For a modern take on the classic Irish meal of corned beef and cabbage, South Gate chef Kerry Heffernan substitutes fresh wild salmon cured with coriander, bay leaf, and garlic for the more traditional red meat in this Corned Salmon with Wilted Savoy Cabbage and Braised Fingerling Potatoes.

2 tablespoons coarse salt
1/4 cup coriander seeds, toasted
2 tablespoons packed dark-brown sugar
2 tablespoons black peppercorns, cracked
4 large cloves garlic, thinly sliced
2 large fresh bay leaves, coarsely chopped
3 tablespoons grapeseed oil
4 (7-ounce) skinless salmon fillets
Wilted Savoy Cabbage
Braised Fingerling Potatoes
Green Herb Coulis

Steps:

  • In a medium bowl, mix together salt, coriander seeds, brown sugar, black peppercorns, garlic, and bay leaves. Rub salt mixture all over salmon fillets and place in a shallow baking dish; let stand at room temperature for 45 minutes. Rinse salmon and pat dry.
  • Preheat oven to 400 degrees.
  • Heat grapeseed oil in a large well-seasoned cast-iron skillet over medium-high heat. Add salmon, flesh side down, and cook until browned, about 3 minutes. Increase heat to high and carefully turn salmon. Transfer skillet to oven and cook for 4 minutes. Remove salmon from pan and let stand 3 minutes before serving with cabbage and potato; drizzle with coulis.

4 carrots, thinly sliced
6 cups thinly sliced Savoy cabbage (about 1/4 head)
3 tablespoons unsalted butter
Freshly ground pepper
1/4 cup sour cream
1 tablespoon whole-grain mustard
1 1/2 teaspoons champagne vinegar or white wine vinegar
1 tablespoon vegetable oil
4 6-ounce skin-on salmon fillets (preferably wild)
1 tablespoon chopped fresh dill
Lemon wedges, for serving

Steps:

  • Bring a large pot of salted water to a boil. Add the carrots and cabbage and cook until tender, 6 to 7 minutes. Drain and return to the pot. Add the butter and stir until melted; season with salt and pepper. Cover to keep warm and set aside. Meanwhile, mix the sour cream, mustard and vinegar in a small bowl; set aside.
  • Heat the vegetable oil in a large nonstick skillet over medium-high heat. Season the salmon with 1/2 teaspoon salt and a few grinds of pepper; add to the skillet, skin-side down, and cook until the skin is golden brown and crisp, about 4 minutes. Flip and cook until just cooked through, 1 to 2 more minutes.
  • Stir the dill into the vegetable mixture. Serve with the salmon, mustard sour cream and lemon wedges.

1 pound baby red-skinned potatoes, halved if large
Kosher salt
1 tablespoon unsalted butter
1 tablespoon chopped fresh chives and/or dill
Freshly ground pepper
4 6-ounce frozen sockeye salmon fillets (do not thaw)
3 tablespoons extra-virgin olive oil
1 teaspoon ground coriander
1 small head napa cabbage, shredded (about 8 cups)
1 teaspoon chopped fresh tarragon

Steps:

  • Put the potatoes in a pot and cover with cold water; season with salt. Bring to a boil and cook until tender, about 20 minutes; drain and return to the pot. Stir in the butter, 1/2 tablespoon chives, and salt and pepper to taste; cover to keep warm.
  • Rinse the salmon under cold water; pat dry. Brush with 1 tablespoon olive oil and season with 1/2 teaspoon each salt and pepper. Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the salmon, skin-side down; cook, shaking the skillet occasionally, until the skin is crisp, 5 minutes. Flip the salmon; continue cooking, flipping occasionally and sprinkling with the coriander and the remaining chives, until just opaque, about 7 more minutes. Remove from the skillet.
  • Add the remaining 1 tablespoon olive oil, the cabbage and tarragon to the skillet. Cook over medium-high heat, stirring, until the cabbage is wilted, 3 minutes. Season with salt and pepper. Serve the salmon with the cabbage and potatoes.

