This recipe for Savannah Smiles cookies is sure to brighten up anyone's day! Recreate these missed lemony cookies any time of the year.

1 cup room temperature unsalted butter
1 cup plus more for dusting icing sugar
2 tbsp lemon juice
from 2 lemons lemon zest
1 tsp baking soda
¼ tsp salt
3 cups all-purpose flour
¼ cup lemon concentrate

Steps:

  • Sift the flour and baking soda together, then set aside.
  • Cream the sugar and butter together with a whisk.
  • Add the zests, lemon concentrate, and salt into your creamed butter mixture. Continue mixing.
  • Gradually fold the flour mixture into the mixture until everything is evenly incorporated.
  • Chill the dough for 1 hour in the refrigerator.
  • Preheat the oven to 350 degrees F, 30 minutes before baking the cookies.
  • Form 2½ ounce balls of cookie dough. Arrange them neatly onto the baking tray and slightly flatten each one.
  • Trim the dough to resemble crescent moon shapes, using a smaller ring cutter. Reserve any excess dough for future baking.
  • Bake the formed cookies at 350 degrees F for 10 to 12 minutes.
  • Once your cookies are baked, brush them with lemon concentrate and then sprinkle them with icing sugar. Serve with your favorite hot or cold drink, and enjoy!

1 c. unsalted butter
1 c. confectioners' sugar
2 tbsp. lemon juice
1 tbsp. lemon zest
1/4 tsp. salt
3 c. all-purpose flour

Steps:

  • Preheat the oven to 325 degrees F. Line baking sheets with parchment paper or a silicone baking mat.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat butter until creamy. Gradually add 1/2 cup (60 grams) of confectioners' sugar. Beat on medium-high speed until light and fluffy. Mix in the lemon juice, zest, and salt. With the mixer speed on low, add the flour in three additions, mixing until incorporated and scraping down the bowl after each addition.
  • Scoop the dough by the tablespoon and roll each dough portion into a ball. Gently flatten the dough balls with your fingers and shape into a half-moon. Place each cookie on the prepared baking sheets, at least one inch apart.
  • Bake for 15 to 20 minutes, until cookies are lightly browned at the edges. Cool on the baking sheet for 10 minutes, then transfer cookies to a wire rack to cool completely. Dip the cooled cookies into the remaining 1/2 cup (60 grams) of confectioners' sugar.

1/2 cup butter (softened)
1/2 cup plus 1/4 cup powdered sugar (divided)
1/2 teaspoon vanilla extract
1 tablespoon lemon juice
zest of 1 lemon
1-1/2 cups flour
1/2 teaspoon salt
Optional (1/4 teaspoon lemon extract)

Steps:

  • Preheat the oven to 350 degrees.
  • Line two baking trays with parchment or silicone baking mats and set aside.
  • Combine the butter and 1/2 cup powdered sugar in the bowl of a stand mixer, or a large mixing bowl.
  • Beat with the paddle attachment, or a hand mixer, for 1 to 2 minutes at medium speed, or until fully combined.
  • Scrape the sides of the bowl and add the lemon juice, zest, and extracts.
  • Mix for an additional 30 seconds to combine.
  • Scrape the sides of the bowl and stir in the flour.
  • Mix until the dough forms.
  • Spoon 1 tablespoon of dough, roll into a circle, and flatten with your fingers to 1/2 inch thick round.
  • Cut in half to create the "smile" shape.
  • Place on your baking tray and continue with the remaining dough.
  • Bake for 10 minutes, or until lightly browned on the bottom of the cookie.
  • Cool the lemon shortbread biscuits 10 minutes then roll in remaining powdered sugar.
