2 cups packed brown sugar
1 ½ cups evaporated milk
4 tablespoons butter
½ teaspoon salt
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a saucepan, combine flour and sugar. Stir in milk, butter, salt and vanilla. Cook, stirring constantly, until mixture comes to a boil. Pour into an unbaked pie shell.
  • Bake at 400 degrees F (200 degrees C) for 5 minutes. Reduce heat to 350 degrees F (175 degrees C) and continue baking for 25 minutes.

1 1/4 cups all-purpose flour, plus more for dusting
1/2 teaspoon salt
6 tablespoons cold unsalted butter, cut into 1/2-inch pieces
2 tablespoons cold vegetable shortening
2 cups heavy whipping cream
1 cup sugar
1/2 cup all-purpose flour
1/2 teaspoon vanilla extract
2 tablespoons unsalted butter, cut into 1/2-inch pieces
1/8 teaspoon freshly grated nutmeg

Steps:

  • Make the crust: Pulse the flour and salt in a food processor. Add the butter and shortening and pulse until the mixture looks like coarse meal with pea-size bits of butter. Drizzle in 3 tablespoons ice water and pulse until the dough begins to come together (add more water, 1/2 tablespoon at a time, if necessary). Turn out onto a sheet of plastic wrap and pat into a disk; wrap tightly and refrigerate at least 1 hour and up to 1 day.
  • Roll out the dough into an 11-inch round on a lightly floured surface. Ease into a 9-inch pie plate. Fold the overhanging dough under itself and crimp the edges with your fingers. Pierce the bottom all over with a fork. Refrigerate the crust until firm, about 30 minutes.
  • Place a baking sheet on the middle oven rack and preheat to 425 degrees F. Make the filling: Whisk the heavy whipping cream, sugar, flour and vanilla in a bowl. Pour into the chilled crust, dot with the butter and sprinkle the nutmeg on top. Carefully transfer the pie plate to the hot baking sheet and bake 10 minutes. Reduce the oven temperature to 350 degrees F and continue baking until the crust is golden and the filling is bubbly in spots, about 55 more minutes (the center will still jiggle slightly); cover the crust edges with foil if they're browning too quickly. Transfer to a rack and let cool completely. Serve chilled or at room temperature.

1 cup plus 3 tablespoons all-purpose flour, plus more for dusting
1 teaspoon salt
1 1/2 teaspoons granulated sugar
7 tablespoons unsalted butter, cut into 1-inch cubes; 4 tablespoons chilled, 3 tablespoons frozen for 15 minutes
1/2 cup granulated sugar
1/2 cup packed dark brown sugar
2 tablespoons all-purpose flour
2 cups heavy cream
1/2 teaspoon vanilla paste or extract
Confectioners' sugar, for dusting

Steps:

  • Prepare the crust: Combine the vinegar with 1/2 cup ice water in a small bowl.
  • Pulse the flour, salt and sugar in a food processor until combined. Add the 4 tablespoons chilled butter and pulse until the butter is in pea-sized clumps and the mixture is sandy. Add the 3 tablespoons frozen butter; pulse until the frozen butter is also in pea-sized clumps. Add 5 tablespoons of the vinegar mixture; pulse 2 or 3 more times. Squeeze a small amount of dough between your fingers. If it does not stay together easily, add 1 more tablespoon of the vinegar mixture and pulse 3 or 4 more times. (Do not let the dough come together.) Turn the dough out onto a clean surface and gather into a lumpy ball; flatten into a disk, wrap in plastic and refrigerate at least 1 hour or overnight.
  • On a floured surface, roll the dough into a 12-inch circle, about -inch thick. Fit into an 8-inch pie plate and trim the extra dough, leaving a 1-inch overhang; reserve trimmings. Fold the edges under the rim and crimp. Refrigerate the crust until firm, 20 minutes. Meanwhile, preheat the oven to 400 degrees.
  • Line the chilled crust with foil and fill with pie weights or dry beans. Bake until the edges are golden, 15 minutes. Remove the foil and weights; continue baking until the center of the crust is dry and golden brown, about 12 minutes. Cool slightly on a wire rack. Cover any cracks in the crust with the dough trimmings before filling.
  • Prepare the filling: Whisk the sugars and the flour in a medium bowl, breaking up any clumps of brown sugar. Combine the heavy cream and vanilla in a separate bowl and slowly whisk into the sugar mixture until smooth. Pour the filling into the prepared crust; bake until the pie begins to set around the edge but is still slightly wobbly in the middle, 40 minutes. (Tent loosely with foil for the last 10 minutes if the crust gets too dark.) Cool to room temperature on a wire rack, then refrigerate until ready to serve. Dust with confectioners' sugar before slicing.

