Rabbit meat has the tendency to get dry when smoked, so you'll want to plan ahead and not skip the brining process. First bite in and you'll see that it was worth the wait.

¾ cup water
½ cup apple cider vinegar
¼ cup dry white wine
1 tablespoon kosher salt
1 teaspoon fresh ground black pepper
1 teaspoon onion powder
1 teaspoon garlic powder
1 (3 pound) whole rabbit
1 tablespoon kosher salt
½ tablespoon freshly ground black pepper
½ teaspoon paprika
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon dried oregano
½ teaspoon dried parsley flakes

Steps:

  • Whisk water, apple cider vinegar, wine, salt, pepper, onion powder, and garlic powder together for the brine. Place rabbit in a 1-gallon plastic resealable bag. Pour brine over the rabbit and seal. Lay flat and refrigerate for 24 hours.
  • Combine salt, pepper, paprika, onion powder, garlic powder, oregano, and parsley flakes in a small bowl. Stir until evenly combined.
  • Remove rabbit from brine and discard brine. Rinse rabbit thoroughly and pat dry with paper towels. Spread the rub over all surfaces of the rabbit. Cover with plastic wrap and refrigerate for 1 hour.
  • Remove rabbit from refrigerator 1 hour before placing on the smoker to allow meat to come to room temperature.
  • Preheat an electric smoker to 250 degrees F (120 degrees C).
  • Smoke rabbit for 2 1/2 hours. Wrap in aluminum foil and smoke until tender, about 1 hour more.

CITRUS HERB BRINED CHICKEN

Very yummy. Serve with vegetables, side dish of choice or salad.

2 whole chickens, trussed
1 c (or 6 oz by weight) kosher salt
3 c hot water
4 c ice cubes
2 lemons, thickly sliced
2 limes, thickly sliced
1/4 c fresh rosemary, crushed by hand
1/4 c fresh thyme, crushed by hand
1/4-1/2 c vegetable oil
salt to taste
black pepper, freshly ground, to taste

Steps:

  • 1. Dissolve the kosher salt in the hot water; then add the ice and cold water to chill mixture. Add the lemons, limes and fresh herbs to the brine. Make sure to put it in a container large enough to hold two chickens.
  • 2. Add the chickens and put the container in the refrigerator. The chickens should sit in the brine for at least 8 hours but overnight works best.
  • 3. After the brine step is complete, preheat the oven to 350 degrees F, remove the chickens from the brine and discard the brine. Dry the chickens with a disposable towel and lightly oil skin. season with salt and pepper.
  • 4. Place the chickens in a roasting pan elevated on a rack.
  • 5. Roast for 20 minutes per pound based on the weight of the chickens, plus 15 minutes, or until the thermometer inserted in the thickest part of the chicken but not touching the bone reads 170 degrees.

This is a quick-and-easy turkey brine recipe that is full of citrus, brown sugar, garlic, and juniper, plus a kick from rum and limeade.

32 ounces vegetable broth
2 oranges, sliced
1 onion, chopped into large pieces
1 (6 ounce) can frozen limeade concentrate
1 (6 ounce) can frozen orange juice concentrate
½ cup brown sugar
½ cup rum
½ cup coarse salt
2 tablespoons crushed garlic
1 tablespoon ground black pepper
1 tablespoon ground thyme
1 tablespoon dried parsley
1 tablespoon juniper berries
2 cinnamon sticks
3 bay leaves

Steps:

  • Combine water, broth, oranges, onion, limeade concentrate, orange juice concentrate, brown sugar, rum, salt, garlic, black pepper, thyme, parsley, juniper berries, cinnamon sticks, and bay leaves in a large pot and bring to a boil. Reduce temperature and simmer for 10 minutes. Remove from heat and cover pot. Allow to cool completely, at least 1 hour.

1 lemon, cut into wedges
1 orange, cut into wedges
1 medium onion, cut into wedges
3 cloves garlic
4 bay leaves
1 tablespoon dried thyme
1 tablespoon ground black pepper
1 ½ gallons cold water

Steps:

  • Rub salt onto your turkey, and place remaining salt, lemons, oranges, onion, garlic, bay leaves, thyme and pepper into a large pot. Place the turkey in the pot, and fill with water. Refrigerate overnight. Discard brine after removing turkey.

  • Stir salt, sugar, vinegar, half the rosemary and thyme and 1 litre water in a saucepan over medium heat to dissolve sugar. Halve oranges and 1 lemon and squeeze juice into pan, then add the squeezed fruit with two-thirds of the garlic and bring to the simmer. Transfer to a container large enough to fit chicken, add 2.5 litres cold water and refrigerate until chilled.
  • Add chicken to brine, weight with a plate to submerge completely, then cover and refrigerate for 8-12 hours.
  • Preheat oven to 220C. Drain chicken from brine, rinse under cold running water and pat dry with absorbent paper. Pierce remaining lemon all over with a skewer and place in cavity with remaining rosemary, thyme and garlic. Tuck in wings and loosely truss legs, place in a roasting pan lined with baking paper, rub all over with softened butter, season to taste and roast until juices run clear when thigh is pierced with a skewer (45 minutes-1 hour; cover loosely with foil if chicken is darkening too much). Set aside to rest for 15 minutes. Remove chicken from pan and set aside.
  • Bring pan juices to the simmer over medium-high heat, scraping loose caramelised bits from base of pan, add wine and simmer until reduced by half (4-5 minutes), then add stock and simmer until reduced by two-thirds (10-12 minutes). Gradually add chilled butter, a cube at a time, whisking to incorporate before adding more, season to taste and stir in chopped herbs. Spoon over roast chicken and serve hot with lemon wedges.
