Quick and easy, this is an excellent mid-week dish.

⅛ cup Italian-style dried bread crumbs
4 skinless, boneless chicken breasts
1 tablespoon olive oil
½ cup dry white wine
½ teaspoon ground savory
¼ teaspoon salt
1 (4.5 ounce) can sliced mushrooms
1 tablespoon lemon juice
1 tablespoon honey mustard

Steps:

  • Place breadcrumbs in a large, resealable plastic bag. Add chicken, seal bag, and shake to coat chicken with breadcrumbs.
  • Heat oil in a large, nonstick skillet over medium heat. Add chicken. Cook 3 minutes on each side, or until browned. Add wine, savory, salt, and mushrooms to the chicken. Cover, and reduce heat. Simmer for 15 minutes, or until chicken is done. Remove chicken and mushrooms with slotted spoon, and place on serving plate.
  • Add lemon juice and mustard to skillet, and stir well. Heat through. Serve sauce with chicken.

1 ¼ pounds pork loin, cut into 1 inch cubes
1 ½ cups all-purpose flour for coating
salt and pepper to taste
2 cups chicken broth
1 pinch dried thyme
1 bay leaf

Steps:

  • Mix salt, pepper and flour in a bowl. Coat pork cubes with flour mixture. Slide pork onto skewers
  • In a skillet, brown pork skewers on all sides in a small amount of vegetable oil. Drain off any excess oil.
  • Add chicken broth, thyme and bay leaf to skillet. Scrape up any brown bits. Reduce heat and simmer 1 hour or until meat is tender and sauce has thickened.

I grew up in northeast Ohio and this was my all time favorite dish when I was little...now I make it, and my family loves it too! I like to use all pork for my city chicken; however tradition is to use pork and veal combined. The grocery stores around me sell a pack of cubed pork with the wood skewers already in the pack specifically for city chicken, so you may want to look for that first. But, if you can't find that, then cubing your own pork will work fine.

2 pounds boneless pork, cut into 1 1/2-inch cubes
14 (4 inch) skewers
salt and ground black pepper to taste
seasoned salt (such as LAWRY'S®) to taste
4 eggs
3 tablespoons milk
2 cups Italian seasoned bread crumbs
2 cups water
2 cups vegetable oil for frying

Steps:

  • Thread 2 or 3 cubes of pork onto each skewer. Sprinkle each skewer on all sides with salt, black pepper, and seasoned salt, and set the skewers aside.
  • Whisk eggs and milk together in a bowl. Place the seasoned bread crumbs in another bowl. Pour 2 cups of water into a 9x13-inch baking dish with a wire rack set in the dish, and set the dish aside.
  • Preheat an oven to 350 degrees F (175 degrees C). Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Dip each skewer of pork into the egg mixture, then dip in crumbs; dip the skewers a second time into egg mixture and then crumbs. Gently lay the skewers, a few at a time, into the hot oil, and brown until the coating is crisp and golden brown, about 3 minutes per side. Set the fried skewers aside while you finish the rest. Once the skewers are all browned, set them on the wire rack in the baking dish. Cover the dish tightly with aluminum foil.
  • Carefully place the baking dish with the skewers into the preheated oven, and bake until hot and no longer pink in the center, about 20 minutes. Remove the foil, and bake 10 minutes more to dry out the crumb coating. Serve hot.

Seasoned salt, to taste
4 eggs
3 tablespoons milk
2 cups Italian seasoned bread crumbs
2 cups water
2 cups vegetable oil, for frying

Steps:

  • 14 (4-inch) skewers
  • (9x13-inch) baking dish
  • Wire rack
  • Directions
  • Thread 2 to 3 pork cubes onto the skewers. Sprinkle with salt, pepper, and seasoned salt on all sides. Set skewers aside.
  • In a shallow bowl, whisk together eggs and milk. In a separate shallow bowl, pour in the seasoned bread crumbs. Set a wire rack in the baking dish. Pour water into the dish, making sure it doesn't touch the wire rack.
  • Preheat the oven to 350 degrees Fahrenheit. Preheat vegetable oil in a deep-fryer or large, heavy-bottom saucepan to 350 degrees Fahrenheit.
  • Dip the skewers into the egg mixture, then in the bread crumbs. Repeat the step so each skewer gets coated twice.
  • Gently lay the skewers into the deep-fryer and cook until golden brown, about 3 minutes per side.
  • Place cooked skewers on the wire rack. Cover the dish with aluminum foil.

This is great for tailgating or just watching football at home! I like to make extra Buffalo chicken and dip with celery and carrots.

