge brownie mix
1 large egg
2 tablespoons water
1/3 cup vegetable oil
1 cup chocolate chips (or other kind of chip if you prefer)

Steps:

  • Heat oven to 375°, line cookie sheet with parchment paper, or grease cookie sheet.
  • Mix the brownie mix, egg, water and oil in a large bowl.
  • Stir until blended, fold in chips.

1 teaspoon pure vanilla extract

Steps:

  • Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Line 2 baking sheets with parchment paper. Whisk the flour, baking powder and salt in a medium bowl; set aside.
  • Combine 6 ounces chopped chocolate and the butter in a medium microwave-safe bowl. Microwave in 45-second intervals, stirring after each, until melted, about 2 minutes. Let cool slightly.
  • Meanwhile, combine the eggs and sugar in a large bowl and beat with a mixer on medium-high speed until very thick and pale, about 5 minutes. Stir the espresso powder and vanilla in a small bowl, then beat into the egg mixture.
  • Beat the warm chocolate mixture into the egg mixture. Reduce the mixer speed to low and beat in the flour mixture until combined. Beat in the remaining 2 ounces chopped chocolate; finish mixing with a rubber spatula (the dough will be soft).

  • Preheat oven to 350 degrees F. Line a baking sheet with parchment.
  • In a medium bowl, whisk the flour, cocoa, salt and baking powder together.
  • In another (large) bowl, beat butter and sugar with electric mixer until fluffy. Add eggs, one at a time, scraping down sides of bowl. Mix in vanilla.