Steamed fish needn't be boring: Here salmon fillets and blanched cabbage are rolled in cabbage leaves. The little packages are steamed, then served over mellow rice noodles with a tangy soy, sesame, and rice-wine vinegar sauce.

2 heads (2 pounds each) savoy cabbage
1/2 cup Homemade Chicken Stock or low-sodium canned, skimmed of fat
1/4 cup honey
1/4 cup rice-wine vinegar
1 teaspoon grated fresh ginger, with juice
2 garlic cloves, very thinly sliced
2 tablespoons low-sodium soy sauce
2 teaspoons sesame oil
8 ounces rice noodles
6 three-ounce salmon fillets, about 1 1/2-by-3-inches each, skin removed
1/2 teaspoon coarse salt
1/4 teaspoon freshly ground pepper
2 scallions, white and light-green parts only, thinly sliced

Steps:

  • Bring a large saucepan of water to a boil. Peel off 6 of the big outer leaves, without holes, from each cabbage; set aside. Core and thinly slice the cabbages. Fill a medium bowl with ice and water; set aside. Blanch the cabbage leaves in boiling water until bright green and flexible, about 1 minute; plunge into the ice bath. Drain on paper towels. Blanch the remaining sliced cabbage until just tender, about 1 minute. Drain the cabbage; immerse in the ice bath. When cool, drain in a colander; set aside.
  • In a small bowl, combine the chicken stock, honey, vinegar, ginger, garlic, soy sauce, and sesame oil; set aside. Bring a saucepan of water to a boil. Cook the rice noodles until tender, about 3 minutes. Transfer the noodles to a colander; rinse under cold water to stop the cooking. Drain well; transfer to a bowl. Toss with 1/3 cup of the soy mixture; set aside.
  • Bring a wok or large skillet of water to a simmer. Season each salmon fillet with salt and pepper. Carefully cut out the stiff stems of the reserved cabbage leaves. Place 2 leaves on a work surface, slightly overlapping. Place a fillet on each leaf. Top with about 1/2 cup sliced cabbage, and roll leaves "burrito" style. Divide the remaining sliced cabbage among the bottom of each level of the bamboo steamer. Place the salmon packages seam side down on the cabbage. Cover the steamer; place in the wok or skillet. Steam until the salmon is just cooked through, 15 to 18 minutes. For the sauce, add the scallions to the remaining soy mixture. Serve the salmon packages and steamed cabbage over the noodles with the sauce.

1 cup very thinly sliced savoy cabbage (you can substitute green cabbage)
1 tablespoon rice vinegar or white wine vinegar
1/2 teaspoon sugar
1/4 teaspoon celery seeds
Kosher salt and freshly ground black pepper
1/4 cup mayonnaise
2 teaspoons ketchup
2 teaspoons drained sweet pickle relish
1/4 teaspoon paprika
8 slices rye or marbled rye sandwich bread
8 thick slices Swiss cheese
1 pound leftover corned beef, coarsely chopped
3 tablespoons unsalted butter, at room temperature

Steps:

  • For the slaw: Put the cabbage in a bowl, sprinkle the vinegar, sugar, celery seeds and salt and pepper to taste over the top and toss well. Let stand, tossing frequently, until the cabbage wilts, about 20 minutes.
  • For the sandwiches: In a small bowl, stir together the mayo, ketchup, relish and paprika. Spread the dressing on one side of each slice of bread. Put a slice of cheese on each piece of bread; divide the meat among 4 of the slices. Top each sandwich with some slaw and invert the remaining cheese-covered bread slices onto each sandwich. Spread 1/2 tablespoon of the butter on the top of each sandwich.
  • Melt the remaining 1 tablespoon butter in a large nonstick skillet or griddle over medium heat. Arrange the sandwiches buttered-side up in the skillet and cook until the bottoms are golden, about 4 minutes. Carefully flip the sandwiches and cook until the undersides are golden brown and the cheese is melted, about another 4 minutes. Slice the sandwiches diagonally and serve.
