Corn and tomatoes make this risotto taste like summer itself, but you can stir in almost any vegetables that your family likes. Make this simple entree vegetarian by swapping in vegetable broth or "no-chicken" broth for the chicken broth.

5 cups low-sodium chicken broth
2 tablespoons unsalted butter
¾ cup minced shallots
2 cloves garlic, minced
1 ½ cups arborio rice
¾ teaspoon salt
¼ teaspoon ground pepper
½ cup dry white wine
1 ½ cups corn, thawed if frozen
1 ½ cups baby spinach
¾ cup chopped tomatoes
5 tablespoons grated Parmesan cheese, plus more for garnish
¼ cup chopped fresh basil

Steps:

  • Heat broth in a medium saucepan over medium-low heat until steaming.
  • Melt butter in a large pot over medium heat. Add shallots and cook, stirring occasionally, until softened, about 2 minutes. Add garlic and cook, stirring, for 1 minute. Add rice, salt and pepper and cook, stirring frequently, until the rice begins to turn translucent, about 1 minute. Add wine and cook, stirring constantly, until it has evaporated, about 1 minute.
  • Add 1 cup of the hot broth and cook, stirring occasionally, until the liquid is absorbed, 1 to 2 minutes. Continue adding the broth, 1/2 cup at a time, stirring frequently and waiting until it has been absorbed before adding more, until you've added all the broth, about 20 minutes.
  • Add corn, spinach and tomatoes and stir until the spinach is wilted, about 1 minute. Remove from heat; stir in Parmesan. Serve the risotto topped with basil and more cheese, if desired.

Corn Risotto image

This creamy, pale yellow risotto is studded with chewy fresh corn kernels, making for a nice mix of textures. Making your own corn stock deepens the flavor of this dish, but if you don't have the time, chicken stock will work. The dish is also pleasingly light, for risotto - finishing the dish by folding in airy whipped cream adds richness without also adding heft. Add the cream quickly and carefully right before serving. If it sits in the hot risotto it will melt - which wouldn't be the end of the world, of course, since you'll still have a wonderfully creamy risotto.

6 cups corn stock (see recipe below) or chicken stock
2 tablespoons unsalted butter
1 leek, white and light green parts only, finely chopped
1 teaspoon kosher salt
1/4 teaspoon black pepper
1 cup arborio rice
1/2 cup dry white wine
1 1/2 cups raw corn kernels (from about 2 ears corn)
1 cup grated Parmesan cheese
1/4 cup heavy cream
2 tablespoons minced chives (optional)
2 corn cobs (kernels removed and reserved for risotto)
1 onion, cut into quarters
1 carrot, cut into 1-inch pieces
1 celery rib, cut crosswise into 1-inch pieces
Dark green leaves from 1 leek (reserve white and light green parts for risotto)
2 cloves garlic, smashed
1 teaspoon salt
1 teaspoon whole black peppercorns

Steps:

  • Bring the corn stock or chicken stock to a simmer in a saucepan and keep it simmering as you prepare the risotto.
  • Melt 1 tablespoon butter in a wide, high-sided sauté pan over medium-low heat. Add leek and cook, stirring occasionally, until softened but not browned, about 6 minutes. Season with salt and pepper. Add rice and cook, stirring, until grains look slightly translucent.
  • Pour in wine and cook, stirring, until it has all been absorbed, about 1 to 2 minutes.
  • Add a ladleful of hot corn stock to the rice mixture and cook, stirring constantly, until rice has absorbed all of the stock. Continue cooking, adding ladlefuls of stock whenever rice mixture looks dry and stirring continuously. When half the stock has been added, stir in corn. Continue cooking until all of the stock is incorporated, corn is tender and rice is creamy and tender, about 30 to 40 minutes total.
  • Remove risotto from heat and stir in Parmesan and remaining tablespoon of butter. Cover and let stand for 5 minutes.
  • In an electric mixer fitted with the whisk attachment, beat cream at high speed until it holds stiff peaks. Uncover risotto, stir vigorously and season to taste with salt and pepper. Immediately before serving, stir in the chives, if using, then gently fold in cream.
  • Combine all ingredients with 6 cups water in a large pot. Bring to a boil over high heat. Reduce heat so liquid is simmering; cover pot and let simmer for 30 minutes. Strain through a fine-mesh strainer. Add enough water to bring liquid up to 6 cups.

