KITCHENAID SIXTY-MINUTE ROLLS
You really can make these rolls in an hour. I have used this dough to make quick cinnamon rolls. These directions are for a Kitchen-Aid mixer.

- Combine 3 1/2 cups flour, sugar, salt and undissoloved yeast in bowl.
- Attach bowl and dough hook. Turn to speed 2 and mix for 1 minute.
- Combine milk, water and margarine in a saucepan. Heat over low heat, until liquids are very warm (120 to 130). Margarine does not need to melt.
- Turn to speed 2 and gradually add liquid to flour mixture, about 30 seconds. Mix 1 minute longer. Continue on speed 2, adding remaining flour, 1/2 cup at a time, as needed. Mix until dough clings to hook, about 5 minutes.
- Knead dough on speed 2 for 7-10 minutes longer, or until dough is smooth and elastic. Stop.
- Place in greased bowl, turning to grease top. Cover, let rise in a warm place 15 minutes.
- Turn dough out onto floured board. Divide in half and shape as desired. Cover; let rise in slightly warm oven (about 90 degrees) for 15 minutes or until doubled in bulk [usually 15 minutes works just fine!].
- Bake at 425, for 12 minutes, or until nice and brown. Remove from baking sheets and cool on wire racks.
- I usually make balls. But for something fancy you can make one of the following:.
- Curlicues: Divide dough in half and roll each half to 12x9 inch rectangle. Cut 12 equal strips about 1 inch wide. Hold one end of strip firmly and wind tightly to form a coil, tucking ends underneath. Place on greased baking sheets about 2 inches apart.
- Cloverleafs: Divide dough into 24 equal pieces. Form each piece into a ball and place in greased muffin pan. With scissors, cut each ball in half, then quarters, cutting through to almost bottom of rolls.

- Pour warm milk inside the KitchenAid Mixer bowl then add dry yeast and 4 teaspoons of sugar. Whisk, cover it with a kitchen towel and let it rest for about 10 minutes. After 10 minutes, the mixture should be bubbly and puffed up. With the hook attachment on, start your mixer on low speed. Add melted margarine, eggs and remaining sugar. Start adding the flour and salt, 1 cup at a time until dough does not stick to bottom or sides of bowl. Work on dough on the slow speed for about 10 minutes. Cover the dough with a plastic wrap right on the top of the dough (this will prevent the dough from getting dry and forming a crust or cover in greased bowl. Let it rise for about 1 hour or until it doubles size in a warm place. Sprinkle a little flour over a clean surface and pour the dough over it. Stretch the dough using a rolling pin. Shape the dough into a 16×21 inches rectangle. Spread the 1/3 cup of soften butter all over the dough. Mix the brown sugar and cinnamon and sprinkle this mixture all over the dough (the butter should hold the sugar mixture in place). Roll the dough VERY TIGHTLY, long way. Cut the dough into 12 pieces, Lightly grease a 9×13 inches pan and place the cinnamon rolls on it, cover it and let it rise for about 30 minutes or until doubles size in a warm place. Preheat your oven to 400F. Bake the cinnamon rolls for about 15 minutes until golden brown. While rolls are in the oven, make the frosting. In KitchenAid Mixer bowl add soften cream cheese and butter and with the whipping attachment on start whipping it until it's combines. Add Vanilla extract and start adding the powdered sugar. Add a little bit of water, just enough so it can mix it. Once rolls come out of the oven, spread the frosting while rolls are still warm.

