FRENCH APPLE CAKE
With chunks of sweet apples nestled in a tender and buttery rum cake, this French apple cake is the essence of simplicity.

- Preheat the oven to 350°F and set an oven rack in the middle position. Grease a 9-inch springform or regular cake pan with butter or nonstick cooking spray. If using a regular cake pan, line the bottom of the pan with parchment paper and grease again.
- In a small bowl, whisk together the flour, baking powder and salt.
- Using a handheld mixer with beaters or a stand mixer with the paddle attachment, cream the butter and granulated sugar until light and fluffy, about 3 minutes. Add the eggs, one at a time, beating well and scraping down the sides of the bowl after each addition. Beat in the vanilla and rum. Don't worry if the batter looks grainy at this point; that's okay. Add the flour mixture and mix on low speed until just combined. Using a rubber spatula, fold in the chopped apples.
- Scrape the batter into the prepared pan and even the top. Sprinkle evenly with 1 tablespoon of granulated sugar. Bake for about 40 minutes, or until the cake is golden and a toothpick inserted into the center comes out clean. Allow the cake to cool on a rack in the pan. Once cool, run a blunt knife around the edges of the cake. If using a springform pan, remove the sides. If using a regular cake pan, carefully invert the cake onto the rack, remove the parchment paper, then gently flip the cake over and place right-side-up on a platter. Using a fine sieve, dust with confectioners' sugar (if using). Cake can be served warm or room temperature, plain or with lightly sweetened whipped cream or vanilla ice cream.
- Freezer Friendly Instructions: The cake can be frozen for up to 3 months. After it is completely cooled, wrap it tightly with aluminum foil or freezer wrap. Thaw overnight on the countertop before serving.

In a small bowl, beat cream cheese and sugar until smooth; beat in egg. , For cake, in a large bowl, beat sugar, oil and eggs until well blended. In another bowl, whisk flour, baking powder, cinnamon, salt and baking soda; gradually beat into sugar mixture. Stir in apples, carrots and pecans., Transfer half of the batter to prepared pan; layer with cream cheese mixture, then remaining batter. Cool 10 minutes before removing to a wire rack to cool completely., For icing, in a large saucepan, combine brown sugar, butter and milk; bring to a boil. Cook and stir 1 minute. Remove from heat; whisk in confectioners' sugar and vanilla until smooth. Drizzle over cake. Sprinkle with pecans.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
- In a large bowl, mix together the cake mix, eggs and apple pie filling. Pour into the prepared pan. Combine the brown sugar, flour, butter, cinnamon and walnuts. Sprinkle over the top of the batter.
- Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

- Preheat oven to 300 degrees F (150 degrees C).
- Grease a 10-inch tube pan.
- Combine flour, salt, and baking soda in a bowl.
- Beat 1 1/2 cup butter and 3 cups sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color.
- Beat eggs one at a time into butter mixture, allowing each egg to blend completely before adding the next. Beat in sour cream and 1 teaspoon vanilla extract with the last egg.
- Gradually stir flour mixture into egg mixture, mixing until just incorporated.
- Fold in 7 ounces flaked coconut, mixing just enough to evenly combine. Pour the batter into prepared pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 90 minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.
- Whisk milk and cornstarch in a saucepan over medium heat until mixture becomes very thick, stirring constantly, about 5 minutes; set aside to cool completely.
- Beat 1 cup sugar, 1/2 cup butter, and shortening with an electric mixer in a bowl until mixture is smooth and creamy.
- Beat cooled milk paste and 2 teaspoons vanilla extract into sugar mixture to achieve a light and creamy frosting.
- Spread frosting over completely cooled cake and sprinkle remaining 3 1/2 ounces flaked coconut over the frosting.

- Make the cake: Heat the oven to 350 degrees. Grease a 10-inch cake pan and place a silicone sheet or parchment paper on the bottom. (You can substitute a 10-inch spring-form pan, as long as it is tightly sealed at the bottom.)
- With a handheld or electric mixer, combine the oil, brown sugar, honey, eggs and vanilla in a large bowl.
- In a separate bowl, sift the flour, baking soda, salt and cinnamon. Add half the sifted dry ingredients to the liquid mixture, and mix on a low speed until combined.
- Add the grated apples and the remainder of the dry ingredients. Finish mixing by hand, and pour into the greased cake mold. Bake for 40 to 50 minutes, or until a toothpick inserted in the center comes out clean.
- Make the maple glaze: Stir maple syrup and confectioner's sugar over low heat in a small saucepan until combined. Then increase the heat and boil for 30 seconds. Set aside on the stove top, off the heat.
- To finish the cake, run a paring knife around the edge of the cake pan. Invert a serving dish on top of the cake and then flip the cake over onto the dish, carefully lifting away the cake pan. Re-warm the maple glaze, stir it and pour it over the warm cake. You may decorate the platter with peeled orange sections. The cake will stay moist overnight if covered with foil. It does not need to be refrigerated.

CANDY APPLE CAKE
This tastes just like the red candy apples that we are all so familiar with. The apples are cooked in a mixture that includes red hot cinnamon candies, then placed in the bottom of a baking pan and topped with the yellow sour cream cake batter. Cake is inverted over a serving platter when done and the red apple topping makes for a great presentation. Delicious!

- Preheat oven to 350° and spray a 13x9 baking pan with non stick spray.
- In a large saucepan, combine the cinnamon candies, sugar, 1/2 cup of apple juice and food coloring and heat over high heat, stirring constantly until candy dissolves.
- Add apples and bring to a boil, reduce heat and stir occasionally for 5 to 7 minutes or until apples are tender.
- Spoon filling into baking pan.
- In a medium bowl, combine all cake ingredients and mix well.
- Spoon over the apple mixture, spreading to completely cover the apples.
- Bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool slightly, then invert over a large serving platter.
- Cool completely, then cut into squares to serve.
CONNIE"S APPLE CAKE RECIPE
My mom used to make this during the holidays. A very long time family tradition, been around for many generations. This is a very sweet, rich dessert, moist and a bit crumbly because of the chunks of apples and pecans. Not the 'normal' birthday cake-like texture. Great with a big glass of milk or hot cup of coffee. The mix ends up being very thick and a little stiff to mix, but don't worry... it is totally worth it. Warning: This apple cake is addictive! - PREHEAT OVEN TO 350 DEGREES:.
- Mix all dry ingredients with Chopped Apples.
- Add Canola Oil, (I make this at least 3 times a year and YES you put in 1 and one half cups of canola oil, this is a correct measurement), Vanilla Extract and beaten Eggs.
- Mix well. Batter will be stiff and a bit difficult to mix, but it is totally worth it!
- Bake approximately 1½ hours in lightly greased (10 x 14 ) pan. Start checking cake after about an hour, since everyone's stove heats a little differently. You can use a toothpick or whatever you usually do to check your baking.
- Option: Of course you can make this in a muffin pan too but you would have to adjust the cooking time.