A budget rice dish flavoured with rosemary, basil and sweet cherry tomatoes. An ideal midweek supper

400g can chopped tomato
1l vegetable stock
knob of butter
1 tbsp olive oil
1 onion, finely chopped
2 garlic cloves, finely chopped
1 rosemary sprig, finely chopped
250g risotto rice
300g cherry tomato, halved
small pack basil, roughly torn
4 tbsp grated parmesan

Steps:

  • Tip the chopped tomatoes and half the stock into a food processor and pulse until smooth. Pour into a saucepan with the remaining stock, bring to a gentle simmer and keep over a low heat.
  • Meanwhile, place the butter and oil in the base of a large saucepan and heat gently until the butter has melted. Add the onion and gently cook for 6-8 mins until softened. Stir in the garlic and rosemary, then cook for 1 min more. Add the rice and cook, stirring, for 1 min.
  • Start adding the hot stock and tomato mixture about a quarter at a time. Let the risotto cook, stirring often, adding more stock as it is absorbed. After you have added half the stock, add the cherry tomatoes. After 20-25 mins, the rice should be creamy and tender, the cherry tomatoes softened and all of the stock should be used up.
  • Cover and leave for 1 min, then stir in the basil. Serve sprinkled with Parmesan and a good grinding of black pepper.

This colorful risotto serves as a luxurious showcase for summer's bounty of tomatoes and corn. This is about as colorful and summery a risotto as you can get. The tomatoes and broth team up as a rich medium for the rice. Don't add the corn too soon, or it will develop a starchy texture like the rice. But cook it long enough to bring out its sweet flavor. Simmer the corn cobs for about 20 minutes in your broth to get a great sweet corn flavor.

2 good-size ears sweet corn
7 cups well-seasoned vegetable stock or chicken stock
2 tablespoons extra virgin olive oil
1/2 cup minced onion
Salt to taste
2 garlic cloves, minced
1 1/2 cups arborio rice
1 pound tomatoes, grated or peeled, seeded and diced
Pinch of sugar
Salt and freshly ground pepper to taste
1/2 cup dry white wine, such as pinot grigio or sauvignon blanc
2 to 3 tablespoons slivered fresh basil, or a mix of basil, chives, and parsley
1/4 to 1/2 cup freshly grated Parmesan cheese (1 to 2 ounces)

Steps:

  • Remove corn kernels from cobs and set aside the kernels. Simmer the cobs in stock for 20 to 30 minutes. Remove from stock and discard. Make sure your stock is well seasoned. Bring back to a simmer over low heat, with a ladle nearby or in the pot.
  • Heat olive oil over medium heat in a wide, heavy skillet or a wide, heavy saucepan. Add onion and a generous pinch of salt, and cook gently until tender, about 5 minutes. Add garlic and rice and cook, stirring, until grains of rice are separate and beginning to crackle, a minute or two. Stir in tomatoes, sugar and salt to taste and cook, stirring, until tomatoes have cooked down slightly, 5 to 10 minutes.
  • Add wine and stir until it has evaporated and has been absorbed by the rice. Begin adding simmering stock, a couple of ladlefuls (about 1/2 cup) at a time. Stock should just cover the rice and should be bubbling, not too slowly but not too quickly. Cook, stirring often, until it is just about absorbed. Add another ladleful or two of the stock and continue to cook in this fashion, adding more stock and stirring when rice is almost dry. You do not have to stir continually, but stir often and vigorously. After 10 minutes, add corn and continue for another 10 to 15 minutes. When rice is just tender all the way through but still chewy (al dente), in 20 to 25 minutes, it is done. Taste now and adjust seasoning.
  • Add another ladleful of stock to rice. Stir in basil (or basil, parsley and chives) and Parmesan and remove from heat. The mix should be creamy (add more stock if it sn't). Serve right away in wide soup bowls or on plates, spreading the risotto in a thin layer rather than a mound.

