1/2 cup yellow cornmeal
1/2 cup all-purpose flour, plus
2 tablespoons all-purpose flour
1 teaspoon baking soda
salt
fresh ground black pepper
1 tablespoon olive oil
2 red bell peppers, stemmed, seeded, and thinly sliced
1 medium red onion, chopped
10 ounces white mushrooms, stems removed, thinly sliced
1 1/2 lbs ground sirloin
1/4 cup tomato paste
3/4 cup reduced-fat sour cream
1 large egg, lightly beaten

Steps:

  • Preheat oven to 425°F Meanwhile, whisk together cornmeal, 1/2 cup flour, baking soda, and 1/2 teaspoon salt in a medium-sized bowl. In a second bowl, whisk together the remaining two tablespoons of flour and 2/3 cup of water. Set both bowls aside.
  • Pour oil into a large ovenproof skillet set over medium-high heat. When oil is shimmering, add peppers, onion, and mushrooms. Season with salt and pepper. Cook, stirring occasionally, until vegetables are tender, six to eight minutes.
  • Turn heat to high and add beef and the tomato paste. Stir constantly, breaking up the meat with a wooden spoon, until the meat is no longer pink, about 3 minutes. Slowly pour in the flour and water mixture. Season with more salt and pepper, and let cook until thick, stirring occasionally, about two more minutes. Turn off the heat.
  • Add sour cream and the whisked egg to the bowl of cornmeal and flour. Stir until just combined. Scoop up one tablespoon of the batter and place on the beef. Repeat process, placing the batter about 1-inch apart from each other. Transfer skillet to the oven and cook until biscuits are golden brown, 15 to 20 minutes.

1 red pepper, chopped
1 onion, chopped
1 lb. ground beef
1 cup KRAFT Original Barbecue Sauce
1 cup KRAFT Shredded Cheddar Cheese
1 pkg. (8-1/2 oz.) corn muffin mix

Steps:

  • Heat oven to 400°F.
  • Heat oil in large skillet on medium-high heat. Add peppers and onions; cook and stir 5 min. Add meat; mix well. Cook 10 min. or until browned, stirring occasionally; drain. Stir in barbecue sauce; simmer on medium-low heat 10 min., stirring occasionally.
  • Spoon into 9-inch pie plate; sprinkle with cheese. Prepare muffin batter as directed on package; spoon over cheese, completely covering cheese layer.
  • Bake 20 min. or until golden brown. Let stand 5 min. before serving.

This recipe came to The Times in a 2006 magazine article about the 75th anniversary edition of The Joy of Cooking, the soup-to-nuts cookbook found on practically every home cook's shelf since its first publication in 1931. Like many of the book's beloved recipes, this dish is a crowd-pleasing, homespun classic that is incredibly simple to put together. First, make a quick chili of beef, black beans, corn, green pepper and onion seasoned with chile power and cumin. Spread that in a baking dish, top with a simple cornbread batter and pop it into the oven. In about a half hour: tamale pie. Serve with hot sauce, a dollop of sour cream and a few slices of avocado. If you're trying to eat less red meat, ground turkey or chicken would make a fine substitute for the beef.

Steps:

In a large skillet, saute the beef and onion over medium-high heat until the meat is brown and the onion translucent, about 10 minutes. Then add the beans, corn, tomato sauce, broth, bell pepper (if using), chili powder, cumin, 1 teaspoon salt and 1/4 teaspoon black pepper. Simmer for 15 minutes. Set aside.
  • In a medium bowl, whisk together the cornmeal, flour, sugar, baking powder and teaspoon salt. In a small bowl whisk together the egg, milk and oil until combined. Whisk the milk mixture into the flour mixture until combined. Spread the meat mixture into the casserole dish and cover with the corn bread topping. The topping will disappear into the meat mixture but will rise during baking and form a layer of corn bread. Bake until the corn bread is brown, 20 to 25 minutes.

  • Let cool for 15 minutes and mix in eggs.
  • Spread on top of chili and bake for 40 minutes.

1 (10 ounce) can tomato soup
1/2 cup water
1 (15 1/4 ounce) can whole kernel corn, drained

2 packages of jiffy regular cornbread mix

Steps:

  • Preheat oven to 350.
  • In a skillet over medium high heat crumble and brown the ground beef.
  • As beef begins to cook, add chopped onion, and other ingredients, except cornbread mix, and simmer for 15 minutes.
  • Add ingredients into a greased 12" oblong dish 3/4 full.
  • Mix cornbread mix as directed and pour over the mixture.
  • Bake 30 minutes or until crornbread is done.
