Carmelized onions give a touch of sweetness to this easy french onion soup, topped with toasted cheese bread. -Pat Stevens, Granbury, Texas

1 medium onion, sliced
1 tablespoon butter
1 to 2 teaspoons sugar
1 teaspoon Worcestershire sauce
1-1/3 cups beef broth
1 tablespoon white wine or water
Coarsely ground pepper to taste
2 slices French bread (1 inch thick)
1/3 cup shredded Swiss cheese
3 tablespoons grated Parmesan cheese

Steps:

  • In a saucepan, saute onion in butter until tender. Sprinkle with sugar and Worcestershire sauce; cook and stir for 13-15 minutes or until onion is caramelized. , Add the broth, wine or water and pepper. Bring to a boil. Reduce heat; cover and simmer for 15 minutes., Place bread on an ungreased baking sheet. Broil 4 in. from the heat until toasted. Turn; sprinkle with cheeses. Broil until cheese is melted and bubbly. Ladle soup into bowls; top with toast.

Steps:

  • Melt butter in a small pan and add sliced onion. Cook on medium heat for 15 minutes, stirring.
  • Add sugar and stir through for a further 15 minutes until very dark brown in colour.
  • This recipe is excellent mixed with Red Wine Jus Gravy!
  • It is also a lovely compliment to savoury puff pastry dishes, pizza and most roast meats.

3 large onions (red or white), sliced
pinch of salt
2 tbsp soft brown sugar
1-2 tbsp balsamic vinegar

Steps:

  • Heat the oil in a large deep frying pan over a low heat.
  • Add the onions with a generous pinch of salt and cook slowly for 30-40 mins. Stir occasionally to prevent them from sticking or burning until they become soft and golden. If the onions start to catch, add a splash of water to the pan and mix well.
  • Add the sugar and vinegar to give them a sweet, slightly sharp chutney flavour. Keep cooking on a low heat for another 5 mins, stirring occasionally until the mix is sticky, the sugar has dissolved and the vinegar has reduced. The onions are now ready to serve, or use in a recipe.

4 onions, thinly sliced
1 teaspoon salt
½ teaspoon sugar
1 tablespoon all-purpose flour
1 cup chicken broth
4 links pork sausage

Steps:

  • Warm oil in a large skillet over medium heat. Stir in onions, and cook until soft, about 10 minutes. Stir in salt and sugar. Reduce heat to medium low, cover, and cook 20 minutes. Stir in flour, then add broth. Stir well. Cover, leaving the lid slightly ajar, and cook 30 minutes.

Use leftovers as a flavorful topper for turkey sandwiches." Good Housekeeping says that this sauce can be made up to 4 days ahead. (NOTE: I reworded the recipe a teeny bit)

2 tablespoons margarine or 2 tablespoons butter
2 medium red onions (about 1 pound)
1 (12 ounce) bag cranberries
3/4 cup light brown sugar (packed)
2 tablespoons balsamic vinegar
1/4 teaspoon salt

Steps:

  • Heat a nonstick 12-inch skillet over medium heat, the melt margarine. While this is happening, cut the onions into 4 wedges each, then thinly slice the wedges crosswise.
  • When the butter is melted, add onions to skillet, and cook 15 to 20 minutes or until onions are dark brown and tender, stirring occasionally.
  • Increase heat to medium-high. Stir in cranberries, sugar, vinegar, salt, and 1 cup water; heat to boiling. 4 pounds (about 5 large) Spanish onions, peeled, quartered and thinly sliced
4 cloves garlic, peeled and finely chopped
1 cup white wine
1 1/2 teaspoons thyme leaves
1/3 cup toasted, chopped walnuts
Salt and freshly ground black pepper to taste

Steps:

  • Place a large heavy kettle over medium heat and heat the oil. Add the onions and garlic and cook, stirring frequently, until the onions are greatly reduced in volume and golden in color, about 50 minutes to 1 hour. (Lower the heat toward the end of cooking if the onions stick to the bottom of the pot.)
  • Add the wine, thyme and walnuts to the pan and continue to cook until all the liquid has evaporated. Season to taste with salt and pepper. Serve with grilled meat, fish or pasta.
