Perfect for a buffet or a barbecue. Customize with your favorite vegetables.

8 ounces rotelle or spiral pasta, cooked and drained
2-1/2 cups assorted cut-up fresh vegetables (broccoli, carrots, tomatoes, bell peppers, cauliflower, onions and mushrooms)
1/2 cup cubed cheddar or mozzarella cheese
1/3 cup sliced pitted ripe olives (optional)
1 cup Wish-Bone® Italian Dressing

Steps:

  • 1. Combine all ingredients except Wish-Bone® Italian Dressing in large bowl. Add Dressing; toss well. Serve chilled or at room temperature.
  • NOTE: If preparing a day ahead, refrigerate, then stir in 1/4 cup additional Wish-Bone Dressing before serving.
  • For a Creamy Italian Pasta Salad, substitute 1/2 cup Hellmann's® or Best Foods® Real Mayonnaise for 1/2 cup Wish-Bone® Italian Dressing.

1 1/2 pounds tricolor spiral pasta
Kosher salt
1/2 cup pine nuts
2 cups oil-packed sun-dried tomatoes, drained and roughly chopped
1 cup pitted Kalamata olives
8 ounces sharp white Cheddar, diced into 1-inch pieces
One 15-ounce can chickpeas, drained and rinsed
1 English cucumber, sliced
1 1/2 cups Basil Vinaigrette, recipe follows
1/3 cup Champagne vinegar
1 tablespoon honey
2 teaspoons Dijon mustard
1 shallot, roughly chopped
4 cups fresh basil leaves, roughly chopped
Kosher salt and freshly ground black pepper
1 cup extra-virgin olive oil

Steps:

  • Preheat the oven to 350 degrees F.
  • Cook the pasta in a large pot of salted boiling water according to package directions. Drain and rinse with cold water. Set aside.
  • Spread the pine nuts in an even layer on a small baking sheet. Transfer to the oven, and toast until golden and fragrant, about 10 minutes. Set aside to cool slightly.
  • In a large bowl, combine the drained pasta, toasted pine nuts, sun-dried tomatoes olives, Cheddar, chickpeas, cucumbers, and basil vinaigrette. Toss well. Serve cold.
  • Add the vinegar, honey, mustard, shallots, basil and some salt and pepper to a blender. Blend until well combined. With the motor running, drizzle in the olive oil; blend until fully combined.

1/2 cup chopped green pepper
1/2 cup sliced celery
1/2 cup chopped tomato (I always use Roma tomatoes)
1/2 cup shredded carrot
1/4 cup vegetable oil
1/4 cup cider vinegar
1/4 cup chopped onion (I grate mine)
2 tablespoons ketchup
4 teaspoons sugar
1/2 teaspoon salt
1/4 teaspoon ground mustard
1/4 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon dried oregano

Steps:

  • In a large bowl, combine pasta, green pepper, celery, tomato and carrot.
  • In a jar with a tight-fitting lid, combine dressing ingredients; shake well.

3 -4 cups cooled cooked spiral shaped pasta
1/2 cup chopped green bell pepper
1/2 cup thinly sliced celery
1/2 cup mixed mediterranean olive, green,black,garlicky,whatever,pitted and sliced
1/2 cup seeded chopped tomato
1/2 cup shredded carrot
1/4 cup extra virgin olive oil
1/2 cup red wine vinegar
1/4 cup finely chopped onion, more to taste
2 tablespoons ketchup
2 teaspoons sugar
1/2 teaspoon dry mustard
1/2 teaspoon sweet paprika
1/2 teaspoon garlic granules
1/4 teaspoon dried oregano, crushed,more to taste
1 teaspoon salt (optional)
1/2 teaspoon fresh ground black pepper

Steps:

  • In a large bowl, combine pasta, green pepper, celery, tomato, and carrot, and toss gently to combine.
  • In a lidded jar, combine all dressing ingredients, and shake thoroughly to combine.
  • Set aside for 20 minutes for flavor to develop.
  • Pour dressing over pasta mixture, and toss gently to combine.
  • Refrigerate salad for 30 minutes, tossing twice.
  • Taste for seasonings, and adjust to taste.
  • It may need more vinegar; if so, add a little balsamic vinegar if you have it, otherwise whatever you originally used.
