COMFORTING BROCCOLI SOUP
This is one of my favorite soup recipes, and luckily, also one of the easiest! It tastes every bit as good if you substitute cauliflower for the broccoli, or if you use half broccoli and half cauliflower.

Steps:
- In a large soup pot, heat olive oil and sauté the onion and garlic, about 5 minutes.
- Add celery, potatoes, broccoli, and spices and stir.
- Add vegetable broth and bring to a boil. Simmer 20 minutes.
- Purée and enjoy!

BEST CREAM OF BROCCOLI SOUP

Steps:
- Melt 2 tablespoons butter in medium sized stock pot, and saute onion and celery until tender. Add broccoli and broth, cover and simmer for 10 minutes.
- Pour the soup into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree in batches until smooth and pour into a clean pot. Alternately, you can use a stick blender and puree the soup right in the cooking pot.
- In small saucepan, over medium-heat melt 3 tablespoons butter, stir in flour and add milk. Stir until thick and bubbly, and add to soup. Season with pepper and serve.

- In a large bowl, combine the first seven ingredients; fold in broccoli. Transfer to a greased 1-1/2-qt. baking dish. Sprinkle with bread crumbs. Cover and bake at 400° for 30-35 minutes or a thermometer reads 160°.

Steps:
- In a heavy soup pot, heat the olive oil over medium heat and add the meat chunks.
- Sauté until lightly golden.
- Add the garlic and cook for 1 minute.
- Add the tomatoes and chicken broth, cover, and bring to a boil.
- Add the broccoli pieces and return to the boil, then lower to simmer and cook, uncovered, 10 minutes or until the broccoli stems are tender.
- Ladle the soup into warm bowls and add a big pinch of hot pepper flakes if you like.
- Sprinkle parsley and Parmesan over each bowl and serve immediately.
