It is like Oscar night for us after waiting all year to have the prime rib, but also the delicious creamed spinach. 1 (10-ounce) package frozen chopped spinach
2 bacon slices, finely chopped
1 cup finely chopped green onions
2 tablespoons flour
1 teaspoon seasoned salt
1/2 teaspoon pepper
1 clove garlic, minced
3/4 cup half-and-half

Steps:

  • Cook the spinach according to package directions. Drain well.
  • Fry the bacon and onions together in a skillet over medium heat until the onions are tender, about 10 minutes. Remove from the heat. Add the flour, seasoned salt, pepper and garlic. Blend thoroughly. Gradually add the half-and-half and return to low heat, stirring until thickened. Add the spinach and mix well.

This is supposed to be like the famous Prime Rib Houses creamed spinach. All I know is that it is very tasty.

1 cup finely chopped onion
1/4 cup flour
2 teaspoons season salt (Lawrys preferred)
1/2 teaspoon seasoned pepper (Lawrys preferred)
1/2 teaspoon garlic powder
1/4 teaspoon parsley
1 3/4 cups milk
2 (10 ounce) packages frozen spinach, cooked and drained

Steps:

  • In a medium skillet, cook bacon until almost crisp.
  • Add onion to bacon and cook until onion is tender about 10 minutes.
  • Remove from heat.
  • Add flour and seasonings; blend well.
  • Gradually stir in milk; cook and stir over low heat until thickened.
  • Add spinach and mix well.
  • If too thick add more milk.

  • Drain spinach well and squeeze out excess moisture with hands; chop finely and set aside. Fry bacon in heavy skillet until crisp; remove, drain and chop. Sauté onion and garlic in bacon drippings; add flour, Lawry's Seasoned Salt and pepper and blend thoroughly. Slowly add milk, stirring constantly until thickened. Add spinach and bacon; heat.

1 (10 ounce) package frozen chopped spinach
2 slices bacon, finely chopped
1/2 cup finely chopped green and white onion
2 tablespoons flour
1 teaspoon Lawry's Seasoned Salt
1/4 teaspoon Lawry's Seasoned Pepper
1 garlic clove, minced
1/4 cup half-and-half or 1/4 cup heavy cream

Steps:

  • Cook spinach according to package directions, squeeze thoroughly to remove all water. Fry bacon and onions together until onions are tender, about 10 minutes. Remove from heat. Add flour, seasoned salt, seasoned pepper and garlic. Blend thoroughly. Slowly add half and half or cream, return to heat and stir until thickened. Add spinach and mix thoroughly. Adjust seasonings if needed. If too salty, add some sugar. If you like nutmeg, that makes a nice addition too.

Extra-virgin olive oil
2 1/2 pounds washed baby spinach
1/2 small onion, finely diced
Kosher salt
2 cloves garlic, smashed
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup milk
Pinch cayenne pepper
1/4 cup grated Parmigiano

Steps:

  • Coat a large, straight-sided saute pan with olive oil and heat over medium heat. Add the spinach, cover and saute until gently wilted. Remove the spinach from the pan to a colander set inside a bowl to let the spinach drain and cool.
  • Remove any liquid from the bottom of the saute pan and coat lightly with olive oil. Heat the oil over medium heat, add the onions, and season with salt, to taste. Saute the onions until they are translucent and very aromatic, about 5 to 7 minutes. Add the garlic and saute for 2 to 3 more minutes. Add the butter, and when melted stir in the flour. Cook until it is the texture of wet sand, about 5 to 6 minutes. Whisk in the milk, cayenne pepper and Parmigiano. Taste for seasoning and season with salt, if needed, (it will). Bring the milk to a boil, then reduce the heat and simmer for 5 to 6 minutes, stirring occasionally, so the milk doesn t scorch on the bottom.
  • Add in the reserved spinach and stir to combine. Taste and adjust the seasoning, if needed. Transfer to a serving bowl and serve.

1 lb fresh spinach
4 strips bacon
1 clove garlic, finely chopped
1 medium onion
salt and pepper to taste
@Cream Sauce
2 tbsp butter
2 tbsp flour
1 cup whole milk

Steps:

  • Boil spinach (not too well done.) Remove from heat, wash in cold water, squeeze dry. Put through food grinder and set aside. Grind bacon and saute' in skillet. Grind onion and add to bacon w/ garlic salt and pepper. Saute' until all moisture is gone. Make a medium cream sauce with butter, flour and milk. Melt butter over low heat and slowly mix in flour to start a roux. Stir the milk into the roux and cook until thickened. Add spinach, onion and bacon mixture to the cream sauce and bring to a slow boil. Remove from heat and serve.

  • 1. Cook spinach as directed on box; drain well. 2. In 2-quart saucepan, melt butter over medium heat. Add onion; cook 4 to 5 minutes, stirring frequently. Add garlic; cook about 1 minute, stirring frequently, until onion is tender. 3. Stir in flour with whisk until mixture is smooth and bubbly, stirring constantly. Gradually stir in milk until mixture boils and thickens, stirring frequently. Stir in salt and pepper. 4. Stir in drained spinach; cook until thoroughly heated. TIPS: You can microwave both packages of spinach in a glass bowl, covered, for 10 minutes. Separate with a fork, and cook 4 to 5 minutes or until spinach is tender. Drain spinach well by lining a colander with a couple sheets of paper towel. Wrap towel around spinach, and squeeze water out.

2 1/2 pounds spinach in bulk, or two 10-ounce plastic wrapped bags
1 tablespoon butter
1 tablespoon flour
1 cup milk
1/2 teaspoon freshly grated nutmeg
Salt to taste, if desired
Freshly ground pepper to taste

Steps:

  • If bulk spinach is used, pick it over to remove and discard any tough stems and blemished leaves. Rinse the spinach thoroughly and shake off excess water. There should be about 2 pounds cleaned weight, or 16 cups.
  • Bring enough water to a boil to cover the spinach when it is added and stirred down. Add spinach and cook 2 minutes and drain. Run under cold running water until chilled. Empty the spinach into a deep colander and press to extract most of the water.
  • Put the spinach into the container of a food processor or an electric blender and blend thoroughly. There should be about 1 3/4 cups.
  • Melt the butter in a saucepan and add the flour, stirring with a wire whisk. Add the milk, stirring rapidly with the whisk. Add nutmeg, salt and pepper to taste. Cook, stirring, about 5 minutes and add the spinach. Stir to blend. Heat and serve.

1 ½ cups whole milk
4 (10 ounce) boxes boxes frozen chopped spinach, thawed and squeezed dry; reserve 1/2 cup liquid
3 large garlic cloves, minced
2 tablespoons butter
3 tablespoons all-purpose flour
½ cup grated Parmesan cheese
½ teaspoon ground nutmeg
Salt and ground black pepper

Steps:

  • Combine milk, spinach liquid and garlic in a 1-quart microwave-safe measuring cup or small bowl covered with a saucer, and microwave (or heat slowly in a medium saucepan) until very hot and steamy. Let stand for 5 to 10 minutes to soften garlic.
  • Melt butter in a Dutch oven over medium-high heat. Whisk in flour. Add hot milk mixture all at once, then whisk until smooth. Stir in spinach; cook until sauce is thick and bubbly and spinach is tender but still green, about 5 minutes. Stir in cheese, nutmeg, and a generous sprinkling of salt and pepper. Serve hot.
