CLASSIC TOMATO SPAGHETTI

A great introduction to pasta for kids - loads of fun to eat, and a brilliant base for adding all kinds of other fresh ingredients.

1 bunch of fresh basil
1 medium onion
2 cloves of garlic
1 kg ripe tomatoes, or 2 x 400g tins of quality chopped tomatoes
olive oil
1 tablespoon red wine or balsamic vinegar
480 g dried wholewheat spaghetti
15 g Parmesan cheese

Steps:

  • Pick the basil leaves onto a chopping board (reserving a few baby leaves to garnish), then roughly chop the remaining leaves and finely chop the stalks.
  • Peel and finely slice the onion and garlic. If using fresh, cut the tomatoes in half, then roughly chop them or carefully open the tins of tomatoes.
  • Put a saucepan on a medium heat and add 1 tablespoon of olive oil and the onion, then cook for around 7 minutes, or until soft and lightly golden.
  • Stir in the garlic and basil stalks for a few minutes, then add the fresh or tinned tomatoes and the vinegar.
  • Season with a tiny pinch of salt and pepper, then continue cooking for around 15 minutes, stirring occasionally.
  • Stir in the chopped basil leaves, then reduce to low and leave to tick away. Meanwhile...
  • Carefully fill a large pot three-quarters of the way up with boiling water, add a tiny pinch of salt and bring back to the boil.
  • Add the spaghetti and cook according to packet instructions - you want to cook your pasta until it is al dente. This translates as 'to the tooth' and means that it should be soft enough to eat, but still have a bit of a bite and firmness to it. Use the timings on the packet instructions as a guide, but try some just before the time is up to make sure it's perfectly cooked.
  • Once the pasta is done, ladle out and reserve a cup of the cooking water and keep it to one side, then drain in a colander over the sink and tip the spaghetti back into the pot.
  • Stir the spaghetti into the sauce, adding a splash of the pasta water to loosen, if needed.
  • Serve with the reserved basil leaves sprinkled over the top and use a microplane to finely grate the Parmesan cheese, then sprinkle over.

Homemade marinara is almost as fast and tastes immeasurably better than even the best supermarket sauce - and it's made with basic pantry ingredients. All the tricks to a bright red, lively-tasting sauce, made just as it is in the south of Italy (no butter, no onions) are in this recipe. Use a skillet instead of the usual saucepan: the water evaporates quickly, so the tomatoes are just cooked through as the sauce becomes thick. 1 28-ounce can whole San Marzano tomatoes, certified D.O.P. if possible
1/4 cup extra-virgin olive oil
7 garlic cloves, peeled and slivered
Small dried whole chile, or pinch crushed red pepper flakes
1 teaspoon kosher salt
1 large fresh basil sprig, or 1/4 teaspoon dried oregano, more to taste

Steps:

  • Pour tomatoes into a large bowl and crush with your hands. Pour 1 cup water into can and slosh it around to get tomato juices. Reserve.
  • In a large skillet (do not use a deep pot) over medium heat, heat the oil. When it is hot, add garlic.
  • As soon as garlic is sizzling (do not let it brown), add the tomatoes, then the reserved tomato water. Add whole chile or red pepper flakes, oregano (if using) and salt. Stir.
  • Place basil sprig, including stem, on the surface (like a flower). Let it wilt, then submerge in sauce. Simmer sauce until thickened and oil on surface is a deep orange, about 15 minutes. (If using oregano, taste sauce after 10 minutes of simmering, adding more salt and oregano as needed.) Discard basil and chile (if using).

Here is my family spaghetti sauce recipe passed down from my grandmother in Italy - it is the best one you will ever cook - don't trust me - try it!

2 TSBP olive oil
1/2 onion (finely chopped)
4 cloves of garlic (minced)
3 28 oz. cans of Crushed Tomatoes
1 Tbsp Salt
4 Tbsp Basil
1 tsp Black pepper
1 Tbsp Sugar (optional)
1/3 cup Grated Parmesan or Romano Cheese

Steps:

  • Heat the olive oil in a 5+ qt. pot over medium heat, and add the onion.
  • Saute for 10 minutes or so, stirring often and being careful not to burn it.
  • Add the chopped or pressed garlic.
  • Heat for another one to two minutes, making sure not to burn the garlic, then add all the tomatoes, salt, black pepper, basil, and sugar. Stirring often, bring to a low boil.
  • Reduce heat to low and simmer for 2-3 hours stirring often.
  • For the first half of the simmer time, do so with the pot uncovered, then cover.
  • Add the cheese, stir in and simmer for an additional 5 minutes or so.
  • This will make the equivalent of 4-5 jars of sauce, and the cost is probably about half (and it tastes way better).

  • In a medium pan over medium heat add the olive oil, pancetta and 1/4 cup (58 grams) water, cook until the pancetta is cooked (not over cooked or crisp) and water has evaporated (approximately 10 minutes). Stirring occasionally.
  • Add the garlic, can of tomatoes (cut up the tomatoes and mash gently with a fork), then add the oregano, basil, salt, hot pepper flakes and 1/2 cup (118 grams) water. Stir to combine, place the lid on the pan, but leave a small space uncovered, continue cooking over medium heat, stirring occasionally for approximately 10 minutes, remove cover and continue cooking until thickened but not overly.
  • Add 3 - 3 1/2 cups cooked al dente pasta (my husband prefers short pasta, he says it holds the sauce better, I prefer Bucatini, you decide, add 1/2 ladle of pasta water and toss together gently over medium high heat for about 30 seconds or until thickened and almost a creamy texture. Serve immediately, top with freshly grated parmesan or pecorino cheese if desired. Enjoy!
