COAL-ROASTED MUSHROOMS WITH MINT
We roasted the mushrooms in the hot coals of a campfire, but you can also roast them on the grill.

Steps:
- Preheat grill to medium. (If you are using a charcoal grill, coals are ready when you can hold your hand 5 inches above grill for just 5 to 6 seconds.) Assemble 10 pieces of foil, each about 10 inches square. Toss mushrooms, garlic, and mint with oil, salt, and pepper. Divide mushroom mixture among pieces of foil (about 1/2 cup per packet). Drizzle with oil. Fold and crimp to enclose.
- Place packets on grill rack or nestle them in hot coals. Roast until mushrooms and garlic are soft and golden brown, about 25 minutes. Drizzle with oil, and garnish with mint leaves and flowers.
OVEN ROASTED MUSHROOMS

- Preheat oven to 450 degrees. Lightly oil shallow baking pan large enough to hold mushrooms in single layer. Add mushrooms and toss with 2 to 3 tablespoons oil. Add garlic; season with salt; roast for 20 minutes stirring on occasion; mushrooms should be browned. Season with pepper.

SAUTEED MUSHROOMS WITH FRESH MINT
When we often stay away at big hotels we request the breakfast buffet in the morning. Although I don't eat bacon or eggs and I'm not into sweet pastries. So I really look forward to morning veggies such as sautéed mushroom, grilled tomatoes, home made style baked beans on toast and hash browns. This sautéed mushroom is not like the ones served at the hotels but it satisfy my cravings.

Steps:
- Clean the mushrooms, slice the caps and chop the stems.
- Warm up the oil, butter and add the garlic.
- Mix then add the mushrooms and sauté briskly over a lively flame for 4 minutes. Make sure they are tender but still crisp.
- Add chopped mint and parsley, cook one more minute, and add salt and pepper to taste.
- This could serve two people or four as a side dish with about three mushrooms each depending on the size of the mushrooms.

GARLICKY ROASTED MUSHROOMS
Messed around with roasted mushroom recipes until I found this combination. Very quick and easy to prepare and I even got my wife, who hates mushrooms, to go back for seconds. Now she wants me to make these all the time! Enjoy!

- Preheat the oven to 400 degrees F (200 degrees C).
- Heat butter in a large frying pan over medium heat. Add mushrooms, cap-sides down, and cook until softened, about 10 minutes. Transfer to a baking dish and arrange with stalks up.
- Mix garlic, thyme, lemon juice, salt, and pepper together in a small bowl. Pour in remaining butter from the frying pan; mix well and spoon over mushrooms. Sprinkle bread crumbs over top.
- Roast in the preheated oven for 10 to 12 minutes.
