CREAMY COCONUT MILK ICE CREAM



Creamy Coconut Milk Ice Cream image

With only 4 ingredients, this purely delicious dairy-free ice cream is a sweet treat for those who do not eat dairy. Mix in your favorite toppings - like M&Ms, berries or sprinkles - to create new varities of flavors!

3 cups reduced fat coconut milk ¾ cup sugar ½ teaspoon salt 1 tablespoon vanilla

Steps:

  • 1. Freeze the Cuisinart Ice Cream Maker bowl at least 24 hours in advance according to manufacturer's directions. 2. Whisk together coconut milk,s ugar, salt, and vanilla in a large bowl then set mixture in fridge for 1 hour, or overnight to chill. 3. Slowly pour mixture into pre-frozen ice cream machine bowl and let the mixture churn until it reaches desired ice cream consistency (15-25 minutes).

  • Pour into the container of an ice cream maker, and freeze according to the manufacturer's instructions.

3/4 cup Besti Powdered Monk Fruit Allulose Blend
2 tsp Vanilla extract
1/4 tsp Sea salt

Steps:

  • Place a freezer-friendly container or a loaf pan (I used a 9" x 5" inch) in the freezer.
  • Combine all the ingredients in a high-powered blender, until smooth and creamy. Scrape down the sides to ensure the mixture is very well combined.
  • Pour the coconut cream mixture into the pre-frozen container and place it in the freezer. Allow the ice cream to freeze for at least 3-4 hours (preferably overnight) before serving.
  • Let the ice cream thaw for 5 minutes on the counter before scooping it into bowls with a slightly wet ice cream scoop.