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch pie dish.
  • Place the brown sugar and butter in a mixing bowl, and beat them together with an electric mixer until creamy and very well combined, without lumps. Beat in eggs, one at a time, incorporating the first egg before adding the next one. I have tried a few, all delicious, but not quite the same. A few weeks ago, my Mom was looking through a box of stuff left behind after my grandma passed away a while back and , there it was....... 9 inches deep dish uncooked pie shells
2 cups brown sugar, packed
3 tablespoons all-purpose flour
1 (370 ml) can Carnation Evaporated Milk
2 eggs, lightly beaten
1 teaspoon vanilla
1/4 cup butter, cold and diced into pea size pieces

Steps:

  • Preheat oven to 350 degrees.
  • In bowl, mix brown sugar and flour.
  • In seperate bowl, whisk together milk, eggs and vanilla.
  • Gradually add to flour mixture mixing well.
  • Place cookie sheet under pie crust.

  • Drop cold butter cubes throughout mixture.

1 cup sugar
1/4 cup cornstarch
2 cups 2% milk
1/2 cup butter, cubed

  • Preheat oven to 450°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes., Line unpricked crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. This recipe came to The Times in a 1991 profile of Laurent Comeau, the kitchen manager of Cirque du Soleil. In his role managing the meals of the performers, he often had to scramble to find ingredients like Canadian maple syrup for the Québécois in the troupe, who expected it on or in everything from pancakes to maple mousse pie. Mr. Comeau thought Vermont maple syrup is just as good, "but try explaining it to them," he said. "The contortionists, it's like wine to them. They'll taste it and know right away if it's not from Quebec." This sugar pie, sweetened with brown sugar and sweetened condensed milk, tastes like pure butterscotch.

1/2 teaspoon salt
1/2 pound lard, cut into small pieces and chilled
1/2 cup ice water
1 1/2 tablespoons butter, cut into small pieces and chilled
2 cups brown sugar
14 ounces sweetened condensed milk
1 tablespoon flour
1 tablespoon butter, softened

Steps:

  • To make the crust, combine the flour and salt in a large bowl. Add the lard, and with a pastry cutter or two forks, cut the lard into the flour until the mixture resembles small peas. Add the ice water, 2 tablespoons at a time, and mix with two knives. Add just enough water so that all the flour is incorporated and the dough pulls together into a rough ball.
  • Turn out onto a lightly floured board, and with a rolling pin flatten the dough into a 6-inch square. Scatter the butter pieces all over the dough, then fold the dough in half. Roll the dough back out into a 6-inch square, then fold and roll out again. Repeat once more, then cover the dough with plastic wrap, and refrigerate for an hour.
  • Preheat the oven to 375 degrees.
  • Remove the dough from the refrigerator, and allow to soften.
  • To make the filling, combine the sugar, condensed milk, flour and butter in a medium-size bowl. Stir until smooth.
  • On a lightly floured board roll out the dough until it is 1/4 inch thick. Gently lift the dough, and put it in a 9-inch pie pan. Trim the edges, then pour in the filling. Bake for 15 minutes, then reduce the heat to 325 degrees, and continue baking for another 25 minutes. The filling will look cracked and bumpy. Do not overbake.

Unbaked 9 1/2 inch tart shell
1 1/2 cups brown sugar
2 tablespoons flour
1/8 teaspoon salt
1 teaspoon vanilla
1/3 cup heavy cream

Steps:

  • Set the oven rack in the middle position. Preheat the oven to 350 degrees F.
  • Use your hands (wear disposable gloves) to combine brown sugar, flour, and salt in a mixing bowl. Pick out and discard any hard particles of brown sugar. Sprinkle mixture evenly over bottom of tart shell.
  • Add vanilla to heavy cream and pour over mixture, spreading lightly with an offset spatula. Bake approximately 35 minutes, or until pastry is golden brown and filling is dark and bubbling.
