POTLUCK CHICKEN
I like to take this to potlucks because it has, whole grain, meat, and vegetables. I know I can eat this even if there isn't anything else available. Preparation time does not include marinade.

Steps:
- Slice chicken into serving pieces (at a potluck, you don't want your meat pieces to be a full serving. People like to try a little of everything).
- Marinade chicken in the dressing for as little as 1/2 hour or as long as overnight.
- Add Chicken and dressing to a large nonstick skillet on medium-high heat. Cook until chicken is brown on both sides (around 4 or 5 minutes).
- Stir in broth, rice and green beans.
- Bring to a boil.
- Cover and simmer for 10 or 15 minutes. Until the chicken is cooked through.
- Add Almonds, remove from heat and let stand for a few minutes.

- Flatten chicken breasts a little and cut each breast in two.Mix together flour, curry powder, garlic powder and salt and pepper.Dredge chicken in flour mix.Heat 1 tbsp olive oil in heavy skillet.Brown chicken a few pieces at a time do not crowd add more oil if needed.Place chicken breasts in a greased cassrole dish. Melt butter in same skillet, saute mushrooms until just tender. Top chicken breasts with mushrooms, green onions and artichokes. Mix wine and soup together and pour over chicken, cover with foil and bake at 350 for about 30 minutes Uncover, top with cheese and paprika return to oven for abput 15 minutes until cheese is melted and bubbling.

- In a large saucepan, saute mushrooms and onion in 3 tablespoons butter until tender. Add garlic; cook 1 minute longer. Stir in flour until blended. Gradually add milk; bring to a boil. Cook and stir for 2 minutes or until thickened and bubbly. Remove from the heat; stir in mayonnaise until smooth. Add the chicken, rice, celery, peas, pimientos, lemon juice, salt and pepper. , Transfer to an ungreased 13-in. x 9-in. baking dish. Melt remaining butter; toss with cornflakes. Sprinkle over top. Bake, uncovered, at 350° for 30-35 minutes or until bubbly.

Steps:
- Pat dry chicken. Put flour, salt, pepper, and other seasoning in zip type bag. Add chicken pieces, coat with flour mix, and shake off excess flour mix. Brown chicken in butter/oil. Arrange chicken in baking dish, 1 layer.
- In pan in which chicken was browned, make a sauce by reducing fat to 2 Tbsp. Add mushrooms and saute slightly. Add more butter if needed. Add sour cream, wine, and rosemary. Simmer, deglazing pan. Pour over chicken.
- Bake covered for 1 1/4 hours at 350°F.

Steps:
- Heat oven to 350° F. Pat chicken breasts dry between paper towels. Mix flour, salt, and pepper together in a plastic bag add a few chicken pieces at a time and shake until coated with flour mixture. In large skillet, melt 4 tablespoons butter or margarine and vegetable oil. When very hot, add chicken pieces remove to oven dish when browned. In same skillet after removing fat, sauté mushroom slices in 2 tablespoons remaining butter or margarine. Sprinkle lightly with salt and pepper add vermouth and rosemary. Simmer, stirring, for 2 minutes. Pour over chicken and bake for 30 minutes, covered remove cover and continue baking another 10 minutes. Serve with rice or buttered noodles.
