1 ounce honey-roasted peanuts
4 cloves garlic, minced
2 teaspoons minced fresh ginger
¼ cup sliced green onions
1 tablespoon low-sodium soy sauce
2 teaspoons rice vinegar
1 teaspoon toasted sesame oil
1 cup fresh cilantro, chopped
4 cups shredded napa cabbage

Steps:

  • Heat canola oil in a heavy 10-inch skillet over high heat. Add chicken; cook and stir for 2 minutes. Stir in peanuts, garlic, and ginger. Cook until chicken is no longer pink, about 3 minutes.
  • Add green onions, soy sauce, rice vinegar, and sesame oil. Cook and stir for 2 minutes more. Remove from heat. Stir in cilantro.
  • Spoon chicken stir-fry over cabbage to serve.

2 large onions, sliced
1/2 cup lemon juice
1/4 cup minced fresh cilantro
Hot cooked rice, optional

Steps:

  • Sprinkle chicken with salt, cumin and pepper. In a large skillet over medium heat, cook and stir the chicken in 2 tablespoons butter until no longer pink. Remove and keep warm. , In the same skillet, saute onions in remaining butter until tender and golden brown. Return chicken to the pan. Stir in lemon juice and cilantro; bring to a boil. If desired, serve with rice.

Place coleslaw mix in a large bowl; add peanut butter mixture. Toss to coat; set aside., In a large skillet, cook chicken over medium heat until no longer pink, 6-8 minutes, breaking it into crumbles; drain. Stir in coconut milk, ginger, garlic powder, remaining 1/4 cup cilantro and 2 tablespoons teriyaki sauce. 1 pound skinless, boneless chicken breast halves - cut into bite-size pieces
1 medium red bell pepper, chopped
1 ½ cups chicken broth
2 teaspoons soy sauce

1 clove garlic, minced
¼ teaspoon ground cayenne pepper
1 (1 inch) piece fresh ginger root, peeled and chopped
1 tablespoon cornstarch

1/2 cup coarsely chopped fresh cilantro
1/2 cup PLANTERS Dry Roasted Peanuts
1 whole serrano chile, stem removed
1 onion, chopped
4 small boneless skinless chicken breasts (1 lb.)
1/2 lb. mushrooms, sliced
2 cups hot cooked long-grain white rice
1/4 cup BREAKSTONE'S or KNUDSEN Sour Cream

Steps:

  • Blend broth, 1/4 cup dressing, cilantro, nuts and chile in blender until smooth.
  • Heat remaining dressing in large nonstick skillet on medium-high heat. Add onions; cook 5 min., stirring occasionally. Add chicken; cook 2 min. on each side or until browned on both sides. Stir in mushrooms; cook 5 min. or until liquid is evaporated, stirring occasionally.

4 boneless skinless chicken breast halves (2 lb. total)
1/4 cup lime juice
1/2 cup fresh cilantro, chopped
6 garlic cloves, chopped
1 tablespoon honey
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Pound the chicken breasts to an even thickness (about 1/2 in.) and place in a shallow baking pan.
  • In a small bowl, mix lime juice, cilantro, garlic, honey, olive oil, salt, and pepper. Pour over chicken and turn pieces to coat evenly. Cover and chill at least 30 minutes or overnight.
  • Lay chicken on a grill over medium heat (you can hold you hand over the surface only 4 to 5 seconds) and cook, turning once, until no longer pink in the center, 4 to 6 minutes per side.

1 cup vegetable oil
3/4 cup soy sauce
3/4 cup white vinegar
1 tablespoon sesame oil
2/3 cup creamy peanut butter
3/4 cup sugar
1 1/2 teaspoons cayenne pepper
1 bunch green onion, Minced
1/2 cup cilantro, Minced
4 cups cooked white rice

Steps:

  • Place chicken breasts in boiling water, lower temperature and simmer for 20 minutes. When finished cooking, cut breasts into 1/2 inch cubes.
  • Combine all other ingredients except rice in medium saucepan. bring to a boil over medium heat stirring regularly. Once boiling, remove from heat.
  • To Serve, place cubed chicken on rice then pour sauce over the top.