A simple vegetarian risotto recipe with spinach.

320 g carnaroli rice (if carnaroli is not available, try vialone nano then you can use arborio instead)
175 g fresh spinach
700 ml home made vegetable stock
60 g grated parmesan cheese
1/2 onion
1 garlic clove, crushed
40 gr extra virgin olive oil
knob of butter
salt and pepper

Steps:

  • Blanch the spinach and then chop it finely. In a pan, pour in some extra virgin olive oil and cook the crushed garlic clove, until brown. Remove the garlic and add the onion, finely chopped. Cook the onion until it becomes transparent. You can then add the spinach, stir, and season to taste. Set aside.
  • In a casserole, toast the rice with 20 gr of extra virgin olive oil. When the rice is hot throughout, add the boiling stock all at once and mix gently. Cover the casserole with the lid and allow to cook for 15 minutes on a low flame.
  • When the rice is cooked (depends on type of rice used) add the spinach, remove from the fire and add the grated parmesan cheese and butter. Mix thoroughly but gently until the cheese and butter melt and create a creamy risotto.
  • Allow to rest for 2 minutes in casserole with lid on and covered with a cloth.
  • Serve with grated parmesan and lemon slices.

SWEET CORN AND CRAB RISOTTO

4 ears white corn, husked
1 cup sliced shiitake mushrooms
4 tablespoons olive oil
5 cups low salt chicken stock, hot
1 1/4 cup finely chopped onions
1 1/2 cup arborio rice
1/2 cup white wine
1/2 pound jumbo lump backfin crabmeat
2 cups stemmed baby spinach
2 tablespoons grated Parmesan cheese
1 tablespoon minced jalapeno (optional, to taste)
salt only if necessary
2 tablespoons fresh parsley, chopped
2 tablespoons minced chives
1 tomato, large, peeled, seeded and diced
additional cheese for garnish

Steps:

  • Remove corn from the cob. Reserve 1 cup of the kernels. Puree the remaining corn in a food processor. Saute the mushrooms in 2 tbsp of the olive oil until brown. Set both the corn and mushrooms aside. Heat remaining 2 tbsp olive oil in a heavy large saucepan over medium heat. Add onion and saute 2 minutes. Add rice; stir 3 minutes. Add wine; stir until liquid is absorbed, about 2 minutes. Add 1 cup hot stock. Simmer until liquid is absorbed, stirring often. Continue adding stock 1/2 cup at a time until rice is tender but still firm in center and mixture is creamy, simmering until stock is absorbed before each addition and stirring often, about 25 minutes. Mix corn puree, corn kernels, mushrooms, spinach, crab, 2 tbsp butter, jalapeno and Parmesan into the rice. Check for seasoning. Add a little chicken stock if necessary to moisten. Remove from heat and spoon into soup bowls. Top with tomato, parsley, and chives. Sprinkle with additional cheese if desired.

½ cup grated Parmesan cheese
½ cup fresh basil leaves, cut into thin strips

Steps:

  • Combine the water and milk in a medium size pot or saucepan, heat the water and milk to a simmer. Keep the pan over low heat.
  • Melt the butter in a large casserole or skillet over medium high heat. Add the onion and cook for 3 to 4 minutes, stirring occasionally. Add the garlic and the rice, stir constantly for 1 minute. Add the white wine and stir until completely absorbed.
  • Begin to add the heated milk-water mixture 1/2 cup at a time, stirring frequently. Wait until each addition is almost completely absorbed before adding the next. When the rice has cooked for 15 minutes and most of the liquid has been incorporated, add the corn kernels and tomatoes along with the end of the milk-water mixture. Cook, stirring frequently, until the rice is tender but still slightly chewy.
  • The risotto should take 18 to 20 minutes of cooking all together. Stir in the Parmesan cheese, most of the basil, and the salt and pepper. Spoon the risotto immediately onto plates, top with the remaining basil strands, and serve.

