MEATLOAF CASSEROLE
This casserole is a Southern twist on a classic Shepherd's Pie. The meat filling is flavored with Worcestershire and tomato, giving it the characteristic flavor of Southern meatloaf, while the creamy mashed potato topping is enriched with garlic, butter, and chives.

Steps:
- Peel and dice potatoes into 1/2-inch cubes. Place into medium-sized pot with a lid, and cover potatoes with cold water. Cover the pot and bring to a boil over high heat, then remove the lid of the pot and reduce the heat to medium-low, allowing the potatoes to simmer until tender, about 15 minutes.
- Strain potatoes and return to the pot. Mash the potatoes until smooth. Stir in half-and-half, butter, 1 tsp. kosher salt, 1 clove of garlic, and chives. Once fully combined, stir in the two egg yolks until completely incorporated, and set aside.
- Preheat the oven to 400°F. Heat the vegetable oil in a large skillet until shimmering. Add onion, bell pepper, and celery. Sauté over medium-high until completely soft, about 8 minutes.
- Add the ground beef and stir until the meat is fully cooked. Add 1/2 tsp. kosher salt, tomato sauce, breadcrumbs, Worcestershire sauce, and tomato paste.
- Evenly spread the meat filling into a 2 1/2-qt. casserole dish. Top the meat mixture with the mashed potatoes, carefully spreading the mashed potatoes over the entire surface of the meat. Bake for 25 minutes.

COWBOY MEATLOAF AND POTATO CASSEROLE

- 1.Preheat oven to 375°F. Coat 9x9 baking dish with nonstick cooking spray. In a large bowl, combine beef, onion, breadcrumbs, Barbecue Sauce, egg, chili powder and salt until well mixed. Gently press into bottom of baking dish.
- 2.Bake uncovered for 20 to 25 minutes, or until cooked through. Remove from oven and carefully pour off any excess fat if needed. Adjust oven temperature to broil and place oven rack 6 to 8 inches from heat source.
- 3.Meanwhile, microwave Potatoes according to package instructions. In a large bowl, mix together hot Potatoes, milk, butter, parsley and garlic, and mash with a potato masher until smooth. For a smoother consistency, mix with an electric mixer to desired consistency. Stir in bacon and fried onions. Spread evenly on top of beef mixture and sprinkle with cheese.
- 4.Broil for 3 to 5 minutes, or until cheese is lightly browned. Serve hot with additional Barbecue Sauce if desired.
COUNTRY FARM CHICKEN CASSEROLE
A casserole with chicken, potatoes, mushroom, onions and bacon in a great tasting gravy! I grill my chicken but a friend of mine batters and fries hers...so you can do it either way, your preference. You dont have to fry everything in the bacon grease, it does take a little away from the flavor, but it tastes great even if you use olive oil, vegetable oil or butter. Cooking time includes the baking time as well the frying you do during prep.

- Preheat oven to 425 degrees.
- Cook the bacon; crumble and set aside; reserve bacon grease.
- Peel and cube the potatoes; fry potatoes in bacon grease.
- Dice the onion; season with salt, pepper and garlic powder and fry in the bacon grease.
- Fry the mushrooms in the bacon grease.
- Coat the chicken breasts with melted butter and season with salt and pepper and grill (I used the George Foreman grill).
- After the chicken is cooked, cut into cubes.
- Take Cream of Chicken soup and mix with 3/4 cup broth and season with pepper to make a sauce.
- In an 8x8 glass dish combine chicken, mushrooms, onions and potatoes. Top with sauce and mix it all up so everything is coated in the sauce.
- Bake for 30 minutes covered with foil.
- Remove foil, top with crumbled bacon and bake an additional 10 minutes, uncovered.
UNBELIEVABLE CHICKEN MEATLOAF
You can substitute ground beef in this meatloaf recipe, if you wish. But you save the calories by using ground chicken. This recipe has a great flavour, texture and aroma!

- Preheat oven to 350 degrees.
- Combine chicken and bread crumbs in large bowl.
- Set aside.
- Cut the carrot& onion into chunks and add to blender.
- Add the remaining 7 ingredients to the blender.
- Process in blender until carrot is very fine.
- Pour blender mixture over meat mixture.
- Mix very well using your hands.
- Form mixture into a loaf and place in lightly greased 9" X 13" pan.
- Cover with foil and bake for one hour.
- Remove foil& continue baking for 15-30 minutes, until loaf is cooked through.
COUNTRY CHICKEN CASSEROLE
Chicken breast, hash browns, fried onions and cheese. Now that's country cookin' for ya! This is a wonderful easy recipe, especially if want a filling meal, but don't have time to stay in the kitchen. This is my mother-in-law's favorite dish, and it heats up well for leftovers.

- Preheat oven to 375 degrees F (190 degrees C).
- Stir hash browns and 1/2 of the onions together in a 9x13 inch baking dish, then lay cheese slices on top and layer chicken over cheese. In a small bowl, mix soup and milk together and pour mixture over chicken.
- Bake in preheated oven for 30 to 35 minutes, or until chicken is cooked through and juices run clear. Pour corn onto chicken and stir to combine all ingredients, then bake for an additional 20 minutes.
- Sprinkle remaining onions over all and bake for another 5 minutes, or until onions are golden brown. Let sit 5 minutes before serving.
