Steps:

  • Preheat oven to 400 degrees. In a large bowl, whisk together flour, salt, pepper, cayenne pepper, and baking powder. Add cheddar and toss to coat. Add sausage, onion, and butter. With your hands, mix until well combined and roll mixture into 1-inch balls. Place balls, 1/2 inch apart, on a parchment-lined baking sheet. 1 lb cheese, grated
1 lb sausage (Jimmy Dean is what she used)

Steps:

  • Preheat oven to 350.
  • Mix. If your food processor will hold 12 cups, use it, otherwise your hands work well. First pulse in the cheese. Then the sausage and pulse just until all the flour is absorbed. The food processor results are much lighter when cooked. You also get more balls, since they are not so compressed and the hand method.
  • Form balls.
  • Bake about 20 minutes.

Number Of Ingredients 4

1 lb bulk sausage (hot or mild)
3 cups baking mix (I use low-fat Bisquick, but any will do)
1 lb shredded cheddar cheese
1 cup water

Steps:

  • Heat oven to 350 degrees. Grease one or two cookie sheets, depending on your oven and how many you want to cook at one time.
  • Dump sausage, baking mix, and cheese in a BIG bowl and mix with your hands. It's gross feeling if your not used to it but you have to do it this way.
  • If the mix is too dry, and mine have always been, put about 1/4 cup of the water in, mix around. If you are still not able to roll the mix into little balls because it's too dry then pour a little bit more water into it. If it gets too wet pour a little bit more baking mix into it.
  • Roll into 1 inch balls and place on cookie sheet. Bake for 20-25 minutes. They should be golden brown and sausage cooked through.
  • Repeat with remaining mix until all gone. Enjoy!
