COLD MOUSSE OF CHICKEN AND PISTACHIOS

- For the mousse: Cook chicken fat in large skillet over med-high heat until fat is rendered and brown. In a coffee-grinder, process the thyme, bay leaf, and peppercorns into a powder. Add chicken pieces to skillet and cook for 1 minute. Add shallots, liver, spices, salt, and garlic to the skillet. Cook over med. heat, stirring, for 2 minutes. Remove and let cool for 2 minutes. Transfer contents of skillet to a food processor and emulsify for 30 seconds, until smooth. Add cognac and process until smooth. Push mixture through a food mill, and fold in pistachios. Cover the mousse, and refrigerate until it begins to set firm. Mix until smooth, pack it into 3-4 c. pâté mold, cover tightly with plastic wrap, and refrigerate overnight. I didn't have a food processor, so I did batches in a blender, then put everything together and used an electric mixer. it worked well To decorate the top of the mousse, use the thin strips of vegetables to create a vase filled with flowers or another design. All the greens should be blanched in boiling water for 10-15 seconds and cooled in cold water. Carrots should be blanched for 1 minute. For the aspic: In a saucepan, mix the egg white, gelatin, the greens of leeks, celery, and parsley; pepper, salt, and stock. Bring to a boil over high heat, stirring until it comes to a boil. When it comes to a boil, stop stirring, and cook 5 seconds. Set aside, off the heat, and let rest undisturbed for 5 minutes. Strain through a sieve lined with wet paper towels. Place over ice, and stir very gently so as to not cause bubbles, until mixture gets syrupy. This is the time to use it. Using a spoon and working quickly, coat the top of the mousse with aspic until the entire surface is covered. Refrigerate until well set.

- Break up and melt the chocolate, either in a bowl set over a pan of gently simmering water or for 2-3 mins in a microwave. Stir until smooth, then cool. Use 6 egg whites for two batches of merinuge. The leftover whites freeze well; simply thaw before whisking. Fold the cooled chocolate into the meringue, followed by the pâté à bombe and cassis or brandy.
- Whip the cream into soft peaks and fold in with most of the pistachios. Pipe or spoon into 6 elegant glasses, sprinkle with the remaining pistachios and grated chocolate, then chill.

- In an ungreased heavy skillet over medium-low heat, toast pistachios 5-7 minutes, stirring frequently until beginning to brown, then stirring constantly until golden brown.
- Flatten each chicken breast half to 1/4-inch thickness.
- Sprinkle both sides of chicken with lemon pepper seasoning.
- Heat oil in a 12-inch skillet over medium-high heat.
- Cook chicken, lemon juice and lemon peel in oil 10-15 minutes, turning chicken once and stirring juices occasionally, until chicken is cooked through.
- Serve chicken topped with pan juices, nuts and garnish with lemon slices.

- Preheat oven to 500 degrees F (260 degrees C). Lightly coat a baking sheet with cooking spray.
- Mix together pistachios and bread crumbs in a shallow bowl. In a separate bowl, stir together Dijon mustard, olive oil, honey, salt and pepper until smooth. Dip chicken into Dijon mixture to coat, then coat with bread crumbs. Place onto prepared baking sheet.
- Place into preheated oven and turn the oven down to 375 degrees F (190 degrees C). Bake until the chicken is no longer pink and the pistachio coating is golden brown, about 20 minutes.

- Preheat the oven to 375 degrees F (190 degrees C).
- Place the chicken thighs in a shallow baking dish. Drain the peaches and apricots, reserving the juice in a small bowl. Stir the vinegar into the juice, and adjust the amount to taste if necessary. - Bring a large pan of water to a simmer. Add the eggs and cook gently for 7 mins. Remove with a slotted spoon and transfer to a bowl of cold water. Once cooled, carefully peel off the shell and slice each egg in half.
- Meanwhile, whisk the oil with the lemon zest, juice and yogurt, and season well. Shred the chicken and toss with the olives, sundried tomatoes, basil and lettuce. Pour in the dressing, season and toss together.