- MAKE DOUGH:.
- Combine milk, sugar, salt, and butter in small saucepan. heat over low heat until butter melts and sugar dissolves.
- Cool to lukewarm.
- Dissolve yeast in warm water in warmed bowl.
- Add lukewarm milk mixture, eggs, and 5 cups flour.
- With dough hook mix 2 minutes at speed 2.
- Continuing on speed 2, add remaining flour, 1/2 cup at a time, until dough clings to hook and cleans sides of bowl, about 2 minutes.
- Knead on speed 2 for 2 more minutes.
- Place in a greased bowl, turning to grease top.
- Cover; let rise in warm place, free from draft, until doubled in bulk, about 1 hour.
- Punch dough down and shape as desired for rolls or coffee cakes.
- FILLING MIXTURE:.
- Place filling ingredients in bowl. Mix with flat beater at speed 2 for 1 minute.
- Roll dough to a 10 x 30 x 1/4 inch rectangle.
- Spread mixture evenly on dough. Roll dough tightly from long side to form 30-inch roll, pinching seam together. Cut into twenty one 1 1/2-inch slices.
- Place 7 rolls each in 3 greased 8 x 1 1/2-inch cake pans. Cover; let rise in warm place, free from draft, until doubled in bulk, about 1 hour.
- Bake at 350 F for about 20 minutes. Remove from pans immediately. Spread caramel glaze over warm rolls.
- CARAMEL GLAZE:.
- Combine milk and brown sugar in small saucepan. Over medium heat, cook, stirring constantly, until mixture begins to boil.
- Place milk mixture, powdered sugar, and vanilla in bowl. Beat with flat beater at speed 4 until creamy, about 2 minutes.

- Pour the warm milk in the bowl of a stand mixer and sprinkle the yeast overtop.
- Add the eggs, butter, salt and sugar.
- Add the flour and mix using the beater blade just until the ingredients are barely combined. Allow the mixture to rest for 5 minutes so the flour has time to soak up the liquids.
- Scrape the dough off the beater blade and remove it. Attach the dough hook.
- Beat the dough on medium speed for 5-7 minutes or until the dough is elastic and smooth. **The dough will be tacky and will still be sticking to the sides of the bowl. That's ok! Don't be tempted to add more flour at this point.
- Spray a large bowl with cooking spray.
- Use a rubber spatula to remove the dough from the mixer bowl and place it in the greased large bowl.
- Cover the bowl with a towel or wax paper.
- Set the bowl in a warm place and allow the dough to rise until double. I like to turn on the oven to the lowest setting for 1-2 minutes. Then turn off the oven and place the dough to rise in there. It normally takes about 30 minutes for the dough to rise. Do not allow the dough to rise too much or your cinnamon rolls will be airy.
- While the dough is rising, prepare the cinnamon filling. In a medium bowl, combine the soft butter, brown sugar and cinnamon, mixing until well combined. Set aside.
- Sprinkle a pastry mat generously with flour. Turn out the dough onto the pastry mat and sprinkle the top of the dough with additional flour.
- Flour a rolling pin and roll the dough to about a very large rectangle (about 26"x18" if you can get it that big).
- Use a rubber spatula to smooth the cinnamon filling over the whole dough rectangle.
- Use a pizza cutter to cut the rectangle in half down the middle to make two squares.
- Starting with one of the halves, on the long end, roll the dough up tightly jelly roll style.
- Cut the rolled part into 6 slices.
- With the remaining rolled out dough, use a pizza cutter to cut 6 long strips of dough. The strips should be about the same width as the rolled dough that you have already made.
- Place one of the rolls on its side one of the strips you cut. Roll the strip around the outside of the rolls again to make the roll twice as big. Repeat with the remaining 5 rolls. You should end up with 6 very large rolls.
- Place the rolls in a greased 10x15" baking pan.*
- Cover the pan and allow the rolls to rise for 20 minutes or until nearly double.
- Warm the heavy cream until the chill is off. Don't make it hot...you just don't want it cold. It should be warm to the touch.
- Once the rolls have risen, pour the heavy cream over the top of the rolls, allowing it to soak down in and around the rolls.
- Preheat the oven to 350 degrees.
- Bake at 350 degrees for about 28 minutes, until the rolls are lightly golden brown and the center rolls are cooked through. If the rolls are getting too browned on top, cover loosely with a piece of foil.
- While the rolls are cooling, prepare the cream cheese frosting.
- In a large bowl, combine the softened cream cheese and butter using a hand mixer. Blend well.
- Add in your favorite extract and the powdered sugar. Beat until combined.
- Spread the frosting over the cooled rolls.
- Store in an airtight container.
