TUB'S COAL MINER'S SLAW



Tub's Coal Miner's Slaw image

A blend of thirteen ingredients kept secret since the Gold Rush of 1849! This slaw is both creamy and tangy, with a hint of sweetness.

Dressing
3/4 cup mayonnaise
1/2 cup buttermilk
3 tablespoons lemon juice
3 tablespoons apple cider vinegar
4 tablespoons distilled vinegar
1/3 cup canola oil
1/4 cup granulated sugar
1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon celery seeds
1/2 teaspoon onion powder
1/4 teaspoon granulated garlic
1/4 teaspoon mustard powder
Slaw
1 large head green cabbage, finely shredded (a food processor or mandoline works well)
1 large carrot, finely shredded, rinsed and drained (so the color doesn't transfer to the slaw)

Steps:

  • For the dressing: Whisk together the mayonnaise, buttermilk, lemon juice, cider vinegar, distilled vinegar, canola oil and sugar in a medium bowl. Add the salt, pepper, celery seeds, onion powder and granulated garlic; combine well.
  • For the slaw: Combine the shredded cabbage and carrots in a large bowl. Slowly add dressing, just enough to lightly coat the vegetables, and toss well. Taste, and add more dressing if desired. Refrigerate for at least 1 hour before serving.

1 pkg. devils food cake mix
1 16 oz. cn. cherry pie filling
2 eggs
1 c. sugar
1 6 oz. pkg. chocolate chips
1/2 c. butter
1/4 c. milk
1/2 c. chopped pecans
1/4 t. vanilla

Steps:

  • In a med. bowl, combine cake mix, pie filling and eggs. Pour into a greased 9 by 13 pan. Bake at 350 for 35-40 minutes or until a toothpick comes out clean when inserted into middle of cake. Remove cake from oven. In a saucepan, combine sugar, chocolate chips, butter and milk. Bring to a boil. Boil for 1 minute, stirring frequently. Stir in pecans and vanilla. Pour hot mixture over top of warm cake. Cool and then chill before serving. Can serve with a dollop of whipping cream. Enjoy!

Coal miners in the Midwest would take these for their lunch. They keep warm rather long wrapped in a towel. Some housewives would stuff one end with a savory filling, and the other with a sweet one. That way you could have your dessert with your dinner! For a true coal miner meal experience, be sure to roughly chop the potatoes.

4 cups all-purpose flour
2 teaspoons salt
1 ½ cups lard
10 tablespoons ice water
2 pounds top round steak, cut into 1/4 inch cubes
5 red potatoes, peeled and chopped
3 turnips, peeled and cubed
1 ½ cups chopped onion
1 teaspoon freshly ground black pepper
1 tablespoon salt

Steps:

  • Place the flour, 2 teaspoons of salt, and the lard in a bowl. Quickly rub the lard into the flour with your fingertips until it resembles small peas. Pour in the ice water, and form into a ball. Add more water if it feels too dry. Divide the dough into 6 balls, and wrap in plastic. Chill one hour.
  • In a bowl, combine the meat, turnips, potatoes, onions, remaining 1 tablespoon salt, and pepper.
  • Preheat the oven to 400 degrees F (205 degrees C).
  • Roll out one of the balls on a floured surface to about 1/4 inch thick. Using a cake pan, trace a 9 inch circle in the dough; cut out the circle. Place about 1 1/2 cups of the meat mixture into the middle of the circle. Fold the edges of the circle up to meet along the top of the meat filling, and crimp the dough along the top to seal. Repeat until all dough is used up. With a spatula, transfer the pasties to an ungreased sheet.
  • Bake the pasties for 45 minutes, or until golden. Serve hot or at room temperature.

Coal Miners'-style Spaghetti image

Crispy pancetta-Italian bacon-and a creamy pasta sauce of Parmigiano-Reggiano cheese and eggs meld with spaghetti to create a quick but satisfying classic dish.

1 tablespoon Filippo Berio® Extra Virgin Olive Oil
4 ounces pancetta, diced
1 pinch Salt
½ pound spaghetti
3 large eggs, at room temperature and lightly beaten
¾ cup grated Parmigiano-Reggiano cheese
1 pinch Coarsely ground black pepper

Steps:

  • Heat the olive oil in a large saute pan and stir in the pancetta. Cook until crispy. Set aside and keep warm.
  • Cook the spaghetti until it is al dente, in 4 quarts of rapidly boiling, salted water.
  • Reserve 2 tablespoons of spaghetti cooking water. Drain the spaghetti in a colander. Immediately return the spaghetti to the pot and, keeping the heat very low, rapidly stir in the eggs, reserved water, and half the cheese. Toss continuously until the eggs are gently cooked and the sauce is creamy.
  • Add the reserved pancetta and any drippings. Stir well. Add a generous grinding of pepper. Transfer to a platter and sprinkle with the remaining cheese. Serve immediately.