7 large eggs, at room temperature
¼ cup chopped onion
1 tablespoon water
1 cup chopped cooked chicken
¾ cup crumbled blue cheese
¼ cup Buffalo wing sauce (such as Frank's®), or to taste
¼ cup blue cheese salad dressing
1 stalk celery, finely chopped

Steps:

  • Place eggs in a saucepan and cover with water. Bring to a boil, remove from heat, and let eggs stand in hot water for 12 minutes.
  • While the eggs are cooking, combine onion and water in a microwave-safe bowl. Microwave on high for 1 minute 30 seconds. Remove and let cool.
  • Combine chicken, blue cheese, wing sauce, blue cheese dressing, and celery in a large mixing bowl.
  • Remove eggs from hot water, cool under cold running water, and peel. Slice in half lengthwise and separate yolks and whites.
  • Add egg yolks and cooked onion to the chicken mixture; mix until well combined. Taste and add additional wing sauce if needed. Put the mixture in a resealable bag and squeeze it to one corner. Snip off the corner and pipe the mixture into the egg whites.

This is adapted from a recipe by Sheila Lukins that I found in the Sunday newspaper supplement, "Parade". My wife is a real chicken wing "nut", and she ordered me to make them. They are REAL good! Prep time does not include marrinating time.

5 lbs chicken wings, washed,patted dry,and disjointed,tips discarded or saved for stock
2 tablespoons minced garlic
1/4 cup butter, melted
1/4 cup extra virgin olive oil
4 tablespoons Dijon mustard
4 tablespoons fresh lemon juice
3 tablespoons Worcestershire sauce
2 -3 tablespoons balsamic vinegar (optional)
1 tablespoon hot sauce, more to taste (preferably Sriracha oriental hot sauce or Cholula Mexican hot sauce)
2 teaspoons chili powder, more to taste
1 teaspoon sweet paprika
kosher salt
fresh ground black pepper
1 red onion, finely diced
4 scallions, thinly sliced diagonally
nonstick cooking spray

Steps:

  • Place wing pieces in a large Ziploc plastic bag.
  • Whisk together all remaining ingredients until thoroughly combined, and pour over the wings.
  • Squeeze air out of bag, seal, and turn and knead until chicken is well coated.
  • Refrigerate overnight, turning and kneading several times.
  • Preheat oven to 375 degrees F, and spray 2 baking sheets with nonstick spray.
  • Divide the chicken and marinade evenly between the pans, and bake for 30 minutes, turning and basting chicken and switching pans after 15 minutes.
  • Reduce temperature to 350 degrees F, turn and baste chicken again, and bake for another 30 minutes or until done, turning, basting, and switching pans after 15 minutes.
  • Transfer wings to a serving dish, and pour and scrape the sauce over them.
  • Serve hot.
  • Serves 6-8.

10 lbs meat (1/2 boneless pork, 1/2 veal or all pork, this would make for the light & dark meat of the "chicken")
6 onions
1 cup seasoned flour (recipe follows)
1 dozen egg
1 lb vegetable shortening
1 loaf bread, in crumbs
seasoned flour
2 cups flour
2 tablespoons salt
1 tablespoon celery salt
1 tablespoon pepper
2 tablespoons dry mustard
4 tablespoons paprika
2 tablespoons garlic powder
3 tablespoons msg (accent)
1 teaspoon ginger
1/2 teaspoon thyme
1/2 teaspoon sweet basil
1/2 teaspoon oregano

Steps:

  • Cut meat into cubes.
  • Cut onion into large pieces.
  • Put a layer of meat and onion on bottom of large bowl. Sprinkle with seasoned flour.
  • Repeat layers until all meat and onion is used.
  • Cover and leave overnight.
  • Put cubes of meat onto skewer. Discard onion.
  • Dip skewer in beaten egg. Roll in bread crumbs.
  • Press meat to hold its form on skewer.
  • Dip in egg and breadcrumbs again.
  • Deep fry in oil for 5 minutes or until golden brown.
  • Line a large roasting pan with foil.
  • Place skewers in layers as you would cabbage rolls.
  • Cover with foil and bake 250 degrees for about 2 1/2 hours.
  • NOTE: These freeze exceptionally well and are great for large get-togethers.

1/3 cup of your favorite hot pepper sauce (mine is Chalula.)
1/4 cup water
1 tablespoon Dijon mustard
1/2 teaspoon cayenne
1 cup breadcrumbs
1/2 cup flour
3 tablespoons olive oil
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons poultry seasoning
1 teaspoon cornstarch

1 teaspoon sugar
1 teaspoon paprika

Steps:

  • In a large bowl, make the marinade by mixing
  • together hot pepper sauce, water, mustard, and pepper.

  • In a bowl, place the breadcrumbs, flour, oil, garlic powder, onion powder, poultry seasoning, cornstarch, salt, sugar and paprika; blend until thoroughly mixed.

  • Remove the chicken from the marinade and add to the crumb mixture, one piece at a time, turning to coat.
  • Place chicken in single layer, in a shallow baking sheet.
  • Bake in 400 F oven for 15 minutes.
  • Reduce temperature to 350 and bake 20 minutes more or until chicken is fork tender.