1/2 cup chopped yellow onion
2 cloves garlic
1 1/2 cups arborio rice
3 ears of corn, shucked and kernels cut off the cob
1 teaspoon salt
1/4 teaspoon black pepper
32 ounces vegetable broth
1/4 cup half and half
1/4 cup freshly grated parmesan cheese
1/4 cup chopped fresh basil
1 cup halved cherry tomatoes

Steps:

  • In pressure cooker on the sauté setting, cook onion and garlic in butter and olive oil until soft, about 5 minutes.
  • Add arborio rice and continue to sauté until grains of rice start to turn translucent, about 2-3 minutes.
  • Add corn kernels, salt, pepper, and veggie broth. Stir.
  • Lock lid and set to high pressure for 6 minutes.
  • When time is up, do a quick release and stir in half and half, parmesan, fresh basil, and cherry tomatoes.

4 cups low-salt chicken broth
3 ears corn, shucked and cleaned of any silk
2 Tbs. unsalted butter or olive oil
1 shallot or small onion, minced
1 cup arborio rice
1/3 cup dry white wine
1 cup chopped plum or cherry tomatoes
2 tsp. extra-virgin olive oil
3 Tbs. torn fresh basil leaves
Kosher salt and freshly ground black pepper
1/3 cup freshly grated Parmigiano-Reggiano

Steps:

  • Heat the broth in a pot or saucepan large enough to fit the corn over medium-low heat to just below a simmer. Simmer the corn in the broth for 4 minutes and transfer to a plate; reserve the broth and keep it hot. Using a chef's knife, slice the corn kernels off the cob into a large bowl (you should have about 1-1/4 cups).
  • In a heavy-based deep skillet or wide saucepan, melt the butter (or heat the oil) over medium heat. Add the shallot or onion and cook, stirring occasionally, until it's translucent, about 2 minutes. Add the rice and stir until the grains are well coated with butter or oil. Pour in the wine, stir, and cook until the wine is absorbed, about 1 minute.
  • Ladle in about 1-1/2 cups of the hot broth, and cook, stirring occasionally, until absorbed, 3 to 5 minutes. Continue adding broth in 1/2-cup increments, stirring and simmering until it's absorbed each time, at intervals of about 3 to 5 minutes.
  • While the rice is simmering, combine the tomatoes, extra-virgin olive oil, and 2 Tbs. of the basil in a small bowl. Season with salt and pepper and set aside.
  • When the rice is just barely tender, after about 16 minutes, stir in the corn. Continue adding more stock and stirring until the rice is creamy but still firm to the tooth, 20 to 25 minutes total. Remove from the heat, fold in the Parmigiano and then the tomato-basil mixture. Top each serving with the remaining basil and serve immediately.

  • Melt butter in a large skillet over medium heat. Add shallot and garlic, season with salt and pepper, then saute until the shallots are tender, 5 minutes. Add rice then stir to coat in butter and lightly toast for 1 minute. Add wine then stir until nearly absorbed by rice.
  • Add chicken broth one ladle full at a time, stirring slowly until the broth has been nearly entirely absorbed by the rice before adding another ladleful. The whole process will take 30-35 minutes. Note: the broth will absorb more slowly near the end of the cooking process.
  • When there's two ladlefuls of broth left, add the tomatoes. When there is one ladleful left, add the baby spinach and basil. Once the rice is tender, remove skillet from heat then stir in parmesan cheese. Taste then add more salt and/or pepper if necessary, and then serve.
