SWISS STEAK WITH BROWN GRAVY

Swiss Steak With Brown Gravy image

I found this recipe online years ago and it was an instant hit with my family. It is especially comforting on a cold winter day.

Provided by catcher

Categories     Steak

Time 1h45m

Yield 4-6 serving(s)

Number Of Ingredients 7

2 lbs cube steaks
salt and pepper, to taste
1 cup all-purpose flour
1/2 cup vegetable oil
1 cup diced onion
3 cups beef stock or 3 cups bouillon
1 tablespoon Worcestershire sauce

Steps:

  • Cut each steak into the desired serving size, if necessary. Salt and pepper each steak lightly and dredge in flour. Shake off excess. Set aside.
  • If you don't have a skillet with ovenproof handles, you can use a Pyrex dish or an earthenware pan with a cover for the oven. Heat a heavy 12-inch skillet (cast iron, if you have one) with a tight-fitting lid over medium heat. Add the vegetable oil. Brown the cube steaks on both sides and set aside.
  • Pour off all of the oil except 1/3 cup. Add 1/3 cup of flour to the oil and stir. Allow the mixture ot brown over medium-low heat and stir frequently to prevent it from burning. When the mixture is about the color of peanut butter, add the onion. Stir and allow the onion to cook for about 1 minute.
  • Slowly add the beef stock, stirring constantly. Add the Wercestershire sauce and simmer for 5-10 minutes.
  • Return the cube steaks to the pan, cover, and bake in a 275 degree oven for one hour.
  • Serve with mashed potatoes and your favorite vegetable.

CLASSIC SWISS STEAK

Classic Swiss Steak image

Meet the Cook: When I prepare this dish for my husband and me (we're retired with two children, both grown, and two grandchildren), I always serve rolls or bread to dip in the sauce. We enjoy it to the last drop! Along with the Swiss steak, we like to have coleslaw or sliced cucumbers mixed with sour cream. -Lorraine Dyda, Rancho Palos Verdes, California

EASY AND QUICK SWISS STEAK

Easy and Quick Swiss Steak image

This was my favorite growing up. I was amazed when I was older and asked my mom for the recipe how EASY it is! A small amount of prep. time, a day in the slow cooker, and you'll be amazed! It sounds too simple to be good... TRUST me! This gets RAVE reviews when we make it! The amount of vegetables is only an estimate. Use as many or as few as you choose. When it's done, you will have a yummy gravy, and will have to carefully dig for the steak pieces.

SAVORY SWISS STEAK

Savory Swiss Steak image

Have you ever had cube steak (or round steak) sitting in your freezer and had absolutely no idea how you were going to prepare it differently than usual? This was my dilemma until I came across this recipe by Marilyn Moll of Urban Homemaker in a cookbook my friend Shannon kindly printed off for me. Marilyn describes it best: "Vegetables thicken the sauce-like gravy which smothers fork-tender steak." It is important to peel and grate your carrots and finely chop your onion and celery for the gravy to form properly. I also tend to double the amount of flour/mustard mixture that I dredge my round or cube steaks in to be sure that they are well coated. I serve this with cheddar and roasted garlic mashed potatoes.

Categories     Steak

Time 6h20m

Yield 5-6 serving(s)

Number Of Ingredients 12

1 1/2 lbs round steaks, approx. 1-inch thick (or cube steak as I use)
2 carrots, peeled and grated
2 celery ribs, finely chopped
1 onion, finely chopped
1/4 cup flour
2 teaspoons dry mustard
16 ounces canned diced tomatoes
salt and pepper, to taste
2 tablespoons Worcestershire sauce
2 tablespoons butter
2 tablespoons oil
2 teaspoons brown sugar (or sucanat)

Steps:

  • Cut round steak or cube steak into 6 or more serving size pieces.
  • Salt and pepper steak pieces.
  • Combine flour and dried mustard; then coat steak pieces with flour mixture.
  • Using a large frying pan, brown the meat in 1 tablespoon of oil and 1 tablespoon of butter.
  • Transfer to a crock pot.
  • Heat remaining oil and butter in the same frying pan.
  • Add onion, carrots, and celery. Saute until vegetables are glazed.
  • Add tomatoes, Worcestershire, and sugar. Heat, scraping up drippings from bottom of pan.
  • Pour vegetable mixture over the meat in the crock pot.
  • Cover and cook on low for 6-8 hours, or until tender.
  • Serve meat with vegetable sauce over top. Sprinkle with chopped parsley as garnish, if desired.
  • Note: I won't claim that this is the most beautiful looking dish in the world but even the kids loved it once they got past their initial wrinkled nose inspections. It sure does smell good while cooking though.

Top Asked Questions

What is Swiss steak and how to cook it?
Swiss Steak is a classic beef dish wherein the beef is prepared by “swissing” it. Simply put, you pound on it to make it thinner. This step ensures that the meat will be tenderized well. It also has a gravy. Some versions have tomatoes in the sauce. But, for this recipe, the gravy has the cream of mushroom soup as the base.
What is a Swiss steak slow cooker?
‘Swissed’ means to roll or pound the meat, tenderizing it so it cooks up tender just like the veggies! This version of swiss steaks cooks in the slow cooker for the perfect set it and forget it meal. Much like the beef in a stew recipe, these steaks become fork tender by cooking low and slow. This recipe freezes and reheats well.
What kind of gravy do you use for Swiss steak?
It's often made with a tomato base, but this version uses a beef broth base instead. While a traditional Swiss steak recipe has a tomato based gravy, we are making this version with a savory beef gravy instead. You can make this oven swiss steak in the slow cooker too if you prefer.
How to cook steak in a Dutch oven?
Preheat oven to 325°. Place steak between 2 pieces of plastic wrap and pound with a meat mallet until 1/2" thick. Heat 2 tablespoons vegetable oil in a medium dutch oven over medium high heat. Add onions and garlic and cook until softened and beginning to brown, about 5 minutes. Remove from pot and set aside.
