Our family tried roasted potato bread at a bakery on a road trip, and I came up with my own recipe when we realized we lived much too far away to have it regularly. It makes for a really amazing roast beef sandwich and also goes well with soups. -Elisabeth Larsen, Pleasant Grove, Utah

Yield 1 loaf (16 slices).

Number Of Ingredients 7

1/2 pound Yukon Gold potatoes, chopped (about 3/4 cup)
1-1/2 teaspoons olive oil
1-1/2 teaspoons salt, divided
1 package (1/4 ounce) active dry yeast
2-1/2 to 3 cups all-purpose flour
1 cup warm water (120° to 130°)
1/2 cup shredded smoked Gouda cheese

Steps:

  • Arrange 1 oven rack at lowest rack setting; place second rack in middle of oven. Preheat oven to 425°. Place potatoes in a greased 15x10x1-in. baking pan. Drizzle with oil; sprinkle with 1/2 teaspoon salt. Toss to coat. Roast until tender, 20-25 minutes, stirring occasionally., In a large bowl, mix yeast, remaining 1 teaspoon salt and 2 cups flour. Add warm water; beat on medium speed until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky). Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Gently knead in roasted potatoes and cheese. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch down dough. Shape into a 7-in. round loaf. Place on a parchment-lined baking sheet. Cover with a kitchen towel; let rise in a warm place until dough expands to a 9-in. loaf, about 45 minutes., Place an oven-safe skillet on bottom oven rack. Meanwhile, in a teakettle, bring 2 cups water to a boil. Using a sharp knife, make a slash (1/4 inch deep) across top of loaf. Place bread on top rack. Pull bottom rack out by 6-8 in.; add boiling water to skillet. (Work quickly and carefully, pouring water away from you. Don't worry if some water is left in the kettle.) Carefully slide bottom rack back into place; quickly close door to trap steam in oven., Bake 10 minutes. Reduce oven setting to 375°. Bake until deep golden brown, 30-35 minutes longer. Remove loaf to a wire rack to cool.

3 1/2 lbs russet potatoes, peeled & cubed
1 cup whole milk
1/2 cup sour cream
6 tablespoons unsalted butter
6 slices bacon, thick sliced, diced
salt
2 cups gouda cheese, shredded, diveded
1/4 cup chopped fresh chives

Steps:

  • Preheat oven to 375 degrees.
  • Boil potatoes in salted water in large pot over high heat until tender, 12 minutes.
  • Drain, return potatoes to the pot, and dry over medium heat for 1 minute.
  • Turn off heat, add milk, sour cream, and butter; mash until smooth, cover, and set aside.
  • Saute bacon in a skillet over medium-high heat until crisp.
  • Drain on a paper-towel lined plate, then stir into mashed potatoes; season with salt.
  • Assemble casserole, spreading half the potatoes in a 2 quart casserole dish.
  • Top with 1 cup of gouda, spread with remaining potatoes, then top with remaining cheese.
  • Bake until golden, 30 minutes.
  • Garnish with chives.

5 lbs russet potatoes, peeled and cut into chunks
1 small white onion, coarsely chopped
2 tablespoons butter
3/4 cup milk
4 ounces gouda cheese, shredded (can use smoked Gouda for a extra kick)
8 ounces part-skim ricotta cheese
3/4-1 teaspoon dried dill weed, double if using fresh
1/2-1 teaspoon salt
1/4 teaspoon pepper
1/4-1/2 teaspoon garlic powder
2 -3 tablespoons butter, melted
paprika

Steps:

  • Preheat oven to 350°F Lightly grease/spray a 13" x 9" baking dish; set aside.
  • In a large pot, boil potato chunks and chopped onion in salted water until tender. Drain and return to empty pot.
  • Add butter and milk and mash.
  • Add Gouda, ricotta, dill weed, salt, pepper and garlic powder and continue to mash to desired consistency.
  • Pour mashed mixture into the prepared baking dish.
  • Evenly drizzle the melted butter over top.
  • Evenly sprinkle with paprika.
  • Bake at 350°F, uncovered for 25-30 minutes or until just starting to lightly brown.

1 tablespoon salted butter
2 (3/4 inch thick) slices sourdough bread, or more to taste
1 serving cooking spray
1 (16 ounce) package elbow macaroni
4 cups freshly grated sharp Cheddar cheese
2 cups freshly grated smoked Gouda cheese
½ cup salted butter
1 ½ cups whole milk, divided
2 ½ tablespoons cornstarch
2 ½ cups half-and-half
1 teaspoon pink Himalayan salt
½ teaspoon ground white pepper
½ teaspoon paprika

Steps:

  • Melt 1 tablespoon butter on a griddle over medium-high heat. Add bread and cook until toasted, 1 to 2 minutes per side. Set aside to cool.
  • Preheat the oven to 350 degrees F (175 degrees C). Coat a 9x13-inch baking pan with cooking spray.
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain macaroni and transfer to a large bowl.
  • Place cooled toast in a resealable bag and slowly crush with the bottom of a saucepan or a rolling pin. Set bread crumbs aside.
  • Mix Cheddar and Gouda cheeses together and divide into 4 equal piles.
  • Melt 1/2 cup butter in a saucepan over medium heat.
  • While butter is melting, whisk 1 cup milk and cornstarch together in a bowl until cornstarch has dissolved. Add milk-cornstarch mixture to the melted butter. Gradually mix in remaining 1/2 cup milk and half-and-half. Cook, whisking continuously, until mixture thickens to the consistency of a milkshake, 3 to 5 minutes. Add 2 piles of cheese, one at a time, whisking after each addition until cheese has completely melted.
  • Pour cheese sauce over cooked macaroni and mix to coat. Transfer 1/2 of the mac and cheese mixture to the reserved baking pan and spread evenly. Sprinkle 1 pile of cheese over top. Evenly distribute the rest of the mac and cheese mixture into the pan, sprinkle with remaining cheese, and top with reserved breadcrumbs.
  • Bake in the preheated oven until golden and bubbly, 15 to 20 minutes.

2 (16 ounce) packages bacon
3 (24 ounce) bags small red new potatoes, scrubbed
1 ½ (8 ounce) packages cream cheese, softened
1 ½ cups shredded smoked Gouda cheese
¾ cup milk
½ cup butter, softened and cut into pieces
½ cup minced fresh chives
¾ teaspoon salt
¼ teaspoon ground white pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and lay bacon strips on the foil in an even layer.
  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 15 minutes. Drain and allow to cool slightly.
  • Place bacon in the preheated oven and bake until browned and crisp, about 15 minutes. Drain bacon slices on paper towels and chop into tiny pieces when cool enough to handle. Leave oven on.
  • Mix cream cheese, Gouda cheese, milk, butter, chives, salt, and pepper together in a bowl. Mix in chopped bacon.
  • Cut each potato lengthwise. Use a small spoon or melon baller to carefully scoop out some (but not all) of the flesh from the centers. Add potato flesh to the cream cheese mixture and mix until creamy.
  • Fill each potato half with 1 rounded tablespoon cream cheese mixture and place on a baking sheet.
  • Bake until filling is hot and looks melted, 20 to 25 minutes.
