Time 30m

Yield About two-and-a-quarter cups

Number Of Ingredients 6

5 garlic cloves
3 large egg yolks
2 cups light-flavored olive oil
1 to 2 teaspoons fresh lemon juice
Kosher salt to taste
Cayenne pepper to taste

I have had this roasted garlic mayonnaise at a local restaurant and loved it. It took me four times to perfect it and get it right but here it is. This is great with a grilled artichoke.

Categories     Side Dish     Sauces and Condiments Recipes

Time 1h15m

Yield 12

Number Of Ingredients 11

1 large head garlic
2 tablespoons olive oil, or as needed
salt and ground black pepper to taste
2 egg yolks
1 clove garlic, minced
¼ cup water
1 small lemon, juiced
¼ teaspoon salt
¼ teaspoon ground black pepper
1 pinch ground cayenne pepper
1 cup extra-virgin olive oil, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Cut just below the tip side of the head of garlic, exposing all of the cloves, but keeping the head intact. Place the head of garlic in the middle of a sheet of aluminum foil. Pour olive oil liberally over the garlic and season with salt and pepper. Cover completely and wrap with aluminum foil, making a cup of sorts.
  • Bake in the preheated oven on the top rack, until golden brown and softened, about 45 minutes. Let cool for 10 minutes.
  • Squeeze the pulp out of the garlic into a glass mixing bowl. Add egg yolks, minced garlic, water, lemon juice, salt, black pepper, and cayenne pepper. Whisk the mixture until as smooth as possible, about 5 minutes.
  • Add olive oil in a continuous stream, whisking the entire time, until emulsified and mixture has a thickened consistency like mayonnaise.

FRENCH FRIES WITH ROASTED GARLIC MAYONNAISE

French Fries with Roasted Garlic Mayonnaise image

Provided by Tyler Florence

Categories     side-dish

Time 1h25m

Yield 8 servings

Number Of Ingredients 13

1 head garlic, sliced in 1/2
4 sprigs fresh thyme
4 tablespoons extra-virgin olive oil
Sea salt and freshly ground black pepper
4 large egg yolks*
1 teaspoon dry mustard
1 tablespoon water
1 1/2 cups canola oil
2 tablespoons fresh lemon juice
8 medium Idaho potatoes
Vegetable oil, for frying
Sea salt
1/2 bunch chives, finely chopped

Steps:

  • Heat the oven to 375 degrees F.
  • Place the garlic onto a sheet of aluminum foil, top it with the thyme, drizzle it with 1 tablespoon of the olive oil, and season it with salt and pepper. Close the foil up and roast the garlic until it is soft, about 35 to 40 minutes. When it is cool enough to handle, squeeze the soft pulp into a bowl and set aside.
  • In a non-reactive bowl or in a food processor, combine the egg yolks, mustard, water, and salt and pepper. Whisk or pulse with the machine to break up the yolks. If you're making the mayonnaise by hand, put the bowl on a damp towel to keep it from moving around while you work. Then drizzle in the oils, whisking constantly, to form an emulsion. If the mayonnaise breaks, stop drizzling and whisk until it comes together again. If you're using the food processor, pour in the oils in a thin stream with the machine running. Then whisk or process in the garlic and lemon juice. Taste and adjust seasoning with more lemon juice, salt, or pepper. Thin the mayonnaise with more water if it is too thick.
  • Pour the vegetable oil into a deep fat fryer or heavy saucepan to reach halfway up the sides and heat to 325 degrees F. While the oil is heating, peel the skin off the potatoes and cut them into uniform 1/4-inch sticks using a knife, mandoline, or French fry cutter. Rinse the potato sticks well and dry them thoroughly to keep the hot oil from splattering. Fry the potatoes in batches so the pot isn't crowded and the oil temperature does not drop too much. Cook the potatoes until soft but not browned, about 6 to 8 minutes. Remove them and drain on paper towels.
  • Increase the oil temperature to 375 degrees F. Cook the par-fried potatoes in batches a second time until golden and crispy, about 2 to 4 minutes. Drain on fresh paper towels. Salt the French fries while they are still hot and garnish with chives. Serve immediately with the Roasted Garlic Mayonnaise as a dip.

GARLIC MAYONNAISE

Garlic Mayonnaise image

This classic dip goes great with tones of stuff and is so much better then shop bought mayonnaise. It is not that difficult to make as long as you keep whisking like there is no tomorrow and you should achieve the perfect consistency.

Provided by teenagechef

Time 10m

Yield Serves 4

Number Of Ingredients 6

2 Large egg yolks
1 tsp white wine vinegar
1 tsp dijon mustard
1/2 tsp sea salt + pepper
1 clove garlic, minced
300ml light olive oil

Steps:

  • Start by separating the yolks from the whites and placing the yolks in a large bowl. Be sure not to get any white in with the yolks.
  • Add the white wine vinegar, the dijon mustard, seasoning and the minced garlic. To mince the garlic use a garlic press or by using a grater. After adding the garlic whisk the mixture until it has become smooth.
  • At this point you may consider getting somebody pour the oil into the bowl whilst you are whisking as you do not want your emulsion to split. Start trickling the oil into the egg yolks very slowly and constantly whisking. Don't stop whisking whilst you are pouring the oil into the bowl.
  • After you have poured all of the oil into the mixture you should be left with your homemade mayonnaise. You may need to add more salt or pepper depending on what flavour you are looking for. Your mixture should be smooth and look rather similar to normal mayonnaise.
  • Finally add in 1 tbsp of water to the mixture and transfer the mayonnaise to an empty jam jar which has been thoroughly washed and dried. The mayonnaise should keep for up to 4 days in your refrigerator.
