- Preheat oven to 350°. Cook spaghetti according to package directions. Meanwhile, in a large skillet, cook beef, green pepper and onion over medium heat until meat is no longer pink; drain. Stir in next 8 ingredients. Drain spaghetti; add to beef mixture. , Transfer to a greased 13x9-in. baking dish. Cover and bake 30 minutes. Uncover; sprinkle with cheese. Bake until cheese is melted, about 5 minutes longer.

CONFETTI COLESLAW
An easy to make coleslaw with a low-fat creamy tangy dressing. I like to add a little bit of red cabbage for some more colour. Recipe from Company's Coming Lunches.

- Mix together salad dressing ingredients with a wire whisk.

CONFETTI COLESLAW

- For the salad: Quarter and core the cabbage. Set up a food processor with the slicing blade. Slice the cabbage and then transfer it to a colander. Switch to the grating blade and shred the carrots; add to cabbage. Toss the cabbage and carrots with the salt and set colander in the sink until the vegetables wilt, 1 to 4 hours. Rinse cabbage mixture thoroughly in cold water and spin it dry in a salad spinner.
- Meanwhile, make the dressing: Whisk the vinegar with the honey, mustard, celery seeds, salt, and black pepper to taste in a small bowl. Gradually whisk in the olive oil, starting with a few drops and then adding the rest in a steady stream to make a smooth, slightly thick dressing.
- Quarter, core, and shred the apples. Toss the cabbage mixture with the apples, scallions, and about 1¿2 cup of the dressing. Refrigerate until chilled and the flavors come together, about 1 hour. When ready to serve, toss the watercress with the remaining dressing. Make a ring on a platter with the watercress, and mound the coleslaw in the middle of the ring.
CONFETTI COLESLAW WITH CILANTRO
This recipe is traditionally called "California Cole Slaw", but I made some changes by reworking the recipe. The pretty contrast of colors reminded me of confetti, hence the name. I found the original version "California Cole Slaw" recipe while going through my deceased mother-in-laws recipes. Thought I'd make a couple ingredient changes and wala. Here's the finished product. It is even kid friendly. Hope you enjoy it.

Steps:
- In large bowl, add chopped slaw ingredients and stir till mixed evenly. Set aside.
- In small bowl, add 1st 5 ingredients for the dressing. Whisk together till smooth. Add poppy seeds and mix again.
- Pour on top slaw mixture and mix till all coated. Cover bowl with plastic wrap and chill in refrigerator at least 2 hours, prior to serving. Stir before serving.

- In a large pot over medium heat, combine the butter, water, milk, sugar, and salt. Whisk until the butter is melted and the mixture is steaming, about 5 minutes.
- Quickly whisk the all-purpose and whole wheat flours and the baking powder into the hot milk mixture. Continue cooking, stirring constantly, for 5 more minutes. Remove the pot from heat and stir with a spatula to cool the dough.
- When the dough is no longer hot to the touch, add the eggs one at a time, stirring to incorporate before adding the next.
- Add the vanilla and sprinkles and stir to distribute evenly.
- Transfer the dough to a piping bag or zip-top bag fitted with a large star tip.
- On a parchment-lined baking sheet, pipe 4-inch (10-cm) circles of dough. Chill in the freezer until solid, about 20 minutes.
- Meanwhile, make the glaze: In a large bowl, combine the powdered sugar, milk, vanilla, and cream cheese. Whisk until smooth and runny. Set aside.
- Heat the oil in a large pot until it reaches 350°F (180°C).
- Carefully add the crullers to the hot oil. Fry about 3 at a time for 4-5 minutes, flipping halfway, until golden brown. The fried crullers should feel much lighter than they were originally. Transfer the fried crullers to a wire rack set over a baking sheet.
- While still warm, dip one side of the crullers in the glaze. Return to the wire rack and allow excess glaze to drip off. Top with sprinkles.
